SMOKED TURKEY SAUSAGE WITH PASTA
I found this recipe in the Febuary/March 2003 issue of Taste of Home's Light and Tasty. I was very pleased with the results when I made it. The leftovers are even better. This comes out to 5 points for a 1 1/4 serving. Enjoy!

Steps:
- Cook pasta.
- On another burner, in a large non-stick skillet saute the sausage, mushrooms, garlic, and basil in oil until mushrooms are tender.
- Drain pasta and add to the sausage mixture.
- Add tomatoes, salt, and pepper.
- Toss gently and heat through.

- Spray large skillet with cooking spray; heat over medium-high heat. Add sausage; cook 3 to 5 minutes or until sausage is browned lightly. Add bell pepper; cook 2 minutes more. Add undrained tomatoes, tomato sauce, water and pasta; stir to combine. Bring mixture to a boil. Reduce heat; cover and cook 15 minutes or until pasta is tender. Sprinkle with Parmesan cheese.

- Prepare rigatoni according to directions on box. Remove sausage meat from casing, set aside. In hot skillet saute onions. Add pepper and crumbled sausage meat. Stir and cook over medium high heat for 5 minutes. Add garlic and red pepper flakes. Add chicken stock and bring to a simmer. Add florets and cover to steam. Once broccoli is tender add rigatoni to pan. Stir to coat. Serve.

- In 12-inch nonstick skillet, heat oil over medium-high heat. Add sausage; cook 8 to 10 minutes or until no longer pink and completely cooked (at least 165°F). Using slotted spoon, transfer to plate, and keep warm.
