2 tablespoons extra-virgin olive oil
2 pounds ground turkey (85 percent lean) or ground chicken
1 teaspoon rubbed sage
3 tablespoons all-purpose flour
3 1/2 cups low-sodium chicken broth
Coarse salt and ground pepper
1 yellow onion, diced medium
3 celery stalks, diced medium
1 loaf crusty white bread, cut into large cubes (8 cups)
2/3 cup dried cranberries
2 large eggs, lightly beaten
2 tablespoons unsalted butter, cut into small pieces

Steps:

  • Preheat oven to 425 degrees. In a large skillet, heat 1 tablespoon oil over medium-high. Add turkey and cook, breaking up meat with a wooden spoon, until browned, 8 to 10 minutes. Add sage and flour and stir to coat. Add 1 1/2 cups broth and cook, stirring and scraping up any browned bits, until liquid is thickened, 2 minutes. Season with salt and pepper and transfer mixture to an 8-inch square baking dish.
  • Rinse out skillet; wipe dry. Return to heat and add 1 tablespoon oil. Add onion and celery and cook until softened, 8 minutes. Remove from heat and add bread, cranberries, and 2 cups broth; toss until combined. Stir in eggs. Spoon bread mixture over turkey mixture; dot with butter. Bake until juices are bubbling and bread is golden brown, 20 to 25 minutes. Let cool 10 minutes before serving.

3 cups stuffing
1 (6 ounce) can French fried onions
1 (10.75 ounce) can condensed cream of celery soup
¾ cup milk
1 ½ cups cooked turkey, cubed
1 (10 ounce) package frozen green peas, thawed

Steps:

  • Combine stuffing and 1/2 can onions. Spoon stuffing mixture into a 9 inch shallow baking dish. Press stuffing across bottom and up sides of dish to form a shell.
  • Combine undiluted soup, milk, turkey, and peas; pour into stuffing shell.
  • Bake, covered, at 350 degrees F (175 degrees C) for 30 minutes. Top with remaining onions. Bake, uncovered, 5 minutes longer. Serve hot.

1/2 cup diced celery
1/4 cup butter or 1/4 cup margarine
1 (4 1/2 ounce) jar sliced mushrooms
1 medium yellow onion, peeled chopped
1 1/4 cups Hidden Valley® Original Ranch® Dressing, divided
3 cups about 1 pound coarsely shredded cooked turkey
3 cups seasoned stuffing mix
1/3 cup dried sweetened cranberries
2/3 cup water

Steps:

  • Preheat the oven to 350ºF.
  • Drain the mushrooms. Reserving the liquid and set aside.
  • In large skillet, melt butter over medium-high heat in large skillet. Add the celery and onions and cook for 4 minutes or until onions have softened.
  • Remove the pan from the heat and stir in 1/2 cup of the dressing, water, and the reserved mushroom liquid.
  • Fold in the stuffing mix and cranberries and mix until thoroughly moistened.
  • In a separate bowl, combine turkey, mushrooms and remaining 3/4 cup dressing.Spread the turkey mixture evenly in a buttered 8-inch baking dish. Top with the stuffing mixture.

1/4 c butter or margarine
1/2 c diced celery
1 1/4 c hidden valley original ranch dressing, divided
2/3 c water
3 c seasoned stuffing mix
1/3 c sweetened dried cranberries
3 c coarsely shredded cooked turkey (about 1 pound)

Steps:

  • 1. Drain mushrooms, reserving liquid; set aside. Melt butter over medium-high heat in a large skillet. Add celery and onion; saute for 4 minutes or until soft.
  • 2. Remove from heat and stir in 1/2 cup dressing, water and reserved mushroom liquid. Stir in stuffing mix and cranberries until thoroughly moistened. Combine turkey, mushrooms and remaining 3/4 cup dressing in a seperate bowl.

1/3 cup butter or margarine
2 cups seasoned stuffing mix (1/2 of 8 oz. pkg.)
1/2 cup celery sliced
1/2 cup onion chopped
2 tablespoons butter or margarine
1 (10 1/2-ounce) can cream of chicken soup condensed
1/2 cup sour cream
1/2 cup water
2 1/2 cups turkeys cubed cooked, or chicken (about 12 oz.)
Paprika

Steps:

  • Preheat oven to 350°.In a medium saucepan over medium heat, melt 1/3 cup butter or margarine. Stir in stuffing mix set aside.In a 10-inch skillet over medium-high heat, saute celery and onion in 2 tablespoons melted butter or margarine for 8 minutes or until tender and lightly browned. Stir in soup, sour cream and water until blended. Remove from heat.Stir in turkey or chicken and half of the buttered stuffing mix until blended. Transfer to a shallow 1 1/2 -quart baking dish. Top with remaining crumb mixture. Lightly sprinkle with paprika.Bake for 30 minutes or until edges are bubbly and center is very hot.
