This recipe is great for nights when you get home and need something to wind down. 'Turos Csusza' is a Hungarian dish I learned from my Dad last year when I turned twelve. It consists of bacon, egg noodles, sour cream, and cottage cheese. 'Elvezet!'

1 (16 ounce) package egg noodles
3 ½ slices smoked bacon
2 cups sour cream
1 (12 ounce) container cottage cheese
salt to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly-salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain well.
  • Cook the bacon in a skillet over medium-high heat until crisp; drain, crumble, and set aside.
  • Place the drained noodles in a large baking dish. Stir the sour cream into the noodles. Spoon the cottage cheese evenly over the top of the noodle mixture. Sprinkle the crumbled bacon over the top; season with salt.
  • Bake in preheated oven until the cottage cheese softens, 3 to 5 minutes.

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a large pot of lightly-salted water to a boil, then add pasta & cook until al dente, about 8-10 minutes. Drain well.
  • In a skilled over medium-high heat, cook bacon until crisp, about 8-10 minutes, then drain, cool & crumble & set aside.
  • In a 2-quart casserole place drained noodles, then stir sour cream into the noodles.
  • Spoon cottage cheese evenly over the top of the noodle mixture & sprinkle crumbled bacon over the top of that. Season to taste with salt.
  • Bake 3-5 minutes or until cottage cheese softens.

1 (12 ounce) container cottage cheese
1 (16 ounce) package egg noodles
1 teaspoon butter
3 1/2 slices bacon (recommend Applewood smoked)
2 cups sour cream
1 teaspoon freshly cracked black pepper
3 tablespoons fresh dill, chopped (Garnish)

Steps:

  • Using cheesecloth, drain the cottage cheese over the sink overnight.
  • When ready to cook, boil a large pot of salted water (2 tsp salt) and add egg noodles. Stir occasionally.
  • Preheat oven to 350 degrees F.
  • While egg noodles are boiling, in a skillet cook bacon until crisp. Drain the oil off and then crumble. Set aside.
  • In a large mixing bowl, mix the cottage cheese, sour cream and black pepper. When noodles are ready, drain them and then add to mixing bowl. Stir well.
  • Pour mixture into large baking dish, top with crumbled bacon and place in oven. Cook for 10-15 minutes. Serve immediately.
  • Garnish with fresh dill.

This is a Hungarian recipe that uses DRY cottage cheese. My mother would make this frequently as I grew up. Tastes great when eaten at a-little-warmer than room temperature.

12 ounces wide egg noodles, cooked
3 -4 slices bacon, diced
3/4 cup sour cream
12 ounces dry curd cottage cheese
1 1/2 teaspoons salt (to taste)
1/2 teaspoon pepper
dill (to garnish, fresh or dried)

Steps:

  • Using a large pan, cook the diced bacon until crisp; remove bacon from pan and keep warm.
  • On low heat, stir the sour cream into the bacon fat.
  • To the pan, add the noodles, bacon, dry cottage cheese, salt and pepper. Combine gently.
  • On low heat, gently fold the contents until heated through. Adjust seasonings.
  • With lid on pan, let set for half hour before serving. They taste best if not too hot.
  • Garnish with more sour cream and dill if desired.
