2 cups uncooked instant brown rice
Water
2 eggs, beaten
1/2 lb lean (at least 90%) ground turkey
1/2 cup sliced green onions (8 medium)
2 teaspoons finely chopped garlic in water (from a jar) or 2 cloves garlic, finely chopped
2 cups frozen mixed vegetables
1/4 cup soy sauce
2 teaspoons light sesame or vegetable oil
1/4 teaspoon ground red pepper (cayenne)

Steps:

  • Cook rice in water as directed on package.
  • Meanwhile, spray wok or 12-inch nonstick skillet with cooking spray; heat over medium heat until hot. Add eggs to wok; cook 1 minute, stirring occasionally, until firm but still moist. Remove eggs from wok; place on plate. Cut egg into pieces; cover to keep warm.
  • In same wok, cook ground turkey, onions and garlic over medium heat 6 to 8 minutes, stirring frequently, until turkey is no longer pink. Add frozen vegetables; cook and stir 4 to 5 minutes longer or until vegetables are thawed.
  • In 1-cup glass measuring cup, mix soy sauce, oil and red pepper. Stir into turkey mixture. Add cooked rice and eggs to wok; cook and stir 2 to 3 minutes longer or until thoroughly heated.

1-1/2 teaspoons olive oil
1 egg, beaten
1/4 pound ground turkey
1 green onion, sliced
1-1/2 cups cold cooked rice
1/2 cup canned bean sprouts
2 tablespoons minced fresh cilantro
2 tablespoons soy sauce
1 tablespoon chunky peanut butter
1/2 teaspoon sugar
1/4 teaspoon garlic powder
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon ground ginger

Steps:

  • In a large skillet, heat oil over medium-high heat. Pour egg into skillet. As the egg sets, lift edges, letting uncooked portion flow underneath. When egg is completely cooked, remove to a plate; set aside., In the same skillet, cook turkey and onion over medium heat until meat is no longer pink. Stir in the rice, bean sprouts and cilantro. In a small bowl, whisk the remaining ingredients until blended; stir into skillet. Meanwhile, chop egg into small pieces; stir into skillet and heat through.

1 cup uncooked brown rice
2 cups cubed cooked turkey breast
3 tablespoons reduced-sodium soy sauce
1 egg, lightly beaten
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped celery
1 tablespoon canola oil
1 cup shredded romaine

Steps:

  • In a large saucepan, bring broth to a boil. Stir in rice. Reduce heat; cover and simmer for 45-50 minutes or until liquid is absorbed and rice is tender. Remove from the heat; cool. Cover and refrigerate overnight., In a small bowl, combine turkey and soy sauce; cover and refrigerate. In a large nonstick skillet, cook and stir the egg over medium heat until completely set. 1 medium onion, diced
½ cup frozen peas and carrots
2 tablespoons salted butter
3 cups cold cooked rice
2 cups diced cooked turkey
2 tablespoons soy sauce, or more to taste
1 tablespoon sesame oil, or as needed
2 large eggs

Steps:

  • Coat a large pan with cooking spray. Add onion and saute over medium heat until translucent, about 5 minutes. Add frozen vegetables and butter; cook and stir, allowing butter to melt and veggies to thaw, 3 to 5 minutes.

1/2 small onion, chopped
1/2 tablespoon sesame oil (or less)
1 egg, beaten (optional)
1/2 tablespoon sesame oil (or less)
3 1/2 tablespoons soy sauce
1/2 cup cooked stir fry vegetables (mixture of bean sprouts, carrots, peas, green beans, water chestnuts)
2 cups leftover cold cooked rice
1 tablespoon light soy sauce (or more of less to taste)

Steps:

  • 1 tbsp oil in a skillet and stir fry onion until it is golden but not burnt. Put onions to the side of the skillet.
  • Add eggs to skillet and fry until fluffy, remove eggs from skillet.
  • Add the extra oil to skillet then add veggies and rice, tossing to get everything mixed.
  • Add egg back to skillet then sprinkle the rice with soy sauce and enjoy.
  • Note you may use less oil, my family loves the taste of it so I use more than most.

1 cooked turkey leg
1 cooked turkey thigh
½ cooked turkey breast, chopped
4 cups chicken broth, or more as needed
1 yellow onion, diced
¾ cup uncooked white rice
2 teaspoons kosher salt
1 pinch freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons minced green onions
2 tablespoons minced red pepper
¼ cup cilantro leaves, minced

Steps:

  • Combine leftover turkey leg, thigh, and breast meat in a stockpot over high heat; add chicken broth and onion. Bring to a boil, reduce heat to medium-low, and cover. Simmer, flipping turkey pieces over halfway, until meat falls off the bone, about 1 hour.
  • Transfer turkey pieces to a bowl and let cool until safe to handle.
  • Meanwhile, bring broth to a boil and stir in rice. Season with black pepper, cayenne, and salt. Reduce heat to medium and let rice simmer until it starts to plump up, about 10 minutes.
