9 lbs bread cubes
1 1/3 cups turkey drippings
1 cup celery
2/3 cup onion
2 tablespoons salt
1 1/4 teaspoons pepper
1 1/4 teaspoons thyme
2 1/2 tablespoons poultry seasoning
2 quarts turkey broth
13 lbs cooked turkey
2 1/2 cups margarine
1 quart flour
1/2 cup flour
2 tablespoons salt
1 1/2 gallons turkey broth

Steps:

  • Combine bread, drippings, and seasonings; toss to mix.
  • Add broth to moisten slightly; blend thoroughly.
  • Spread 2 1/4 quarts dressing in bottom of 3 baking pans (12x20).
  • Spread 1 1/2 quarts turkey on top of dressing.
  • Add another layer of dressing and turkey.
  • Cover each pan tightly and bake at 350F degrees for 1 hour.
  • Melt margarine; stir in flour and salt.
  • Gradually stir in broth.
  • Cook until thickened.
  • Pour 2 quarts gravy over each pan.
  • Bake at 250F uncovered about 15 minutes before serving.

This is my grandmother's old-fashioned bread stuffing recipe. It may be cooked as directed, or inside the turkey. It's enough to stuff a very large bird.

30 slices white bread, lightly toasted
2 tablespoons butter
1 large onion, finely chopped
2 stalks celery, finely chopped
2 eggs, lightly beaten
2 cups chicken broth
2 teaspoons rubbed sage
1 teaspoon garlic powder
salt and pepper to taste

Steps:

  • Allow the toasted bread to sit approximately 24 hours, until hard.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • Crush the bread into crumbs with a rolling pin. Place the crumbs in a large bowl.
  • Melt the butter in a medium saucepan over medium heat. Stir in the onion and celery and slowly cook until soft. Remove from heat and drain.
  • Mix the eggs and chicken broth into the bread crumbs. The mixture should be moist, but not mushy. Use water, if necessary, to attain desired consistency. Mix in the onion, celery, rubbed sage, garlic powder, salt and pepper.
  • Press the mixture into the baking dish. Bake 1 hour in the preheated oven, or until the top is brown and crisp.

This is essentially the stuffing my polish father made when he was chef at the old Westbury hotel in Toronto with some minor changes by me over time. The only problem with it is guests love it so much they usually finish it off and you are left with leftover turkey and no stuffing. I usually make extra in a meatloaf pan for the leftovers.

1 lb ground beef
1 lb pork sausage
1 (8 ounce) package pepperidge farms paxo seasoned stuffing mix
1 large onion, chopped
1/2 green pepper, chopped
2 stalks celery, chopped
2 garlic cloves, chopped
1 cup mushroom, chopped
1/2 cup fresh parsley, chopped
1 egg
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
1/4 teaspoon sage
1/4 teaspoon thyme
1/4 teaspoon poultry seasoning

Steps:

  • Brown beef and pork sausage while mixing together,drain and set aside.
  • Saute onion, green pepper, garlic, and celery.
  • In a large bowl mix all ingredients thoroughly (get you hands in there).
  • Stuff into turkey and roast as you normally would.

2 tablespoons minced fresh parsley
1-1/2 cups cubed cooked turkey
2/3 cup condensed cream of chicken soup, undiluted
3 tablespoons water

Steps:

  • In a large bowl, combine stuffing and parsley. Transfer to a greased 8-in. square baking dish. Top with turkey. Combine soup and water; spoon over top., Bake, uncovered, at 350° for 25-30 minutes or until heated through.
