These turkey burgers are so good that you might give up traditional beef hamburgers altogether. The thick grilled patties are topped with prepared cranberry sauce and served on toasted English muffins for a nice change of pace.

1 small tart apple, peeled and finely chopped
1 celery rib, chopped
1 small onion, chopped
1 teaspoon poultry seasoning
3/4 teaspoon salt
1/4 teaspoon pepper
1-1/4 pounds ground turkey
1/2 cup mayonnaise
6 English muffins, split and toasted
6 lettuce leaves
1 cup whole-berry cranberry sauce

Steps:

  • In a large bowl, combine the first six ingredients. Crumble turkey over mixture and mix well. Shape into six patties., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill patties, covered, over medium heat or broil 4 in. from the heat for 10 minutes on each side or until a thermometer reads 165° and juices run clear. , Spread mayonnaise over muffin halves. Place the lettuce, turkey burgers and cranberry sauce on muffin bottoms; replace tops.

1 lb ground turkey, dark meat preferred
2 tablespoons vegetable oil
1 tablespoon butter
1 small onion, finely chopped
1 stalk celery, finely chopped
1 tart apple, peeled and grated
1/3 cup breadcrumbs
2 teaspoons poultry seasoning
2 teaspoons Dijon mustard
sat and pepper, to taste
1/4 cup chopped parsley
1 egg, beaten
1 mild red onion, sliced
1/3 cup whole cranberry sauce
2 tablespoons sour cream
2 tablespoons chopped chives
4 slices white cheddar cheese, sharp
4 romaine lettuce leaves
4 kaiser rolls or 4 other favorite buns, just not the hamburger variety

Steps:

  • In medium skillet over medium high heat, saute onion, celery in oil/butter until soft.
  • Add apple and continue cooking another 3 minutes.
  • Place in a bowl and let cool.
  • Add the crumbs, seasonings, parsley, mustard, egg and turkey.
  • Mix and shape into 4 patties.
  • In small bowl combine cranberry sauce, sour cream and chives.
  • set aside.
  • In large non stick skillet over medium high heat, fry the patties until done.
  • top with cheese and let melt slightly.
  • Meanwhile gently toast cut buns.
  • On bottom bun, place some onion, lettuce leaf, patty and spoon on some sauce.
  • Place top on the patty.
  • Serve with your favorite crudities.

1 lb ground turkey
1/2 cup prepared stuffing
1/3 cup grated sharp cheddar cheese (or Wensleydale cheese with cranberries, if available)
2 tablespoons dried cranberries
1 egg, lightly beaten
salt and pepper, to taste
2 tablespoons olive oil
1/2 teaspoon mustard
2 1/2 tablespoons mayonnaise
2 1/2 tablespoons cranberry sauce
fresh lettuce, to serve
4 fresh baked hamburger buns, warmed

Steps:

  • In a large bowl combine the ground turkey, prepared stuffing, cheese, dried cranberries, and egg (add salt and pepper, if needed). Mix thoroughly.
  • Divide into four equal portions, and shape into four patties.
  • Heat oil in a large frying pan over medium-high heat.
  • Cook the patties until golden brown, about 5 minutes per side.
  • In a small bowl, stir together the mustard, mayonnaise and cranberry sauce.
  • Spread some cranberry mayonnaise mixture on the inside of the warmed buns.

2 tablespoons vegetable oil
2 large yellow onions, thinly sliced (about 1 1/2 pounds)
Kosher salt
2 tablespoons mayonnaise
1 1/2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Kosher salt and freshly ground black pepper
1 1/2 pounds 93-percent lean ground turkey
2 tablespoons vegetable oil
4 slices American cheese or sharp Cheddar
4 brioche hamburger buns, lightly toasted
Cranberry Relish, recipe follows
12 bread and butter pickles
8 ounces fresh or frozen and thawed cranberries (about 2 cups)
1 small Granny Smith apple, peeled and roughly chapped (about 7 ounces)
Zest and juice of a small orange (about 1 tablespoon zest and 1/4 cup juice)
1/3 cup sugar
Kosher salt

Steps:

