ROAST TURKEY WITH WILD RICE, SAUSAGE, AND APPLE STUFFING

1 cup wild rice
3 cups water
1 1/2 teaspoons kosher salt
2 tablespoons unsalted butter
1 medium onion, chopped
1 cooking apple, such as a Golden Delicious, Gravenstein, or Rome, peeled, cored, and chopped
2 ribs celery with leaves, chopped
2 cloves garlic, chopped
1 tablespoon minced fresh thyme leaves
Pinch ground mace or nutmeg
Freshly ground black pepper
1/2 pound fresh Italian-style turkey sausage, casings removed
1/2 cup pecan pieces, toasted (see Cook's Note)
1/4 cup chopped fresh flat-leaf parsley
1 (8 to 10 pound) turkey, fresh or thawed
4 tablespoons unsalted butter (1/2 stick)
2 teaspoons poultry seasoning
Kosher salt and freshly ground black pepper

Steps:

  • For the stuffing: Combine the wild rice, water, and 1/2 teaspoon of the salt in a medium saucepan and bring to a boil. Reduce heat to low, cover, and simmer until the rice is tender and just bursting, about 30 minutes. (Times may very depending on the brand of rice used.) Drain and set aside.
  • Adjust an oven rack to lowest position and remove other racks. Preheat to 325 degrees F.
  • Melt the butter in a large skillet over medium-high heat. Add the onion, apple, celery, garlic, thyme, mace, remaining 1 teaspoon salt and pepper, to taste. Cook until the vegetables soften, about 5 minutes. Stir in sausage, breaking it up with a wooden spoon and cook until it loses most of its rosy color, but not so much that it's dry, about 5 minutes more. Stir in the cooked wild rice, pecans, and parsley into the vegetable mixture. (This can be made the day before.)
  • For the turkey: Remove turkey parts from neck and breast cavities and reserve for other uses, if desired. Dry bird well with paper towels, inside and out. Melt the butter together with the poultry seasoning. Salt and pepper inside the bird cavity. Loosely add the stuffing to the cavity and set the bird on a rack in a roasting pan, breast-side up, and brush generously with the seasoned butter, then season with salt and pepper. Tent the top of the bird with foil.
  • Roast the turkey for about 2 hours undisturbed. Remove and discard the foil. Baste with the remaining butter. Increase oven temperature to 425 degrees F and continue to roast until an instant-read thermometer registers 165 degrees F when inserted into the thickest part of the thigh, about 20 to 25 minutes more. Remove turkey from oven and tent with foil for 15 minutes before carving.

9 cups day-old cubed whole wheat bread
3 cups finely chopped apples

1/2 teaspoon rubbed sage

1 turkey (14 to 16 pounds)

Steps:

  • In a Dutch oven, saute celery and onion in butter until tender. Remove from the heat; stir in the bread cubes, apples, raisins, salt, thyme, sage and pepper. , Just before baking, loosely stuff turkey with 4 cups stuffing. Place remaining stuffing in a greased 2-qt. baking dish; refrigerate until ready to bake. Skewer turkey openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Brush with melted butter. , Bake, uncovered, at 325° for 3-3/4 to 4 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting occasionally with pan drippings. (Cover loosely with foil if turkey browns too quickly.), Bake additional stuffing, covered, for 20-30 minutes. Uncover; bake 10 minutes longer or until browned. 1/2 cup sour cream
2 tablespoons butter
3 strips par cooked bacon, crisped in microwave and chopped (recommended: Ready Crisp)

1 cup store bought apple sauce
1 (14 ounce) can whole berry cranberry sauce
2 slices whole grain bread
Butter
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 pound maple sausage, bulk or removed from large link casing
1 medium onion, chopped
2 celery ribs, chopped
2 teaspoons poultry seasoning
Salt and pepper
1 cup chicken stock or turkey broth
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken stock or turkey broth
1 teaspoon poultry seasoning
Salt
A few grinds black pepper
1 1/2 to 2 pounds turkey breast meat: roasted turkey breast or thick-cut deli turkey
4 slices whole grain bread
2 tablespoons chopped flat-leaf parsley or chopped chives, for garnish

Steps:

