4 turkey bratwursts
1 (12 ounce) bottle beer, of choice
sliced vidalia onion
sliced sweet pepper
butter substitute or cooking spray
Dijon mustard
horseradish sauce
4 buns

Steps:

  • Boil Turkey Bratwurst in beer for 30 minutes.
  • Saute onions & peppers until transparent and tender.
  • Drain sausage and place on grill. Grill until you see grill marks. (doesn't take but a few minutes).
  • Serve in buns with dijon mustard and horseradish sauce.

1 (19 7/8 ounce) package bratwursts
1 large onion, halved and thinly sliced
1 (10 ounce) packaged shredded angel hair coleslaw mix
2 teaspoons caraway seeds
2 cups apple cider
1/2 cup thousand island dressing
2 tablespoons deli mustard with grated horseradish
1 tablespoon honey
vegetable oil cooking spray
hot dog buns or hoagie roll

Steps:

  • Pierce each brat with a fork, and place in a large saucepan. Top with onion and coleslaw mix; sprinkle with caraway seeds. Pour apple cider over cabbage mixture; bring to a boil. Cover, reduce heat to medium, and cook 20 minutes or until cabbage is tender. Remove brats, and set aside.
  • Drain cabbage mixture well, reserving 2 tablespoons cooking liquid. Discard remaining cooking liquid. Combine cabbage mixture, reserved cooking liquid, and Thousand Island dressing in a large bowl; toss to coat. Cover and chill.
  • Combine mustard and honey in a small bowl; set aside. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add brats to pan; cook about 6 minutes or until golden brown on all sides, turning often and basting with honey mixture. For grown up servings, place 1 brat in a bun with 1/3 cup slaw. For plain servings, server brats in bun without the slaw.

1/2 teaspoon sugar
1/2 teaspoon ground coriander
1/2 teaspoon rubbed sage
1/4 teaspoon ground nutmeg

1 tablespoon skim milk
2 lbs lean ground turkey
cooking spray

Steps:

  • Combine all ingredients except spray and mix well.
  • Divide the mixture into 8 equal portions, shaping each into a 1/2 inch thick patty.

  • Add 4 patties; cook 4 minutes on each side or until done.

⅓ cup diced red onion
⅓ cup chopped cucumber
⅓ cup diced tomatoes, drained
12 large Kalamata olives, quartered
2 teaspoons olive oil
1 teaspoon lemon juice
¾ teaspoon dried oregano
salt and freshly ground black pepper to taste
4 medium brat buns
⅓ cup crumbled feta cheese, or more to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place sausages on the rack, and grill until sausages are cooked through, 10 to 16 minutes, turning occasionally. 1 tablespoon olive oil
1 1/2 pounds hot or mild (or a combination) Italian turkey sausages (about 6 sausages)
1 1/2 tablespoons unsalted butter
1/4 teaspoon caraway seeds
1 large bulb fennel, trimmed, quartered and thinly sliced, plus 1 tablespoon fronds for garnish
1 Gala apple, cored and thinly sliced
1 pound sauerkraut, drained well
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add the sausages and cook, turning occasionally, until browned all over, 6 to 8 minutes. Add a splash of water, cover, and cook until the sausages are just cooked through, about 2 minutes. Transfer to a plate to cool. Once cooled, slice into 2-inch pieces and reserve.
  • Reduce the heat under the skillet to medium and add the butter and caraway seeds, stirring until the butter is melted. Add the fennel and apple; cook, stirring, until slightly softened, about 3 minutes. Add the sauerkraut and sausage pieces and cook, stirring, until the sauerkraut is hot, about 3 minutes more. Steps:

  • Heat gas or charcoal grill. Place bratwurst on grill over medium heat. Cover grill; cook 6 to 8 minutes, turning occasionally, until bratwurst are no longer pink in center. During last 1 to 2 minutes of cooking time, place buns, cut sides down, on grill; cook until lightly toasted.
  • Spread 1 teaspoon mustard on each bun bottom. Top each with bratwurst and 1/4 cup cabbage salad; cover with bun tops.
