1 cup water
3 tablespoons dry onion soup mix
1 tablespoon Worcestershire sauce
1 teaspoon minced garlic
½ teaspoon ground black pepper
1 ½ pounds ground turkey
1 cup Italian-seasoned bread crumbs
1 egg
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can water
3 tablespoons brown gravy mix

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Whisk 1 cup water, onion soup mix, Worcestershire sauce, garlic, and black pepper together in a bowl. Strain mixture, reserving solids and broth. Pour 1/2 cup broth and the solids into a large bowl; mix turkey, bread crumbs, and egg into broth-solids mixture until thoroughly combined. Scoop 8 portions using 1/2 cup measure and form each into an oval patty; arrange on a baking sheet.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Whisk remaining broth, mushroom soup, 1 can water, and gravy mix together in a saucepan until smooth; bring to a boil, stirring constantly. Remove from heat.
  • Flip patties and pour gravy over each. Continue to cook until gravy has slightly thickened, about 10 more minutes.

I made this one night on a whim, not knowing what to do with the ground turkey I had taken out of the freezer. It came out amazing! I served it over baked stuffing and with green bean casserole. My two picky eaters (8 and 5) loved this recipe.

1 pound ground turkey
⅔ cup bread crumbs, or to taste
1 egg, beaten
1 ½ teaspoons onion powder, or to taste
1 ½ teaspoons garlic powder, or to taste
1 ½ teaspoons ground black pepper, or to taste
1 (12 ounce) package fresh cranberries
1 cup orange juice
3 tablespoons granular no-calorie sucralose sweetener (such as Splenda®)
¼ cup water
1 tablespoon cornstarch

Steps:

  • Mix ground turkey, bread crumbs, egg, onion powder, garlic powder, and black pepper together in a large bowl; set aside for 5 minutes.
  • Stir cranberries, orange juice, and sweetener together in a saucepan; bring to a boil. Stir water and cornstarch together in a bowl; stream into the boiling cranberry mixture while stirring. Bring liquid again to a boil and cook until thickened to your desired consistency, 5 to 10 minutes.
  • Heat a large skillet over medium heat. Shape the turkey mixture into 6 patties. Fry the patties in the skillet until completely browned on the bottom, about 7 minutes. Flip the patties and continue cooking until no longer pink in the center and the juices run clear, 3 to 4 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Pour the cranberry-orange gravy over the patties; bring to a simmer and continue cooking until the sauce thickens further, 3 to 4 minutes more.

1 medium sweet onion, minced
1 lb earthy mushroom, slice caps and mince stems
1 lb ground turkey
1 1/2 cups whole wheat breadcrumbs
2 egg whites
1 tablespoon Worcestershire sauce
11 ounces low-sodium low-fat beef broth
1/2 cup red wine
1 tablespoon onion powder
2 tablespoons ground sage
2 tablespoons kosher salt
1 1/2 tablespoons black pepper
2 fresh sage leaves, bruised and rubbed between your hands
1 teaspoon olive oil

Steps:

  • In a nonstick cooking pan that has been sprayed with veggie spray, sweat minced onion, mushroom stems, and 1 dash of salt until translucent. Set aside to cool.
  • In a large bowl, mix ground turkey, cooled veggies, bread crumbs, 2 egg whites, 1 tablespoon Worcestershire sauce, 1 tablespoon onion powder, 2 tablespoons ground sage, 2 teaspoons kosher salt, and freshly cracked black pepper until thoroughly mixed (as you would a meatloaf). Divide the meat into 6 patties. Preheat a seasoned cast iron skillet (this gives the best results, a rich beefy flavor), brush on 1 teaspoon of olive oil. Brown meat on both sides. Finish in the oven at 400 degrees for 20 to 30 minutes until no longer pink in the center.
  • In the meantime, sauté a pound of sliced mushrooms in nonstick skillet with cooking spray, until tender.
  • Once the meat is done, take it out of the pan and scrape the bits of caramelized meat out of the bottom of the pan with a spoon. Add the sage leaves, wine and the beef broth, and bring to a boil. Let the sauce reduce by half. Remove from the heat, take out the sage leaves, and pour sauce over steak. Serve along with sautéed mushrooms, brown rice, and a fresh green salad.

1 lb turkey cutlets (more is fine) or 1 lb steak (more is fine)
1 lemon
1/2 white wine (more or less to taste)
1/2 medium onion, sliced thin
2 tablespoons olive oil
flour (for dredging)
salt & pepper

Steps:

  • Slice the onion as if you were making VERY thin onion rings, do not chop it.
  • Heat one tablespoon of oil in a non-stick frying pan and add onion, cook until soft and slightly browned.
  • While the onion is cooking, pepper and salt the turkey cutlets on each side, and then dredge each piece in flour.
  • Push the onions to one side of the pan, add the rest of the olive oil (1 tbs) and place floured turkey in pan. Allow turkey to brown slightly before turning it.
  • Once turkey has browned on each side, add the juice of one lemon and the white wine to the pan, stirring it around with the onions.
  • Feel free to flip turkey pieces as much you want, cover pan if it is getting too dry too quickly, keep cooking for approximately 20 more minutes.
  • **If sauce starts to dry out, add a little more wine, lemon juice, water or stock to get the consistency you would like.

