Those who love tender, moist dark meat will love these slow-cooker turkey thighs. If turkey thighs aren't available, ask your butcher to cut up a whole turkey and give you the bone-in thighs. Feel free to substitute an equal weight of chicken thighs for the turkey thighs, if desired. This pairs well with a simple side of steamed green beans.

1 tablespoon olive oil
4 bone-in, skinless turkey thighs (about 3 pounds)
¾ teaspoon coarsely ground black pepper
1 teaspoon kosher salt
¼ cup finely chopped shallots (from 1 large shallot)
2 tablespoons sliced garlic (from 6 cloves)
2 tablespoons chopped fresh thyme
1 ½ cups unsalted chicken stock
2 tablespoons all-purpose flour
1 tablespoon unsalted butter, softened
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat the oil in a large nonstick skillet over medium-high. Sprinkle the turkey with the pepper and 3/4 teaspoon of the salt. Cook the turkey in the skillet in batches, turning once, until well browned, about 4 minutes per side. Transfer the turkey to a 5- to 6-quart slow cooker. (Do not wipe the skillet clean.)
  • Add the shallots, garlic, and 1 tablespoon of the thyme to the skillet; cook over medium-high, stirring constantly, 30 seconds. Add the stock to the skillet; bring to a boil, stirring and scraping to loosen the browned bits from the bottom of the skillet. Transfer the stock mixture to the slow cooker. Cover and cook on LOW until the turkey is very tender and falling off the bones, about 4 hours and 30 minutes. Transfer the turkey from the slow cooker to a cutting board, and remove the meat from the bones, discarding the bones. Place the turkey on a serving platter, and cover with aluminum foil to keep warm.
  • Pour the cooking liquid from the slow cooker through a wire-mesh strainer into a 2-quart saucepan, discarding the solids. Stir together the flour and butter in a small bowl to form a smooth paste; gradually whisk the flour mixture into the cooking liquid in the saucepan. Bring to a boil over medium-high, whisking constantly; boil, whisking occasionally, until thickened, 3 to 4 minutes. Remove from the heat, and whisk in the parsley and remaining 1 tablespoon thyme and 1/4 teaspoon salt. Serve the turkey with the gravy.

½ cup butter (unsalted)
1 teaspoon rosemary (fresh, chopped)
1 teaspoon thyme (fresh, chopped)
1 tablespoon smoked paprika
2 tablespoon dijon mustard
½ cup maple syrup
2 turkey thighs (bone in w/ skin, washed and dried (about 2-3 lb))
1 teaspoon salt
½ teaspoon pepper
1 cup water
1 large onion (chopped)
5 stalks celery (chopped)
5 carrots (chopped)
4 sprigs rosemary
2 sprigs thyme

Steps:

  • Preheat your oven to 350F.
  • In a small saucepan add the butter and melt over medium high heat. Add the rosemary, thyme, smoked paprika, dijon mustard, maple syrup and stir. Bring to a boil then remove from heat.
  • Score the skin of the turkey thighs. Season your turkey thighs with salt and pepper. Pour about 3/4 of the maple/mustard mixture over the thighs and toss.
  • Add the water to a roasting pan, then add the onion, celery, carrots, rosemary, and thyme. Place a roasting rack in the pan.
  • Place the turkey thighs, skin side up, on the rack and brush with remaining maple/mustard glaze.
  • Roast for 2 hours or until the internal temperature reads 175-180F, basting every 30 minutes with the juices from the pan.
  • Remove from the oven and cover the thighs with aluminum foil. Let them rest for 10 minutes before slicing them.

1 1/2 cups dried cranberries
1/2 cup plus 2 tablespoons cider vinegar
1/4 cup honey
1/4 cup ketchup
2 tablespoons tomato paste
4 teaspoons paprika
4 teaspoons ground mustard
1 teaspoon granulated garlic
1 teaspoon onion powder
Kosher salt and freshly ground black pepper
4 turkey thighs (about 4 pounds 12 ounces)
Mini potato buns, for serving

Steps:

  • Heat the cranberries and 1/2 cup vinegar, covered, in a microwave-safe bowl until the cranberries are softened, 45 to 60 seconds, then transfer to a blender. Add the honey, ketchup, tomato paste, paprika, mustard, garlic, onion powder and 1/2 teaspoon salt, and blend until the cranberries are finely pureed. You should have about 1 1/2 cups of sauce. Reserve and refrigerate 1/4 cup. Pour the remaining 1 1/4 cups into a 6-quart slow cooker.
  • Stir together 1 tablespoon salt and a few grinds of pepper in a small bowl to combine.
  • Remove the skin from the turkey thighs, and discard. Place the thighs on a large plate, dry well with paper towels and season both sides with the salt-and-pepper mixture. Place the thighs in the slow cooker, and turn to coat in the sauce. Cover with the lid, and turn the heat to high for 4 hours, until the meat is falling off the bone.
  • Transfer the thighs to a plate, and let cool for about 10 minutes. Stir the reserved sauce and the remaining 2 tablespoons vinegar back into the pot. When the thighs are cool enough to handle, shred the meat into 1/2-inch strips. Return the meat to the sauce, and stir to coat. Make sandwiches with the meat and potato buns, and serve. Or let the meat cool, and refrigerate up to 2 days.

1 medium onion, chopped
1/2 cup water
2 garlic cloves, minced
1-1/2 teaspoons rubbed sage, divided
2 turkey thighs or turkey drumsticks (2 pounds total), skin removed
1 tablespoon cornstarch
1/4 cup cold water
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon browning sauce, optional

Steps:

  • In a 3-qt. slow cooker, combine the carrots, onion, water, garlic and 1 teaspoon sage. Top with turkey. Sprinkle with remaining sage. 2 c baby carrots
1 1/4 lb baby potatoes (if small, leave whole otherwise quartered)
2 celery ribs, cut into 2-inch pieces
1 medium onion, peeled and quartered
3 clove garlic, peeled and sliced
1/2 c chicken broth
2 Tbsp olive oil
2-4 (1 lb. each) turkey thighs, (skin on and bone in)
salt and pepper, to taste
1 tsp dried thyme
1 tsp dried parsley flakes
1 tsp herbes de provence

Steps:

  • 1. Coat large slow cooker liner with non stick cooking spray. Add carrots, potatoes, celery, onion, garlic and broth.
  • 2. Heat oil in large skillet over medium-high heat. Brown thighs, skin side down (in batches, if necessary) Until skin begins to crisp.
  • 3. Place thighs on top of vegetables in slow cooker and sprinkle with remaining ingredients.
  • 4. Cover and cook on low for 5 1/2 hours. Thighs should read 189F when instant thermometer is inserted).
  • 5. Remove thighs to platter or cutting board and slice (or serve whole). Serve vegetables and juices in a aerving bowl.

1/3 cup maple syrup
