1 leftover whole roasted turkey
2 medium onions, cored, peeled and chopped
3 medium carrots, peeled and chopped
3 medium stalks celery, cleaned and chopped
2 bay leaves
Salt
Freshly ground black pepper
Water, to cover
Any leftover turkey meat, diced
2 cups cooked diced potatoes, rice or pasta
2 cups cooked sweet peas
2 cups cooked carrots, diced
2 cups any other cooked vegetables
2 cloves garlic, chopped
1 cup chopped green onions, green part only
1/4 cup chiffonade fresh basil leaves
1/4 cup finely chopped fresh parsley leaves
1 cup cooked macaroni
Loaf crusty bread

Steps:

  • Place whole turkey in a large stockpot. Add 1/2 of the onions, carrots, and celery. Add bay leaves, salt and pepper. Cover the turkey with 3 quarts of water. Place over medium heat and bring to a boil. Reduce heat to medium low and simmer for 1 hour.
  • Remove stock from heat and strain through a fine mesh sieve, saving the liquid (about 2 quarts) and turkey meat, discarding the vegetables.
  • Saute remaining onions, carrots, and celery until wilted, about 4 minutes. Add to strained stock. Add the remaining vegetables, and garlic to the stock. Season with salt and pepper. Simmer for 10 minutes. Remove the meat from the turkey carcass and dice. Add the meat, herbs, and cooked macaroni to stock. Heat through.
  • Ladle the soup into each serving bowl and serve with the crusty bread.

  • In a large stockpot, combine the broth, potatoes, carrots, celery and onions. Bring to boil. Reduce heat; cover and simmer for 30 minutes or until the vegetables are tender. , Add the corn, lima beans, turkey, chili powder, salt and pepper. Cover and simmer 10 minutes longer.

Using the turkey bones to make a broth for the soup is the best way to get every penny's worth from your bird. If your leftover stuffing is chunky and rustic, finely chop it to make these delicate dumplings.

Carcass from one 12 to 14 pound roasted turkey, picked clean
2 large onions, one quartered and one chopped
4 peeled carrots, 2 coarsely chopped and 2 sliced
4 stalks celery, 2 coarsely chopped and 2 sliced
6 garlic cloves, 4 smashed and 2 chopped
1 bay leaf
10 whole black peppercorns
1 tablespoon extra-virgin olive oil
2 large eggs
6 tablespoons all-purpose flour, plus more as needed
1/2 teaspoon salt, plus more as needed
Freshly ground black pepper, to taste
2 cups leftover stuffing
2 sprigs fresh thyme
2 cups shredded leftover turkey meat
1 cup leftover corn kernels

Steps:

  • Put the turkey carcass, quartered onions, coarsely chopped carrots and celery, smashed garlic, bay leaf, and peppercorns in a large stockpot and add enough cold water to just cover, about 2 quarts. Bring the water to a boil, and then reduce the heat to maintain a gentle simmer and cook for 1 hour. Remove from the heat and strain the solids from the broth. Pour the liquid through a fine mesh strainer and reserve; you should have about 10 to 12 cups broth.
  • Meanwhile, in a small bowl, whisk the eggs, flour, 1/2 teaspoon salt, and some black pepper together until smooth. Add the stuffing and mix until well combined; cover and reserve.
  • Wipe the stockpot clean with a paper towel. Heat the oil in the pot over medium heat. Add the chopped onion and garlic and cook until soft and translucent, about 6 minutes. Add the sliced carrots and celery, thyme sprigs, and reserved broth and bring to a simmer; cook vegetables are just soft, about 10 minutes.
  • Roll level tablespoons of the dumpling mixture into balls with wet hands (see note) and drop into the simmering soup; cook until dumplings float, 3-4 minutes. Gently stir in the turkey meat, corn, and season with salt and pepper, and simmer until heated through. Serve immediately.

1 pound cooked turkey breast, or 1/2 of turkey reserved from Spice-Rubbed Turkey Breast with Sweet Potatoes, cut into bite-size pieces
1 small head escarole (about 8 ounces), trimmed, leaves torn into bite-size pieces and washed well

Steps:

  • In a large saucepan with a lid, heat oil over medium. Add onion and garlic. Cook, stirring occasionally, until softened, about 5 minutes. Stir in tomato paste.

1 medium onion
3 cups tomato juice
3 cups beef broth
3 -4 medium red potatoes, cubed
2 carrots, chopped small
2 stalks celery, chopped small
1 (14 ounce) can pinto beans (your choice) or 1 (14 ounce) can red beans (your choice)
1 (14 1/2 ounce) can diced tomatoes
1/4-1/2 teaspoon garlic powder
1/4-1/2 teaspoon dried oregano
1/4-1/2 teaspoon dried basil
1 dash Old Bay Seasoning
2 bay leaves
1 tablespoon Worcestershire sauce
grated cheese (your choice, I used Romano)

Steps:

  • Brown turkey in a large saucepan; drain.
  • Add onion, carrots, celery.
  • Sauté about 5 minutes Add tomato juice, beans, broth diced tomatoes and spices.
  • Bring to a boil and then reduce heat.

1 potato, diced
1 cup green beans
salt and pepper
1/4 teaspoon rosemary

Steps:

  • Heat stock pot on medium heat and add the olive oil.
  • Saute onions and garlic until just transparent -- 5 minutes.
  • Add celery, cabbage and mushrooms cooking and stirring until soft -- 5 more minutes.
  • Add potato, green beans, salt, pepper, rosemary and thyme.
  • Pour in chicken stock and bring to a boil; then turn down to a simmer and cook for 45 minutes.
  • Add macaroni, cover and cook for 15 minutes.

