nonstick cooking spray
1 medium onion, diced
½ cup frozen peas and carrots
2 tablespoons salted butter
3 cups cold cooked rice
2 cups diced cooked turkey
2 tablespoons soy sauce, or more to taste
1 tablespoon sesame oil, or as needed
2 large eggs

Steps:

  • Coat a large pan with cooking spray. Add onion and saute over medium heat until translucent, about 5 minutes. Add frozen vegetables and butter; cook and stir, allowing butter to melt and veggies to thaw, 3 to 5 minutes.
  • Increase heat to medium-high and stir in rice and turkey. Add soy sauce, 2 tablespoons at a time, and stir until rice takes on color. Push everything to the sides of the pan. Add sesame oil to the center of the pan and stir rice mixture until coated. Push everything to the sides of the pan again. Break eggs in the center of the pan. Scramble in the center until set, 2 to 3 minutes; then stir into rice mixture until well combined.

2 cups reduced-sodium chicken broth
1 cup uncooked brown rice
2 cups cubed cooked turkey breast
3 tablespoons reduced-sodium soy sauce
1 egg, lightly beaten
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped celery
1 tablespoon canola oil
1 cup shredded romaine

Steps:

  • In a large saucepan, bring broth to a boil. Stir in rice. Reduce heat; cover and simmer for 45-50 minutes or until liquid is absorbed and rice is tender. Remove from the heat; cool. Cover and refrigerate overnight., In a small bowl, combine turkey and soy sauce; cover and refrigerate. In a large nonstick skillet, cook and stir the egg over medium heat until completely set. Remove and set aside. , In the same skillet, saute the onion, green pepper and celery in oil until tender. Add rice and turkey; cook and stir over medium heat for 6-8 minutes. Add lettuce and reserved egg; cook and stir for 1-2 minutes. Serve immediately.

1 tablespoon Butter
1/2 cup White Rice (uncooked)
1 cup Water
1/2 cup Hoisin Sauce
1/2 cup Barbecue Sauce
1 tablespoon Peanut Butter
1 1/2 teaspoons Soy Sauce
1 teaspoon Garlic ( minced)
1 teaspoon Ginger Root (fresh, grated)
2 teaspoons Sesame Oil
1 cup Onion (diced)
1/2 cup Carrot (grated)
1 cup Pea Pods
1 cup Broccoli ( cut in small pieces)
2 batches Eggs (beaten)
1/8 cup Sesame Seeds

Steps:

  • 1. Melt butter in saucepan over medium heat. Add uncooked rice and cook till toasted, stirring occasionally.
  • 2. Add water and bring to a boil. Reduce heat, cover and simmer for 15 minutes until tender.
  • 3. While riuce is cooking, mix hoisin sauce, barbecue sauce, peanut butter, soy sauce,garlic, and ginger. Set aside.
  • 4. When rice is done cooking, heat sesame oil in wok over medium-high heat. When it begins to smoke add onion and cook till clear.
  • 5. Add carrot and cook for 1 - 2 minutes. Add rice and stir for 2 minutes.
  • 6. Add broccoli and pea pods,cook and stir for 1 - 2 minutes.
  • 7. Move eveything to side of the wok and put beaten eggs in middle of wok and scramble till done.
  • 8 Stir into rice mix. Sprinkle with sesame seeds.

2 Tbsp peanut oil
2 Tbsp butter
1 c cooked turkey, large dice cut (leftover)
1/2 c cooked peas (leftover)
1/2 c onion, raw, large dice cut
1 clove garlic, chopped
1/2 c fresh mushrooms, sliced, cut in half
3 eggs, scramble with a fork
3 green onions, chopped
4 c jasmine rice, cooked, cold or cooled
soy sauce, low-sodium
sea salt & pepper
garlic powder
onion powder

Steps:

  • 1. Leftover cold rice is always best. But if none, make 4 cups (prepared) of jasmine rice according to package directions.
  • 2. In a very large skillet or Wok, add peanut oil, butter, and garlic.
  • 3. Add mushrooms first (since they will absorb the flavors as they cook). Cook for 2 min.
  • 4. Add onions. Salt & pepper mixture.
  • 5. Separate mixture to one side of the pan. On the other side add eggs and cook them like scramble eggs.
  • 6. Once eggs are cooked combine them with rest of mixture in pan.
  • 7. Add turkey and season with garlic & onion powder. Then add peas. Stir mixture.
  • 8. Add cooked rice to pan.
  • 9. Give a few good shakes of soy sauce on rice.
  • 10. Combine rice with rest of ingredients in pan. Taste and season as needed.
  • 11. Add green onions and stir once or twice and serve.
  • 12. Variations: You can add or replace these suggestions. Swap out peas for carrots. Swap out mushrooms for bean sprouts. The trick is to not overload on the items and keep it simple.

