2 cups cubed cooked turkey breast
1 medium sweet onion, chopped
3/4 cup chopped celery
1/2 cup fat-free plain yogurt
1/4 cup reduced-fat mayonnaise
1/2 teaspoon garlic salt
1/2 teaspoon curry powder
2 medium tomatoes, thinly sliced
1 cup torn leaf lettuce
4 spinach flour tortillas (8 inches), room temperature

Steps:

  • In a large bowl, combine the turkey, onion and celery. In another bowl, whisk together the yogurt, mayonnaise, garlic salt and curry. Pour over turkey mixture: toss to coat. Layer tomatoes and lettuce on tortillas. Top with turkey mixture; roll up and secure with toothpicks.

1-1/2 teaspoons curry powder, divided
1/4 teaspoon salt
1/2 pound turkey breast tenderloins, cut into 1/2-inch pieces
1 teaspoon olive oil
1/4 cup unsweetened apple juice
1/4 cup sour cream
1/4 cup mayonnaise
1/4 teaspoon ground cinnamon
1 cup diced peeled tart apple
1/4 cup raisins
2 flour tortillas (8 inches), room temperature
2 lettuce leaves

Steps:

  • In a large resealable plastic bag, combine 1 teaspoon curry and salt. Add turkey, a few pieces at a time, and shake to coat. In a small skillet, cook turkey in oil over medium heat until no longer pink. Cool slightly., In a blender, combine the apple juice, sour cream, mayonnaise, cinnamon, turkey and remaining curry; cover and process until blended. Stir in apple and raisins. Spread over tortillas; top with lettuce. Roll up tightly.

I was looking for an easy turkey salad recipe to go with the ingredients I had on hand, but couldn't find one I liked. So quite naturally, I came up with my own. These have just a touch of spice to them. I found them both, easy and good.

1 ½ pounds chopped cooked turkey
⅔ cup creamy salad dressing (such as Miracle Whip®)
1 (10 ounce) can diced tomatoes with green chile peppers
2 jalapeno peppers, chopped
2 tablespoons minced onion
½ teaspoon chili powder
½ teaspoon ground black pepper
1 (15 ounce) package flour tortillas
1 (8 ounce) package shredded Mexican cheese blend
4 ounces shredded lettuce

Steps:

  • Mix turkey, salad dressing, tomatoes with green chile peppers, jalapeno peppers, onion, chili powder, and black pepper together in a bowl until turkey salad is evenly combined.
  • Stack tortillas on a microwave-safe plate and cover with a paper towel. Microwave until tortillas are warmed, 20 to 30 seconds.
  • Spread about 2 tablespoons turkey salad onto 1 side of each tortilla; top with Mexican cheese blend and lettuce. Fold opposing edges of the tortilla to overlap the filling. Roll 1 of the opposing edges around the filling in a burrito-style.

1 tbl. red onion, minced
1/2 tsp. salt, divided
1 tsp. fresh lime juice
1/4 cup leftover cranberry sauce
Salad:
1/2 cup mayonnaise
1/2 tsp. curry powder
1 celery stalk, minced
1/4 cup scallion, minced
1/4 cup cashews, chopped
1 1/2 cups leftover turkey, diced
4 flour tortillas (8-10 inch)

Steps:

  • Make the chutney by combining the jalapeno, red onion, 1/4 tsp. salt, lime juice & cranberry sauce in a small bowl. Set aside. Make salad by combining the remaining salt, mayonnaise, curry powder, celery, scallion, cashews & turkey in a large bowl. Stir until well combined. To assemble, spread 1/4 of the cranberry chutney over each tortilla, top with 1/4 of the curried turkey salad, and roll into a wrap, like a burrito.

2 hard-cooked eggs, sliced
1/2 head iceberg lettuce, shredded
2 roma tomatoes, chopped
1 avocado, pitted and diced

1/2 cup blue cheese or 1/2 cup gorgonzola, crumbled

black pepper
4 flour tortillas, 10-12 inch (regular, whole wheat or tomato-flavored)

Steps:

  • Lay out tortillas. Place ½ cup of turkey in the middle of each tortilla. Follow by placing one-fourth of the portion of bacon, eggs, cheese, avocado, tomato, green onion and lettuce in the middle of each tortilla. Drizzle with ranch dressing and spinkle with fresh black pepper.
