CURRIED TURKEY AND MANGO SALAD



Curried Turkey and Mango Salad image

1/3 cup mayonnaise
1/4 cup plain yogurt
1 tablespoon curry powder
3 cups diced cooked turkey
11/2 cups diced peeled pitted mango
1 cup chopped red onion
1/2 cup roasted cashews
1/2 red onion, thinly sliced

Steps:

  • Whisk mayonnaise, yogurt, and curry powder in medium bowl to blend. Season dressing with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
  • Mix turkey, mango, chopped onion, and cashews in large bowl. Add dressing and toss to coat. Transfer to bowl. Garnish with sliced onion and serve.

This is a very flexible recipe. YOu can substitute sultanas or raisins for the dried cranberries, and you can used any cold meat or prawns in place of the turkey.

100 g snow peas
2 green spring onions, sliced
3 stalks celery, thinkly sliced
2 cups shredded leftover cooked turkey (280g)
1 large mango, thinly sliced
2 tablespoons slivered almonds, toasted
2 tablespoons dried sweetened cranberries
2/3 cup mayonnaise
1 tablespoon mango chutney
1 teaspoon curry powder
1 tablespoon water
salt
pepper

Steps:

  • To make curry dressing, combine all ingredients in a small bowl. Stir well.
  • Place snow peas in a small heatproof bowl and pour over enough boiling water to cover. Stand snow peas for 30 seconds, then drain. Rinse under cold water, then drain.
  • Arrange snow peas, spring onions, celery, turkey, and mango in a serving dish. Sprinkle salad with nuts and cranberries, then drizzle with curry dressing to serve.

4 thin slices of turkey (or chicken)
1 small mango, ripe, finely diced
2 tomatoes, finely diced
1/2 onion, finely chopped (optional)
some mint leaves
some parsley leaves
8 tbsp of extra-virgin olive oil
4 tbsp of lemon juice
ground white pepper and salt to taste

Steps:

  • Grill or barbecue the turkey slices for 3-4 min. Let them cool. Cut the turkey into thin strips.
  • In a small bowl mix together mango, tomatoes and onion.
  • Make the vinaigrette: beat the lemon juice with olive oil, season with salt and pepper, add the mint and parsley finely chopped. Drizzle over the mango.
  • Pour the mango salad over the turkey some minutes before serving.

1 smoked turkey breast (aprox. 1lb.)
1 onion, chopped
1 can mango slices
Salt
Pepper
Oil

Steps:

  • 1. Thinly slice the turkey breast and place in a baking pan. 2. Put the mango slices in the blender and make into a puree. 3. In a small pot drizzle a little oil, let the onion cook. Add the mango puree and season. Let cook for 5 minutes. 4. Pour over the turkey. Cover and warm in the oven for 20 min at 350°.

8 oz lean ground turkey
1 tsp sesame oil
4 clove garlic, minced
2 Tbsp grated ginger
1 Tbsp fish sauce
2 mangoes peeled and chopped
1 small red pepper cut in strips
1 small green pepper cut in strips
2 Tbsp chopped cilantro or basil
2 Tbsp chopped mint
4 Tbsp fresh lime juice
2 Tbsp sugar
dash of hot sauce, optional
2 c snap or snow peas cut in half

Steps:

  • 1. In large non-stick skillet, heat oil over medium-high heat and cook turkey, garlic, ginger, fish sauce, stirring often for about 5 to 8 minutes or until turkey no longer pink. remove from heat.
  • 2. In large bowl whisk juice and sugar and all remaining ingredients and toss together. serve with fried rice.
