2 cups diced peeled potatoes
1/2 pound fresh asparagus, chopped
1/2 cup chopped onion
2 celery ribs, chopped
1 tablespoon chicken bouillon granules
4 cups water
1/4 cup butter, cubed
1/2 cup all-purpose flour
1 cup heavy whipping cream
1/2 cup milk
1/2 teaspoon salt
Dash pepper
12 bacon strips, cooked and crumbled
3/4 cup shredded cheddar cheese

Steps:

  • In a large saucepan or soup kettle, combine the potatoes, asparagus, onion, celery, bouillon and water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Stir in the butter., In a bowl, combine flour, cream, milk, salt and pepper until smooth; add to the vegetable mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Garnish with bacon and cheese.

1 large onion, chopped
3 celery ribs with leaves, cut into 1/4-inch pieces
6 tablespoons butter
6 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon each dried thyme, savory and parsley flakes
1-1/2 cups milk
4 cups cubed cooked turkey
5 medium carrots, cut into 1/4-inch pieces
1 to 2 cups turkey or chicken broth
1 package (10 ounces) frozen peas

Steps:

  • In a large kettle, saute onion and celery in butter until tender, about 10 minutes. Stir in flour and seasonings; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add turkey and carrots. Add enough broth until soup is desired consistency. Cover and simmer for 15 minutes. , Add peas; cover and simmer for 15 minutes or until vegetables are tender.

1 medium yellow onion, diced
2 cups button mushrooms, sliced
1 medium carrot, coarsely grated
1 teaspoon dried thyme
4 cups low sodium chicken broth
3 cups mashed potatoes
2 cups cooked turkey, chopped
salt & freshly ground black pepper, to taste

Steps:

  • In a large saucepan over medium-high heat, melt butter. Add the onion, mushrooms, carrot, and thyme, and saute until the onion is just translucent, about 4-5 minutes.
  • Add the broth and mashed potatoes. Stir until potatoes are mostly dissolved and broth is smooth.
  • Add the turkey and bring to a simmer. Reduce heat to medium-low and cook, stirring occasionally, until heated through, about 10 minutes. Season to taste with salt and pepper.

1 lb diced cooked turkey
2 teaspoons sage
1 teaspoon black pepper
1/8 teaspoon cayenne pepper (omit for no heat)
1/4 teaspoon garlic powder
1 teaspoon parsley
1/2 teaspoon oregano
1/4 ounce red pepper, minced
3 potatoes, diced
4 asparagus spears
2 cups potato flakes
2 1/2 cups nonfat milk, more maybe necessary to get right consistency
1/2 cup half-and-half (beat on high for several minutes till froth)
1 teaspoon dehydrated onion
1 tablespoon butter
3 teaspoons chicken bouillon or 3 teaspoons chicken broth, for flavor

Steps:

  • Dice the potatoes and microwave for 2-3 minutes with a little water just enough that fork can slide out.
  • Combine first 7 ingredients and mix well.
  • If using fresh onion saute in butter and then add turkey mixture. Stir on medium high for 1 minute and then add asparagus till color begins to change.
  • In sauce pan add milk, potato flakes,half and half, and the chicken soup granules, stir in turkey mixture and simmer on low till soup thickens.
  • If soup mixture is not thick enough add a bit more flakes or less depending on your taste.
