TURKEY COTTAGE PIE
Turkey Cottage Pie, a dish that sums up what comfort food is all about. - Peel and chop the onion, garlic and carrot, and chop the celery stalks.
- Fry the onion until golden, then add the minced turkey and use a wooden spoon to break it into small pieces.
- Cook the turkey stirring until the meat is no longer pink and the liquid released is absorbed.
- Add the chopped garlic, carrot and celery.
- Pour the stock over, cover with a lid, and leave to cook on a medium heat until the liquid is absorbed.
- Meantime,get on with the mashed potatoes. In a large pan, add the potatoes and boil in salted water until tender.
- Drain the water, peel and mash. Add the milk, quarter of a cup of grated cheese and butter and mash well until creamy.
- Preheat the oven to 200 degrees C (390 Fahrenheit).
- Once the stock is absorbed, add the tomato purée and chopped tomatoes to the pan, season with salt, ground black pepper, and herbs, and mix well.
- Leave to simmer until the sauce is reduced.
- Transfer the filling either to a large pie dish, or 2 smaller ones.
- Top the ground turkey with the mashed potatoes and scatter the remaining grated cheese over.
- Bake in the oven for about 15-20 minutes or until golden and bubbling hot.

FRENCH ONION AND BLUE CHEESE TART
In this festive tart from Nadiya Hussain, onions are the star: in pride of place on a layer of puff pastry and crumbled blue cheese. Serve as an appetizer.

- Start by cooking the onions. They need to be cooked slowly on low heat, so it's best to begin with those.
- Melt the butter in a large nonstick frying pan-we have a load of onions to cook. When the butter has melted, pick off the thyme leaves and add, then add the garlic and onions. Mix everything together.
- Now add the pepper, salt, and sugar and mix. Cook on medium heat for 30 minutes, stirring occasionally, until you have onions that look like the kind you would only eat with a burger in a Sunday market at 6 a.m.!
- While that cooks, start on the pastry. Preheat the oven to 400°F. Line a baking sheet with some parchment paper or use the paper the pastry comes in and roll out the pastry onto the sheet.
- Using a knife, score a smaller rectangle ½ inch/1cm inside the pastry rectangle, making sure not to cut all the way through. Pierce the inner rectangle with a fork all over to allow the steam to escape when it bakes.
- Brush the edges with the egg and bake for 20 minutes, until golden all over.
- Take out and, using the back of a spoon, push down all the puffed-up pastry of the inner rectangle, creating a nice neat border.
- Take the blue cheese and crumble all over the inner rectangle of the pastry. Add the onions and scatter them all over till you have an even layer. Now bake for 15 minutes.
- Take out and let cool for 10 minutes before eating, sprinkled with the chives.
TURKEY PIE WITH POTATOES, SQUASH, CHARD AND CHEDDAR
This layered savory pie is basically a complete dinner encased in pastry, and quite an elegant way to have Thanksgiving leftovers (though it can be made any time of year). Serve it with gravy and cranberry sauce, or keep it light with a refreshing green salad.

- Heat oven to 400 degrees. Roll puff pastry into 2 rounds, one 12 inches in diameter, the other 10 inches in diameter. Line the bottom and sides of a 9-inch springform pan with the larger round. Refrigerate lined pan and remaining pastry round while preparing the filling ingredients.
- Put a skillet over medium heat and add bacon. Cook until barely crisp and add onion, stirring until softened, about 2 minutes. Combine bacon-onion mixture with cooked chard and season with salt, pepper and red pepper flakes.
- Layer the ingredients into the pastry: First make an even layer of the mashed potatoes, covering the bottom completely. Sprinkle with a handful of grated cheese. Mix turkey meat with rosemary and season with salt and pepper. Distribute in an even layer and sprinkle with a handful of cheese. Add a layer of chard-bacon mixture and cheese, followed by a final layer of squash and cheese.
- Fit the smaller round of pastry on top and crimp together with bottom pastry, leaving the crimped edge inside the rim. Brush top with beaten egg and cut 2 or 3 vent holes in the surface with a paring knife.
- Bake for 20 minutes, then turn heat to 350 degrees and continue to bake for 40 minutes more, or until an instant-read thermometer registers 160 degrees. Let rest 5 minutes, then carefully remove sides of springform pan. If sides of pie seem soft, bake for another 10 minutes with sides removed. Let rest for 15 minutes before serving. If desired, serve with gravy or a green salad.

- Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch pie dish with 1 pastry crust; set the other crust aside.
- In a bowl, mix together the turkey, cream of chicken soup, seasoned salt and pepper, Cheddar cheese, and mixed vegetables. Pour the mixture into the prepared pie dish. - Preheat the oven to 375 degrees F (190 degrees C).
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
- Mash potatoes and add 1/2 cup Cheddar cheese, milk, green onion, and butter. Stir until mixed well.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet with flour and pepper until browned and crumbly, 5 to 7 minutes. Stir in French onion soup and water.
- Warm frozen peas in a small, microwave-safe bowl in the microwave for 1 minute. Stir peas into the beef and soup mixture.
