This hearty Mexican-style casserole is chock-full of popular south-of-the-border ingredients including corn chips, salsa, Monterey Jack cheese and refried beans. 2 cups coarsely crushed corn chips
1 can (16 ounces) refried beans
2 cups shredded Monterey Jack cheese, divided
1 cup salsa
2 cups shredded cooked turkey
1 teaspoon taco seasoning
1 green onion, sliced
1 medium tomato, chopped

Steps:

  • Place corn chips in a greased shallow 2-1/2-qt. baking dish. Place the refried beans in a small saucepan; cook and stir over medium heat until heated through. Remove from the heat; stir in 1 cup cheese and salsa. Spread over chips. , In a large bowl, combine turkey and taco seasoning; sprinkle over bean mixture. Top with remaining cheese. Sprinkle with onion. , Bake, uncovered, at 400° for 20-25 minutes or until cheese is melted. Sprinkle with tomato.

3 Tbsp. extra virgin olive oil, divided
1 lb. 93%-fat-free ground turkey
1 Tbsp. TACO BELL® Reduced Sodium Taco Seasoning Mix
2 fresh jalapeño peppers, divided
1 white onion, finely chopped
1 orange pepper, seeded and finely chopped
1/4 tsp. freshly ground black pepper
1 can (15.5 oz.) black beans, drained
1 can (14.5 oz.) fire-roasted diced tomatoes with green chilies
9 oz. VELVEETA, cut into 1/2" cubes
1/2 cup red salsa
8 (6-inch) white corn tortillas
1 bunch fresh cilantro, for garnish
2 avocados, pitted and thinly sliced, for serving
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream, for serving
2 limes, cut into wedges

Steps:

  • Preheat oven to 375°F and spray a 9-x-9" baking dish with non-stick cooking spray.
  • In a high-sided sauté pan over medium high heat, heat 2 Tbsp. olive oil. Add ground turkey, breaking up the meat with a wooden spoon. Cook until no longer pink, about 5 min. Stir in taco seasoning mix; cook 1 min. Using a slotted spoon, remove ground turkey to a plate.
  • Seed and finely chop 1 jalapeño. In the same pan, add remaining 1 Tbsp. olive oil, chopped jalapeño, onion and orange pepper. Season with black pepper and cook about 3 to 4 min. Add in black beans and roasted tomatoes and stir until combined. Stir in ground turkey. Check seasoning and remove from heat.
  • In a microwave-safe bowl, add VELVEETA and microwave on HIGH for 1 min. Remove from microwave and stir in salsa. Set aside until ready to build.
  • In the baking dish, add 4 tortillas. Next, add ½ of the turkey mixture and drizzle with ½ of the salsa mix. Add another layer of 4 tortillas, the remaining turkey mixture, and rest of the salsa and bake for 25 min.
  • Thinly slice remaining jalapeño. Remove taco bake from oven and top with jalapeño, cilantro, avocados, and sour cream. Serve with lime wedges.

1 bag tortilla chips
1 pkg (1 - 2 lb.) ground turkey burger
1 pkg Taco Bell Taco Seasoning
1 can Taco Bell Fat-Free Refried Beans
1 can fiesta nacho cheese soup or pepperjack cheese soup
2 cups shredded mozzarella cheese
1 cup shredded pepperjack cheese
Sour cream and salsa (optional for garnish)

Steps:

  • Line the bottom of a large baking dish with a layer of tortilla chips.
  • Brown ground turkey until done, drain grease. Add taco seasoning following directions on package. Add can of refried beans to turkey burger. Add can of cheese soup to turkey and bean mixture. Mix until well blended then pour over the layer of chips. Top with shredded cheese. Cover with another layer of chips.
  • Bake at 400 degrees F for 12 - 15 minutes or until chips are slightly browned and cheese is melted. Serve topped with sour cream and salsa.
