Who needs butter? A slather of mayonnaise on your turkey pulls double duty by standing in as a flavorful rub as well as adding moisture and fat to often dry meat. And what's particularly great is that it browns the skin beautifully without the constant basting that most birds need.

One 10- to 12-pound turkey
1 1/2 cup mayonnaise
1 tablespoon paprika
4 teaspoons dried parsley
2 teaspoons garlic powder
2 teaspoons dried parsley
2 teaspoon dried thyme
2 teaspoon ground sage
1 teaspoon hot sauce or a pinch of cayenne
Kosher salt and freshly ground black pepper
1 medium onion, quartered
1 head garlic, halved across the garlic cloves
Several sprigs fresh herbs, such as thyme, parsley, rosemary and sage
2 bay leaves

Steps:

  • Adjust a rack in the lowest position and preheat oven to 325 degrees F. Set a roasting rack in a large roasting pan.
  • Stir together the mayonnaise, paprika, dried parsley, garlic powder, dried thyme, ground sage, hot sauce, 2 tablespoons salt and 2 teaspoons black pepper in a medium bowl. Set aside.
  • Remove any turkey parts from the neck and breast cavities and reserve for other uses if desired. Dry the bird well with paper towels, inside and out. Rub the mayonnaise mixture all over the turkey, including the cavity, trying to make it as smooth as possible, especially on the breast so it browns evenly. Stuff the cavity with the onion, garlic, herb sprigs and bay leaves.
  • Set the bird breast-side up on the prepared roasting rack. Tent the bird with foil.
  • Roast the turkey for 2 hours. Remove the foil and increase the oven temperature to 425 degrees F. Add a cup of water to the bottom of the pan so that the drippings don't burn and continue to roast until an instant-read thermometer registers 165 degrees F in the thigh, 30 to 45 minutes. You can strain the pan drippings and serve them on the side or reserve and blend them into your gravy for extra flavor.
  • Remove the turkey from the oven and let rest about 20 minutes then carve and serve.

12 -14 lbs whole turkey (totally thawed, tee-totally thawed)
6 -7 fresh sage leaves, rough chopped
5 -6 fresh thyme, stems
2 -3 springs rosemary
2 -3 springs oregano
1 1/2 cups mayonnaise
1 -2 tablespoon coarse salt
1 -2 tablespoon pepper
3 stalks celery, rough chopped
1 large onion, rough chopped
1/2 cup butter, salted

Steps:

  • Preheat oven to 450-degrees F.
  • Lay turkey in a roasting pan.
  • Remove leaves from herbs stems. Add sage, thyme, rosemary, and oregano to mayonnaise; combine well. Rub mayonnaise/herb mixture all over outside and interior of bird.
  • Liberally salt, and pepper turkey. Add the celery, and onion, inside and out, and tuck the butter in the cavity.
  • Roast turkey in 450-degrees F oven for 30 minutes. Then turn the oven down to 350-degrees F, and insert the meat thermometer into the thickest part of the thigh, being careful not to touch bone. Continue roasting, uncovered, until internal thermometer reaches 165-degrees F. Cover legs with foil partway through roasting if desired. Depending on size of turkey, total cook time will be around 1½-2 hours. Once the thermometer reaches 165-degrees F in the thigh, check the internal temperature of the thickest part of the breast to make sure it reads at least 165-degrees F as well.
  • Remove from oven. Cover loosely with foil and let rest for at least 20-30 minutes (depending on size) before carving.
  • Remember to reserve turkey drippings and juices for gravy.

This is my version of the old fashioned extra to serve over lots of things on the thanksgiving table or for anytime meal.

2 tbs butter
1small onion, finely chopped
3 tbs all purpose flour
2 cups whole milk
1/2 tsp salt and pepper
pinch ground nutmeg
8 ounces cooked turkey cut into small pieces (2 cups)
2 tbs fresh parsley chopped

Steps:

  • 1. In 3 quart saucepan, melt butter over medium heat. Add onion and cook, stirring, until soft, about 4-5 minutes. Stir in flour and cook stirring constant 1 minute. With a wire wisk, gradually whisk in milk, salt and pepper, and nutmeg. Heat to a boil over med-high heat, whisking. Reduce heat and simmer whisking here an there 5 minutes
  • 2. Stir turkey into sauce and heat through, stir in parsley and serve (over noodles, rice, or mashed potatoes)

1 egg yolk (see note)
1 teaspoon Dijon mustard
2 tablespoons fresh lemon juice
3/4 cup vegetable oil
1 tablespoon grated lemon zest
1 teaspoon pure ground chili powder
Salt and freshly ground pepper to taste
3/4 cup slab bacon, cut into 1/4-inch pieces
1 cup yellow onion, peeled and cut into 1/4-inch cubes
1 1/2 tablespoons minced garlic
2 cups julienned baking potatoes, in 1 1/2-inch-long strips
1 1/2 tablespoons finely chopped fresh thyme
2 tablespoons finely chopped fresh sage
1 teaspoon ground cumin
4 cups diced cooked turkey
1 teaspoon salt, or more to taste
Freshly ground pepper to taste
2 tablespoons fresh lemon juice
1/4 cup coarsely chopped Italian parsley

Steps:

  • To make the mayonnaise, place the egg yolk, mustard and lemon juice in a blender and process to combine. With the motor running, add the oil by drops until the mixture begins to emulsify. Continue by adding the oil slowly in a thin, steady stream, until the mayonnaise is thick. Place in a bowl and stir in the lemon zest, chili powder, salt and pepper. Cover and refrigerate at least 1 hour.
  • To make the hash, preheat broiler. Heat a large nonstick skillet over medium heat until hot. Add the bacon and onion, and saute until the onion is translucent, about 5 minutes. Add the garlic and cook, stirring constantly, for 1 minute. Add the potatoes and saute until tender, about 10 minutes. Stir in the thyme, sage, cumin and turkey and cook until the turkey is just heated through. Remove from heat and stir in salt, pepper, lemon juice and parsley.
  • Place the hash in a baking dish and place under the broiler until nicely browned, about 2 minutes. Serve with a dollop of the mayonnaise.