  • For the caramelized onions: Add the oil to a large skillet set over medium-high heat. Add the onions and 1 teaspoon salt and cook until the onions have softened and are starting to brown in spots, about 10 minutes, stirring occasionally. Reduce the heat to medium and continue cooking until the onions are deeply browned and caramelized, 40 to 50 more minutes, stirring frequently toward the end of the process. Season with salt if needed. Transfer to a small bowl.
  • For the turkey burgers: Line a baking sheet with parchment paper. Combine the mayonnaise, Worcestershire sauce, garlic powder, onion powder, 2 teaspoons salt and 1 teaspoon pepper in a large bowl. Stir to combine, and then add the turkey and mix until just combined; do not overmix or the meat will get tough. Lightly wet your hands then divide the mixture into 4 equal portions. Pat into 4-inch wide patties (about 3/4-inch thick) and put on the prepared baking sheet.
  • Heat the oil in a large nonstick skillet over medium heat until hot. Add the turkey patties (can be done in batches if needed) and cook until browned on the first side, 4 to 5 minutes. Flip and top each patty with a slice of cheese. Cover with a lid or baking sheet until the cheese is melted, the burgers are browned on the second side and the internal temperature is 165 degrees F on an instant-read thermometer, 4 to 5 more minutes.
  • To serve: Spread 2 tablespoons of the Cranberry Relish on the bottom half of each bun. Layer each with 3 bread and butter pickles, a patty and 1/4 of the caramelized onions. Top with the other half of bun. Serve immediately. Any leftover cranberry relish can be kept in the refrigerator in an airtight container for up to 2 weeks.
  • Add the cranberries, apple, orange zest and juice, sugar and 1/2 teaspoon salt to a food processor and pulse until the texture is like a chunky pesto. Transfer to a small bowl and refrigerate while you prepare the other burger components.

2 pounds ground turkey
1 ⅓ cups seasoned bread crumbs
1 small onion - grated, and juice drained
2 eggs
3 tablespoons applesauce
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon kosher salt
2 tablespoons olive oil
8 hamburger buns, split

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix the turkey, bread crumbs, onion, eggs, applesauce, chili powder, paprika, and kosher salt in a large bowl until thoroughly combined. Divide mixture into 8 equal portions, then shape into patties.
  • Heat olive oil in a large skillet over medium-high heat. Arrange the patties in the skillet and cook until browned, 3 to 5 minutes on each side. Place the browned patties on a paper towel-lined plate to drain. Transfer the patties to a 9x13-inch baking dish.

1 small or 1/2 medium onion, finely chopped
1 small celery stalk, finely chopped
1 small McIntosh apple, peeled, cored, and finely chopped
Salt and pepper
1/3 cup bread crumbs, rounded handful
1 pound ground turkey with some or all dark meat, not breast
2 teaspoons poultry seasoning, 2/3 palmful
1/4 cup chopped fresh flat-leaf parsley leaves
2 tablespoons Dijon mustard
1 medium egg
EVOO (extra-virgin olive oil), for drizzling
4 slices sharp white cheddar, for topping the burgers
4 sandwich-size sourdough English muffins
1/3 cup whole-berry cranberry sauce
3 tablespoons sour cream
2 tablespoons chopped fresh chives
4 thin slices raw red onion
4 red leaf or red romaine lettuce leaves

Steps:

  • Heat a large skillet over medium heat. Melt the butter and add the chopped onions, celery, and apple, then season with salt and pepper and cook for 3 to 4 minutes under a loose foil tent. Stir in the bread crumbs and transfer to a bowl to cool a bit. Add the meat, poultry seasoning, salt, pepper, parsley, mustard, and the egg and mix. Form 4 burgers. Wipe out the skillet and heat a liberal drizzle of EVOO in it over medium-high heat. Cook the patties for 11 to 12 minutes until cooked through. Melt the cheddar over the tops of the burgers during the last minute or two of cooking.
  • While the burgers cook, toast the split English muffins under the broiler or in the toaster.
  • Mix together in a small bowl the cranberry sauce, sour cream, and chives.
  • Serve the burgers on English muffins with red onion, lettuce, and the cranberry sauce.