1 cup red wine

1 tablespoon fresh chopped thyme

1/2 tablespoon salt
1 turkey breast, skinless
1 tablespoon minced garlic

1 cup blanched English peas
Salt and pepper to taste
1 cup blanched snow peas
Juice of 1 lemon
Juice of 1 lime
Juice of 1 orange
1/4 cup extra virgin olive oil
Salt and black pepper to taste

Steps:

  • Make marinade in a large bowl. Check for seasoning. Marinate turkey breast for at least 6 hours or overnight. (One can speed up the marination process by slicing the breast into 4 to 6 long, thin slices.) Season the marinated breast and grill on low grill, 20 to 25 minutes. If it is a large breast, butterfly it so that it will cook through, if necessary, finish in a 350 degree oven. Let rest for 15 minutes before slicing.
  • 3 PEA FRIED RICE: In a wok, coat with canola oil and add garlic and ginger. Cook until soft and add rice. Mix well then add eggs, chives and English peas. Heat thoroughly.
  • Check for seasoning Toss snow and snap peas with vinaigrette. Check for seasoning.
  • CITRUS VINAIGRETTE: Mix all ingredients well.

Silog, rice bathed in lots of garlic and crowned with a runny egg, is a hearty and essential part of any Filipino breakfast, and it comes together very quickly. For Chad and Chase Valencia, brothers and owners of the Filipino restaurant Lasa, in Los Angeles, the best time to make silog is the morning after Thanksgiving, when they top it with seared leftover turkey (or ham), and gravy to moisten the bits of rice. You're going to have to plan ahead for this recipe, as it's best made with day-old rice; freshly made rice won't get as crisp in the pan. And don't be intimidated by the amount of garlic here - it all mellows out, while still providing a potent punch. Chad notes that this dish will work in almost any nonstick pan, except for a steel or aluminum-bottomed pan; you could even use a well-seasoned cast-iron pan or wok.

1/2 cup canola or other neutral oil, plus more as needed
8 to 12 garlic cloves, to taste, peeled and ends trimmed

8 cups day-old cooked white jasmine rice
1 to 1 1/2 cups leftover gravy (omit if using ham)
1 1/2 pounds leftover turkey or ham, sliced 1/4-inch thick
4 eggs

Steps:

  • Make the garlic fried rice: Heat a large nonstick pan (preferably 10 inches) over a medium-low flame, then add 6 tablespoons of the oil and garlic cloves. Season the cloves with a pinch of salt. Cook, turning the cloves occasionally, until they are brown and soft, 12 to 14 minutes.
  • Remove half the oil and half the garlic cloves from the pan and set aside in a small heat-proof bowl. Using a rubber spatula or the back of a wooden spoon, smash the remaining garlic in the pan to an almost rough paste. Before the smashed garlic turns golden, crank up the heat, add half the rice and spread to cover the surface of the pan. It will pop and sizzle - that's good. Let sit for 30 seconds, then toss and mix the rice in the pan. Spread the rice out, then let sit again for another 30 seconds. Adjust the salt and transfer to a large plate. Lightly cover the plate with foil.
  • Wipe out the pan, add the reserved garlic cloves and their oil and repeat with remaining rice.
  • If using turkey and gravy, warm the gravy in a small saucepan over medium-low heat, stirring occasionally, until it's hot.
  • Meanwhile, reheat the turkey (or ham): Wipe out the pan, return it to medium-high heat and add 1 tablespoon of oil. When the oil starts to smoke slightly, gently lay the meat in pan and sear until golden brown on both sides, about 2 minutes per side. (You may need to do this in batches, adding oil as needed.) Transfer to a plate and season with salt to taste. Cover with foil and wipe out the pan.
  • Return the pan to medium-low heat and add 1 tablespoon of oil. Break eggs into pan and cook just until egg whites are fully set but the yolks are still runny. Season with salt to taste.
  • To serve, place a few scoops of garlic fried rice on each plate. Layer seared turkey or ham slices on top of the rice. If you're using turkey, sauce the meat with a few spoonfuls of gravy. Top each serving with a fried egg.