  • Preheat a medium skillet over medium high heat.
  • Place potatoes in a medium pot. Cut larger potatoes in half. Leave smaller baby potatoes whole. Cover potatoes with water and top with a lid. Place over high heat. When the water boils, salt water and cook potatoes with the lid off pot for 10 to 11 minutes, until tender.
  • Place a second low pot on the stove top over medium-high heat. Add apple sauce and canned cranberry sauce. Stir to combine and gently heat through, about 10 minutes.
  • Toast 2 slices whole grain bread and butter heavily, 1/2 tablespoon per slice. Chop into small cubes and reserve.
  • Add extra-virgin olive oil and sausage meat to hot skillet. Brown and crumble the sausage with a wooden spoon or heat safe spatula. Add onions and celery to the skillet then season with poultry seasoning and salt and pepper and cook 5 minutes. Add bread to the skillet and stir to combine. Dampen the stuffing with chicken stock and turn to combine. Turn off heat and cover pan loosely with foil to hold heat.
  • Preheat a second skillet over medium heat to prepare turkey and gravy.
  • Drain cooked potatoes and return to hot pot. Smash with sour cream, butter and crisped, chopped bacon. Season the smashed potatoes with salt and pepper. If they are too thick, thin them out with milk or a splash of broth.
  • Add 2 tablespoons butter to preheated skillet and melt it. Whisk in flour and cook 1 minute. Whisk in 2 cups stock or broth. Add the poultry seasoning, a pinch of salt and a few grinds of black pepper to the gravy. Allow it to thicken slightly.
  • Cut roasted turkey meat away from the breast bones of rotisserie turkey breast. If you are using deli turkey, remove from packaging and separate slices. Set turkey into gravy.
  • Place a bread slice on dinner plate. Use a large ice cream scoop to place a mound of stuffing on the bread. Place turkey on top of stuffing. Serve smashed potatoes and cranberries on the side. Spoon the extra gravy over potatoes and turkey sandwiches. Sprinkle the plates with chopped parsley or chives and serve.

I found this recipe in an old Homemaker's magazine. I made it for a Thanksgiving dinner a few years ago, and now whenever it's my turn to cook a holiday meal, I have to make this! It's easy and delicious. I prefer making the stuffing as a side dish, rather than stuffing the turkey, so the turkey cooks quicker and it makes less of a mess.

1 lb ground sausage meat
3 stalks celery, chopped
1 tablespoon sage
1 teaspoon thyme
1 teaspoon marjoram
10 cups cubed bread (stale works best)
2 onions, sliced
2 apples, peeled, cored, cut into small cubes
1 1/4 cups chicken stock
1/2 cup fresh parsley, chopped
salt and pepper

Steps:

  • Cook sausage until no longer pink, about 10 min, stir often.
  • Drain most of the fat (leave about a tablespoon).
  • Add onions and celery, cook another 3 minute.
  • Stir in apples, sage, thyme, and marjoram, cook another 5 minutes.
  • Add 1 cup of chicken stock, and bring to a boil.
  • Remove from heat, stir in bread, parsley, salt and pepper.
  • Spoon into a lightly greased casserole dish.
  • (This recipe can be made ahead to this point, it will keep in the fridge for 2 days or in the freezer for 2 weeks. If frozen, thaw in fridge before baking).
  • Bake, covered, in 325°F oven for about 40 minutes. Halfway through cooking time, drizzle with the remaining chicken stock.
  • Remove the lid and bake 10 more minutes, until the stuffing has a crusty top and is heated through.

¼ cup butter
⅓ cup raisins
1 (6 ounce) package low sodium stuffing mix (such as Stove Top® Lower Sodium Chicken Flavor)
1 tablespoon poultry seasoning
1 apple - peeled, cored, and chopped
1 (6 pound) whole bone-in turkey breast with skin
salt and pepper to taste
1 tablespoon poultry seasoning

Steps:

  • Place the water, butter, and raisins into a saucepan; bring to a boil. Remove from the heat, stir in the stuffing mix, cover, and let stand until the stuffing mixture absorbs the liquid, about 5 minutes. Stir 1 tablespoon of poultry seasoning and the apple lightly into the stuffing. Allow the stuffing mixture to cool.
  • Preheat oven to 350 degrees F (175 degrees C). Place a rack into a roasting pan.
  • Carefully remove the turkey breast skin in one piece without tearing the skin, and set aside. Bone the turkey breast (see notes) keeping the meat in one piece but removing the strip of cartilage and gristle between the two breast halves, if necessary. Pull the two tenderloin sections outward from the main part of the breast, keeping them attached, to expand the boneless piece of turkey into a roughly square-shaped piece of meat. Sprinkle the inside of the breast with salt, pepper, and 1 tablespoon of poultry seasoning.
  • Spread the stuffing mixture all over the inside of the breast meat piece, and firmly roll the stuffed breast into a compact roll. Spread the reserved turkey skin out, and place the stuffed roll in the middle of the skin. Pull and roll the skin over the stuffed meat, and tie the stuffed roll together with cooking twine. Place the roll onto the roasting rack with the seam side down.
  • Roast the stuffed breast in the preheated oven until the skin is golden brown, the meat is no longer pink inside, and the temperature of the roll, measured at the thickest part, reads 170 degrees F (75 degrees C), 1 1/2 to 2 hours. Allow the roast to stand covered with a tent of aluminum foil for at least 10 minutes before removing the twine for slicing.

