TURKEY MEATLOAF WITH BBQ GLAZE
Old school comfort food made wholesome with lean ground turkey. This method creates a moist and juicy Turkey Meatloaf with a flavorful BBQ Glaze. Leftovers reheat beautifully making it a great choice for meal prep!

- Preheat oven to 350 degrees F. Line a 13- x 9-inch baking dish with heavy duty foil and coat the foil with non-stick cooking spray. If you prefer not to use foil, generously coat the baking dish with non-stick cooking spray.
- Add the olive oil to a medium skillet and place it over MEDIUM-LOW heat. When hot, add the onions. Season with 1/2 teaspoon salt and pepper and sauté for 5 to 6 minutes, or until translucent, but not browned. Add the mushrooms and sauté for 2 to 3 minutes, or until they release their liquid. Remove from heat and allow to cool.
- Meanwhile, add the eggs to a large mixing bowl and whisk lightly. Add the ground turkey, bread crumbs, BBQ sauce, Worcestershire sauce, thyme, smoked paprika, granulated garlic or garlic powder, remaining salt, and the onion and mushroom mixture. Mix until all the ingredients are well incorporated but avoid overworking the mixture. Pour the meatloaf mixture out into the prepared baking dish and shape into an oval, football shaped loaf. Bake for 30 minutes.
- Meanwhile, combine the sauce ingredients in a small bowl. After the initial baking time, remove the meatloaf from the oven and pour the sauce over the top. Use the back of a spoon to spread it out over the top to the edges of the meatloaf. Return the meatloaf to the oven and continue to bake for an additional 25 to 30 minutes, or until the internal temperature is 165 degrees F when checked with an instant read thermometer. Remove from the oven and allow to rest for 5 to 10 minutes before slicing.
- Serve hot, at room temperature, or cold in a sandwich.

- Set oven rack to middle position and preheat oven to 350°F. Line rimmed baking sheet with heavy-duty aluminum foil; grease the foil with olive oil or non-stick cooking spray.
- Make the BBQ glaze: In a medium bowl, whisk together the ketchup, brown sugar, cider vinegar, and Dijon mustard. Set aside.
- Make the Meatloaf: Heat the olive oil in a small sauté pan over medium heat. Cook the onions, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook 1 to 2 minutes more. Do not brown. Set aside to cool.
- In a large bowl, combine the salt, pepper, paprika, thyme, Worcestershire sauce, Dijon mustard, eggs, and ¼ cup of the BBQ glaze. Whisk until well combined. Stir in the onion mixture. Add the ground turkey and breadcrumbs and mix with your hands until evenly combined.
- Transfer the meat mixture into two even piles onto the prepared baking sheet. Shape into two long loaves about 1½ in high x 6 in long x 4 in wide. Spread the remaining BBQ glaze over the loaves, letting it drip down the sides a bit. Bake for about 45 minutes, until the meatloaves are cooked through. Scrape any fat away from the sides of the loaves, then transfer the loaves to a platter. Slice and garnish with parsley if desired.
- Freezer-Friendly Instructions: The cooked meatloaf can be frozen for up to 3 months. When ready to serve, defrost it in the refrigerator for 24 hours and then reheat it in a 300°F oven until hot in the middle.

BBQ TURKEY MEATLOAF

- Preheat the oven to 350 degrees F.
- In a large bowl, mix BBQ seasoning, crab boil seasoning, soy sauce, beaten egg, 1 cup of the BBQ sauce and Worcestershire sauce.
- In a saute pan over medium-high heat, add olive oil. Add onion, bell pepper, salt and pepper and garlic. Saute until tender. Remove from heat and add to wet mix.
- Pour mixture into bowl with the ground turkey. Add bread crumbs and mix all together with your hands.
- Transfer the meat mixture to a cookie sheet or baking pan. Using your hands, shape the meat into an oblong or rectangular shape. *Cook's Note: Alternately, you can pat the meat into a 9 by 5-inch loaf pan and pour 1/2 cup of BBQ sauce on the top of the loaf.
- Bake for 35 minutes. Remove and add the reserved 1/2 cup of BBQ sauce to the top and continue to bake for 20 more minutes.
- Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
- In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
GLAZED TURKEY MEATLOAF
You can serve this dish with roasted sweet potato "fries" or sweet potato casserole. In fact any traditional Thanksgiving type sides would work.

- Combine bread crumbs and milk and mix in a bowl.
- Add turkey, egg, onion seasonings, and catsup. Mix well and pat into small meatloaf pan.
- Bake at 350 degrees for 40 minutes.

- Bake 20 additional minutes.
