TURKEY BACON-WRAPPED JALAPENO POPPERS
These are a constant request from my friends for dinner get-togethers! Simple to make and to prepare, and they turn out extremely delicious! The amount of the ingredients will depend on how many you want to make - remember you will be halving the jalapenos.

Steps:
- Turkey Poppers: Are you looking for a different snack to serve during the endless round of football games? Do you have some wild turkey breast from this year's hunting season still in your freezer? Or do you possibly have some turkey from the regular holiday feast that you are looking to turn into creative leftovers? You need wild turkey breast, jalapeno or banana peppers, bacon, cream cheese and toothpicks. Cut a dozen jalapeno peppers into halves and thoroughly clean them out so you won't inflame the sinuses and senses of your guests. You can substitute banana peppers if you wish so you won't have the game interrupted by smoke coming from the nostrils. Marinate one wild turkey breast in Italian dressing for 24 hours. Cut the turkey meat into pieces that will easily fit inside the pepper halves. Spread cream cheese inside pepper halves and place turkey strips on top of the cream cheese20and secure with a toothpick. Wrap a bacon strip around the outside as additional insurance policy. Place the peppers on the barbeque grill (or broiler) until the bacon is done. Let them cool before serving. The cream cheese gets very hot. From Bill Hilts, Jr.
BONNIE'S TURKEY POPPERS FROM LEFTOVERS
This is a great way to use up your leftovers, and I think you will enjoy making this recipe your own when you come up with ideas for other varieties of Poppers. I served these Turkey Poppers as our main entree with a nice rich turkey gravy poured over the top, but these Poppers are also good plain and heated up in the microwave...

Steps:
- 1. Gather all your ingredients before you begin. Bake on a parchment lined pan in a 375 degree oven for about 20 minutes or until golden brown. The homemade biscuit recipe makes 9 biscuits.
- 2. FILLING Place turkey, stuffing, and cranberry sauce in small dishes. Use a flat plate to assemble poppers.
- 3. HOMEMADE BISCUITS (Skip this section if you are using canned biscuits and go to step 8 for instructions on rolling) Biscuit ingredients: You will need all purpose and bread flour, chilled Crisco, salt, baking powder, and chilled buttermilk. Whisk all ingredients well except the buttermilk.. (Yes, you can use the buttermilk blend if you wish.)
- 4. Cut the chilled Crisco into flour until it is the size of small peas.
- 5. Add about half of the chilled buttermilk to the flour mixture and then the rest a little at a time until you have enough to make a craggy dough. Handle it gently to get a nice flaky biscuit. You want dough that you can roll out and handle with your hands. But you must not overmix the dough.
- 6. Roll out the ball of dough, and roll it to 1/2 inch thickness. Cut with a medium size biscuit cutter.
- 7. Like this.
- 8. Roll each biscuit flat and lay on a flat plate to fill. It is easiest to roll and fill one popper at a time and then place the finished popper on the baking pan, seam side down. (It will look fine after it is baked)
- 9. Now for the fun part. The filling! This is easy. Just put 1 teaspoon of stuffing and one teaspoon of cranberry sauce and one teaspoon of diced turkey on a rolled out flat biscuit..
- 10. Gather edges to enclose the filling in the popper.
- 11. Pinch the edges together.
- 12. Form the filled dough into a round ball. Place the balls on a parchment lined, shallow baking pan.
- 13. Lightly beat an egg and brush the tops of the poppers.
- 14. Bake at 375 for about 20 minutes until golden brown. Store them in a ziplock bag in the fridge after they have cooled. Enjoy!
- 15. These Poppers are wonderful heated up in the microwave for 30 seconds as a quick meal.
- 16. Here is how it looks! Spoon hot turkey gravy on top and Serve and Enjoy!