2¼ pounds ground turkey, no more than 93 percent lean
2 large egg yolks
¼ cup capers, chopped
3 medium shallots, finely chopped
½ cup finely chopped fresh parsley
2 tablespoons Dijon mustard
1½ tablespoons Worcestershire sauce
1 teaspoon hot sauce, such as Tabasco
Salt and pepper
Toasted English muffins, for serving

Steps:

  • Prepare a medium-low fire in a charcoal grill or preheat a gas grill on high. Meanwhile, in a large bowl, break up the ground turkey into rough chunks. Add the egg yolks, capers, shallots, parsley, mustard, Worcestershire sauce, hot sauce, 1 teaspoon salt, and ½ teaspoon pepper, and toss lightly with your hands to distribute the seasonings (the mixture will be very moist and sticky). Divide the mixture into 6 6-ounce portions and, with a light hand, gently form the portions into patties roughly 4 inches in diameter and 1 inch thick. Press a divot (see Kitchen Aide) into the top of each patty. If using a gas grill, adjust the burners to medium-low. Grill the burgers without moving them until grill-marked on the bottom, about 8 minutes. Flip the burgers and continue grilling until the meat is cooked through (the centers of the burgers should register 160 degrees on an instant-read thermometer), about 7 minutes longer. Serve immediately with toasted English muffins.

Turkey Steak was another historic recipe found among the treasures of the old farmhouse. It is simple and really good. The way it is worded tells me that it's a pretty old recipe. Instead of a whole Turkey I tested it with a whole turkey breast. Since that is what the recipe focused on.

1 turkey breast (5-8 lbs) or you can parboil a 30 lbs turkey
1 qt milk
8 eggs
salt & pepper, to taste
2 c flour enough for dredging
2 c bread crumbs

  • 1. Parboil a turkey of 26-30 lbs. ( I made it simple by using just the turkey breast) until fairly well done. Lift out breast and cut steaks as you would from a beef tenderloin.
  • 2. Dip steaks in a batter made of milk, eggs, salt, and pepper. Dredge in flour; shake off excess. Then dunk back in batter and dredge in breadcrumbs.
  • 3. Fry in fat (350^) until golden brown. (Cook in a deep fat fryer)

1/3 c heinz 57 sauce
1/3 c ketchup
1 egg

1/3 c heinz 57 sauce
1/3 c ketchup
3 Tbsp honey

EASY, HEALTHY, AND AMAZING TURKEY "STEAK"



Easy, Healthy, and Amazing Turkey

This easy meal idea is good for servings of all sizes and could even be used for party food. Only 5 ingredients and so good my picky eater wife likes it! This recipe was created after thinking of a healthier way to make sliders, with or without bread, since I am on a very strict diet that I won't give up on - over 60 lbs lost so far. ***NOTE*** The Recipe could be used with rolls or bread to make more of a slider like meal. Also I feel this recipe would be great by adding BBQ sauce when almost done, but I have not tried this...yet. This Is also my first posted recipe.

1 lb ground turkey (thawed)
1 teaspoon black pepper (to taste)
1 teaspoon seasoning salt (to taste)
1 medium onion (diced)
2 -3 cups water (warm)

Steps:

  • Mix the ground turkey, black pepper, and seasoning salt in a medium sized bowl.
  • On a flat baking pan (like a cookie sheet with sides) spread the seasoned meat to cover the entire pan.
  • Use a spatula, rolling pin, or similar item, to flatten/spread the meat evenly helps.
  • Make a "break line" in the portion size you would like by pressing into the meat using a knife or pizza cutter. (I use 3 x 3 lines to make 16 one ounce portions).
  • Place the pan with the meat in the freezer until fully frozen.
  • Once frozen break apart and separate the pieces of meat.
  • If not cooking all of the meat, the extra can be wrapped and stored in freezer paper to ensure easy separation.
  • Cook the diced onion in a preheated skillet until it gets some color. (optional). Add black pepper and seasoning salt to taste while browning the onions.
  • Add enough water to slightly cover the onions; bring to a simmer over medium heat.
  • Once the onions and water start to simmer, place the pieces of frozen seasoned turkey on top of the onions and water, adding more water as needed to prevent sticking or burning.
  • Simmer until bottom of meat is browned; flip to cook the other side.
  • Check your meat to make sure it is fully cooked.
  • When fully cooked, serve topped with the onions they were cooked inches
  • Place the meat on rolls, biscuits, or other small bread (optional).
