TURKEY CACCIATORE BURGERS ON PORTOBELLO "BUNS"



Turkey Cacciatore Burgers on Portobello

Number Of Ingredients 17

1 1/3 pounds ground turkey breast, the average weight of 1 package
Salt and pepper
6 crimini mushrooms (baby portobellos) stems removed and finely chopped
1/2 red bell pepper, seeded and chopped
1/2 yellow onion, finely chopped
2 cloves garlic, smashed away from skin and finely chopped
3 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon crushed red pepper flakes
1/2 cup grated Parmigiano-Reggiano or Romano, a couple of handfuls
Extra-virgin olive oil, for drizzling
Handful flat-leaf parsley, chopped
4 large portobello mushroom caps, stems removed
Coarse salt and black pepper
2 cups arugula leaves, coarsely chopped
1/2 pound fresh mozzarella or fresh smoked mozzarella, thinly sliced
Sliced red onion and sliced yellow and plum tomatoes

Steps:

  • Preheat oven to 450 degrees F. Heat a large nonstick skillet over medium-high heat.
  • Combine meat with salt and pepper, chopped crimini mushrooms, chopped bell pepper, chopped onion, garlic, tomato paste, Worcestershire, crushed red pepper flakes, cheese and parsley. Score and form meat into 4 large patties, 1 inch thick. Drizzle extra-virgin olive oil on top the patties then fry 5 or 6 minutes on each side in a hot skillet.
  • Place portobello caps on a small baking sheet gill side up and drizzle extra-virgin olive oil on them. Roast the caps 12 minutes. Remove them from the oven and season them with salt and pepper. Turn oven off. Top each cap with about 1/2 cup arugula and a burger. Cap burger with mozzarella and place back in still-warm oven. Melt the cheese 1 minute. Transfer burgers on "bun" bottoms to plates. Top with onions and tomatoes and serve.

4 applewood-smoked bacon strips, finely chopped
1 pound ground turkey
1/2 cup panko bread crumbs
2 large eggs
1/2 cup grated Parmesan cheese
4 tablespoons chopped fresh cilantro
1 teaspoon dried basil
1/2 teaspoon ground cumin
1 tablespoon soy sauce
2 large sweet potatoes
Shredded Colby-Monterey Jack cheese
Honey Dijon mustard

Steps:

  • In a large skillet, cook bacon over medium heat until crisp; drain on paper towels. Discard all but 2 tablespoons drippings. Set skillet aside. Combine bacon with next 8 ingredients until well mixed; cover and refrigerate at least 30 minutes., Preheat oven to 425°. Cut sweet potatoes into 20 slices about 1/2 in. thick. Place slices on an ungreased baking sheet; bake until sweet potatoes are tender but not mushy, 30-35 minutes. Remove slices; cool on a wire rack., Heat skillet with reserved drippings over medium-high heat. Shape turkey mixture into slider-sized patties. Cook sliders in batches, 3-4 minutes on each side, taking care not to crowd skillet. Add a pinch of shredded cheddar after flipping each slider the first time. Cook until a thermometer reads 165° and juices run clear., To serve, place each slider on a sweet potato slice; dab with honey Dijon mustard. Cover with a second sweet potato slice. Pierce with toothpick.

3 hardboiled egg, chopped
1 cup shredded cheddar cheese
1/2 cup mayonnaise
2 tablespoons sweet pickle relish
2 tablespoons chopped onions
salt & pepper

Steps:

  • Mix together first 6 ingredients.
  • Season with salt and pepper to taste.
  • Moisten with more mayo if necessary.
  • Fill rolls or buns, wrap in foil and bake at 400 for 15- 20 minutes.
  • *Orpile on French bread (split) and broil til hot and bubbly.

This is my second turkey burger recipe by Rachael Ray I have posted. Rachael sure knows how to cook ground turkey!! I have made just a couple of changes to suit our tastes. Recipe orignially has arugula chopped on finished burger (between mushrooms) Unable to find any up here...I replace it with chopped fresh spinach.

1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (6 ounces) tomato paste
1 can (6 ounces) unsweetened pineapple juice
1/4 cup water
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon pepper
6 whole wheat hamburger buns, split and toasted

Steps:

  • In a large saucepan coated with cooking spray, cook the turkey, onion and green pepper over medium heat until meat is no longer pink; drain. , Stir in the tomato paste, pineapple juice, water, mustard, garlic powder, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until sauce is thickened. Spoon 1/3 cup onto each bun.

1 whole turkey (12 to 14 pounds total), butterflied according to this slideshow, backbone, neck, and giblets reserved
1 tablespoon vegetable oil
Kosher salt
1 tablespoon five spice powder
12 whole scallions
1 large section of ginger root, cut into 2 inch segments
8 medium cloves garlic, smashed
1/4 cup Shaoxing rice wine
2 teaspoons soy sauce
1 tablespoon oyster or hoisin sauce
2 tablespoons sugar
2 tablespoons Chinkiang or other rice vinegar
1 tablespoon sesame oil
1 tablespoon roasted chili oil
1/4 teaspoon ground white pepper
1 tablespoon fermented chili bean paste, or other chili paste, optional
1/2 teaspoon toasted and ground Sichuan peppercorns, optional
To Serve:
36 frozen steamed chinese buns
3 scallions, finely sliced
2 large cucumbers, julienned
Picked cilantro leaves and tender stems
Spicy mayonnaise (2 tablespoons hot sauce, such as sriracha) with 3/4 cup mayonnaise)

Steps:

  • 1.Spatchcock turkey. 2.Adjust oven rack to middle position and preheat oven to 450°F. Line a rimmed baking sheet or broiler pan with aluminum foil. Place half of scallions, ginger, and garlic in bottom of pan. Place slotted broiler rack or wire rack directly on top of vegetables. 3. Pat turkey dry with paper towels and rub on all surfaces with 1 tablespoon oil. Season liberally on all surfaces with salt and five spice powder. Tuck wing tips behind back. Place turkey on top of rack, arranging so that it does not overlap the edges, pressing down on the breast bone to flatten the breasts slightly. Transfer turkey to oven and roast, rotating occasionally, until an instant read thermometer inserted into the deepest part of the breast registers 150°F, and the thighs register at least 165°F, about 80 minutes. 4. Meanwhile, place the neck, giblets, and turkey back in a sauté pan and add water to cover, about 1 1/2 quarts. Add remaining ginger, scallions, and garlic, and Shaoxing wine. Bring to boil, then reduce heat to low and simmer for until the broth is rich and reduced significantly, about 1 hour. You should have about 2 cups of broth. Strain through a fine mesh strainer into a medium bowl. Add soy sauce, hoisin, sugar, vinegar, sesame oil, roasted chili oil, white pepper, chili bean paste, and Sichuan peppercorn. 5. When roasted turkey is cool enough to handle, remove skin and cut into strips. Lay out all the strips of crispy skin onto a serving platter. Pick meat into large bite-sized chunks and transfer to a large bowl. Set aside carcass for another use. 6. Add sauce to turkey and toss to mix. Taste meat and adjust seasoning with more salt, soy sauce, sugar, or vinegar as desired. Transfer all the turkey meat onto a serving platter or bowl, pouring residual sauce onto the meat. Cover with foil to keep warm. 7. Reheat steamed buns according to package directions. 8. Place vegetables, garnishes, and sauces onto plates and bowls for serving.