I don't usually make alot of soup, but I cooked a turkey last night for supper and decided to make some turkey soup from scratch...I am writing this now so I won't forget what I put in it..My family is very fussy but this was gone by breakfast today...I only got a very small bowl to taste!

Number Of Ingredients 15

1 turkey carcass
3 stalks celery, diced
1/2-1 cup carrot, diced
2 -3 tablespoons minced onion flakes
1 pinch sage
1 pinch thyme
1 pinch rosemary
1 pinch garlic
1 pinch celery seed
1 teaspoon parsley
1 tablespoon spinach and mixed herbs (I use tastefully simple, it is just a mixture of dried spinach flakes, onion, green onions, dill and)
3 chicken bouillon cubes
40 g of lipton chicken noodle soup (the one that uses 4 cups of water when you make it.)
1 cup turkey meat (as much or as little turkey meat you prefer)
1 (14 1/2 ounce) can tomatoes (I used my homemade ones with onion, celery and green pepper added)

Steps:

  • Place turkey carcass into a large stock pot and completely cover with water.
  • Bring water to a boil and then turn down to 7 (medium high) and cook with lid on for approxiamately 2 hours.
  • Remove all bones and keep any meat that you can remove from the bones so you can place the meat back into the pot.
  • Add the remaining ingredients and 2-3 cups of water to the pot and simmer for 1-2 hours.
  • Enjoy!

It's been 25 years since I cut this recipe out of a newspaper, and I've made it countless times since then. We like it so well that I always boil the leftover turkey bones and freeze the broth with turkey meat in quart containers, so it's available whenever I want to make soup.

1/2 cup frozen baby lima beans, thawed
1/3 cup cubed peeled potato
1/3 cup sliced carrot
1/3 cup sliced celery
2 tablespoons chopped onion
3/4 cup cubed cooked turkey or chicken
1/2 cup cooked spiral pasta
1 tablespoon minced fresh parsley

Steps:

  • In a large saucepan, combine the broth, lima beans, potato, carrot, celery and onion. Bring to a boil. Reduce heat; cover and cook for 15 minutes or until vegetables are tender. Add turkey and pasta; cook until heated through. Stir in parsley.

1 pound lean ground turkey
1 medium onion, chopped
2 small zucchini, quartered lengthwise and sliced
1 large carrot, cut into 1-inch julienne strips
3 cans (14 ounces each) reduced-sodium beef broth
1 jar (26 ounces) garden-style pasta sauce or meatless spaghetti sauce
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 tablespoon dried parsley flakes
2 teaspoons dried oregano
1 teaspoon pepper
1 teaspoon hot pepper sauce
1 cup uncooked small shell pasta

Steps:

  • In a Dutch oven coated with cooking spray, cook turkey and onion over medium heat until meat is no longer pink; drain. Add zucchini and carrot; cook and stir 1 minute longer. Stir in the broth, pasta sauce, beans, tomatoes, parsley, oregano, pepper and hot pepper sauce., Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Meanwhile, cook pasta according to package directions; drain. Just before serving, stir in pasta.

2 teaspoons finely minced garlic
1 (35 ounce) can tomatoes, coarsely chopped
1 1/2 lbs potatoes, scrubbed,preferably red or russet,cut into hunks
2 large carrots, peeled,cut into 4 to 5 chunks
3/4 lb small white onion, peeled
2 stalks celery, cut into 1/2-inch,slices
8 ounces small white mushrooms
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
2 bay leaves
1/2 teaspoon salt
2 turkey drumsticks, skinned,about 1 to 1 1/4 pounds each (or 1 drumstick and thigh)
10 ounces fresh green peas or 10 ounces frozen green peas, thawed
1 1/2 cups fresh corn or 1 1/2 cups frozen corn, thawed
1/2 cup finely minced parsley
freshly ground black pepper

Steps:

  • In pressure cooker, heat oil; sauté garlic 10 seconds.
  • Add tomatoes, potatoes, carrots, onions, celery, mushrooms, thyme, rosemary, bay leaves and salt.
  • Stand the 2 drumsticks, meaty side down, in the soup.
  • Lock cooker lid in place and, over high heat, bring to high pressure.
  • Adjust heat to maintain pressure and cook 12 minutes.
  • Let the pressure drop naturally, or reduce pressure with a quick-release method.
  • Remove lid, tilting it away from you to allow excess steam to escape.
  • Remove drumsticks from soup; cut meat from bone.
  • Cut the meat into 1-inch chunks; return it to the pot.
  • Discard the bone, or reserve it for stock.
  • Stir in the peas, corn and parsley; boil over medium heat until cooked, about 3 to 5 minutes.
  • Add salt and pepper to taste.

1 large onion, finely chopped
2 tablespoons butter
3 cups diced small red potatoes
2 cans (14-1/2 ounces each) chicken broth
2 cups cooked cubed turkey breast
2 cups frozen mixed vegetables, thawed
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon poultry seasoning
2 cups heavy whipping cream

Steps:

  • In a large saucepan, saute onion in butter until tender. Add potatoes and broth. Bring to a boil. Reduce heat; cover and simmer for 20 minutes.
