This turkey and broccoli quiche recipe includes shredded cheese and eggs and a little curry powder.

1 (9-inch) pie shell
3/4 cup chopped broccoli
2 tablespoons finely chopped onion
1 tablespoon unsalted butter
3/4 cup chopped cooked turkey
1/2 cup shredded Gruyere or Swiss cheese
3 large eggs
1 1/4 cups half-and-half, or whole milk
1 teaspoon curry powder
1/2 teaspoon kosher salt

Steps:

  • Gather the ingredients.
  • Preheat oven to 425 F. Line unbaked crust with parchment paper or foil and fill with dried beans or pie weights.
  • Bake lined crust for about 15 minutes, or until edges are browned. Remove crust to a cooling rack and carefully remove pie weights and paper or foil. Reduce oven temperature to 375 F.
  • Meanwhile, in a large skillet over medium-low heat, melt butter. Add a few tablespoons of water along with broccoli and onion. Cook, stirring, until tender.
  • Sprinkle broccoli and onion, turkey, and cheese into partially-baked pie shell.
  • In a medium bowl, whisk eggs until slightly beaten. Whisk in half-and-half, curry powder, and salt.
  • Pour egg mixture over turkey and broccoli mixture.
  • Place quiche on a baking sheet and carefully move to oven.
  • Bake for about 35 minutes, or until a knife inserted in center comes out clean.

1 refrigerated rolled pie crust (from one 14.1-oz box)
13 strip turkey bacon
1 cup shredded Cheddar (about 4 oz)
⅔ cup milk
10 large eggs
5 ounce frozen broccoli florets
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400ºF. Unroll the pie crust and fit it into a 9-inch deep-dish pie plate.
  • Arrange 7 strips of the bacon one above the other in a square on a baking sheet; the edges should touch but not overlap. Working with one of the remaining strips at a time, weave them over and under to form a lattice.
  • Whisk the Cheddar, milk, eggs, broccoli, 1 teaspoon salt and a few grinds of pepper in a medium bowl until well combined. Pour into the pie crust. Bake the bacon lattice and quiche on separate racks until the bacon is just starting to crisp up and the quiche is slightly set but still jiggly in the center, about 15 minutes.
  • Use 2 spatulas to transfer the bacon lattice to the top of the quiche. Continue baking until the bacon is golden brown and crisp and the quiche is set, 15 to 20 minutes more. Let stand for 10 minutes before serving.

6 slices turkey bacon
3 (8 inch) whole wheat tortillas
3 eggs, whole
8 egg whites
1/2 cup skim milk
1/2 cup low-fat sour cream
3/4 cup shredded low-fat cheddar cheese
1 cup broccoli floret

Steps:

  • Preheat oven to 350°F.
  • Cook turkey bacon according to package, let cool.
  • Coat a 9-inch pie pan with cooking spray. Overlap 2 of the tortillas in the bottom of the pan. Cut the third in half and cover the rest of the pan to form the crust.
  • In large bowl, mix eggs, milk, and sour cream. Beat well. Salt and pepper to taste.
  • Chop turkey bacon into small pieces.
  • Combine turkey bacon, cheese, and broccoli into egg mixture. Pour mixture into pie pan and bake for 45 - 50 minutes.
  • Allow to cool for 10 minutes before serving.