DRIED CRANBERRY AND APPLE TURKEY STUFFING

A recipe of my girlfriends, made at her house for a Christmas dinner a few years back...an excellent recipe for a stuffing, that is prepared to cook inside the turkey. Note cooking time depends on how long the turkey is cooked, I imagine that you could bake this outside the turkey also too. This recipe can be doubled if desired.

1 large onion, chopped
1 -2 tablespoon fresh minced garlic (optional)
4 -5 cups diced bread
2 granny smith apples, peeled, cored and chopped
1/2 cup white wine
1/2 cup chicken stock (more if needed)
1 cup chopped toasted pecans
2 ounces fresh sage, chopped fine
2 ounces fresh thyme, chopped fine (or 1-2 tsp dried, or to taste)
1 cup chopped fresh parsley, to taste (1 cup measured after chopping)
1/2 cup dried cranberries (can use more)
1 eggs or 1 egg white
salt and pepper

Steps:

  • In a frypan, melt butter, saute onion and garlic until soft (not brown), about 5 minutes.
  • Add in the bread cubes and herbs, stirring to combine.
  • Stir in apples, wine, stock, pecans, cranberries and parsley (if the mixture seems too dry add in just a bit more stock, not too much!).
  • Cool to almost room temperature.
  • Add in egg or egg whites.
  • Season well with salt and lots of pepper.
  • Stuff into the turkey.

1 teaspoon dried sage
1 teaspoon dried oregano
1 (8 to 10-pound) turkey, cut into 5 parts (breast, legs, wings), giblets removed and discarded, back bone removed from the turkey breast (this will help it stand upright)*
2 tablespoons olive oil, plus 2 tablespoons olive oil
Salt and freshly ground black pepper1 medium chopped onion
2 apples, peeled, cored and diced (preferably McIntosh)
2 celery stalks, chopped
1 teaspoon chopped fresh parsley leaves
1 teaspoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
4 cups sourdough bread cubes, preferable day-old
1 cup reduced-sodium chicken broth, warm
1 teaspoon dried thyme

Steps:

  • Preheat the oven to 450 degrees F.
  • In a small bowl combine all the dried herbs together. Rub the turkey parts with 2 tablespoons of olive oil, then rub with all of the dried herbs. Season with salt and pepper, to taste. Arrange the turkey in 1 layer in a large roasting pan.
  • Put the turkey in the oven and immediately reduce the oven temperature to 350 degrees F. Roast until an instant-read thermometer inserted into the deepest part of the thigh reads 160 to 165 degrees F, about 1 1/2 hours. Remove from the oven and let stand, covered with aluminum foil. It's ready to serve in 10 to 15 minutes, but can stand, covered, for up to 1 hour so that the stuffing or other side dishes can be completed. Transfer to a serving platter.
  • Meanwhile heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, apples, and celery and saute until soft, about 5 minutes. Add the parsley, sage, and thyme and stir to coat the apples and vegetables with the herbs. Transfer the mixture to a large bowl and add the cubed bread and the warm chicken broth. Toss to combine and season, to taste, with salt and black pepper. Transfer the stuffing mixture to a 5 by 8-inch baking dish and bake in the oven at 350 degrees F until golden brown on top, about 45 minutes.

2 sun-dried tomatoes
1 tablespoon dried mushroom, any variety
1 teaspoon peppercorn
6 slices bacon
1 onion, chopped
1 cup chopped celery
2 cloves garlic, minced
1 tablespoon lemon juice
8 slices stale bread, cubed
1 apple, peeled cored and chopped
2/3 cup fresh parsley, chopped
1 egg, beaten

Steps:

  • Preheat oven to 325.
  • Place onion, apple and half lemon in turkey cavity- reserve other half of lemon-put some of it in neck cavity if desired Place turkey breast side down on oiled rack in roasting pan.
  • Sprinkle with salt and pepper.
  • Roast uncovered for 2 hours, basting with pan juices occasionally.
  • Wearing clean oven mitts or my preference disposable latex gloves, turn turkey breast side up Squeeze remaining lemon half over turkey breast and cover with bacon.
  • Roast basting occasionally about another 2 hours or until done with meat thermometer Giblet stock.
  • While turkey roasts place all ingredients in medium saucepan.
  • Bring to boil over medium heat.
  • Reduce heat and simmer for 1 hour partly covered.
  • Strain and add liquid to gravy.
  • Apple Stuffing.
  • Cook bacon in skillet, until crisp and set aside.
  • Add onion, celery and garlic to skillet and cook until soft-set aside.
  • In large bowl, combine, bacon, onion, celery, garlic and lemon juice.
  • Add bread cubes, apple, egg, parsley and spices.
  • Spoon into greased baking dish.
  • Cover with foil and cook in oven along with turkey for 30 minutes.
  • Stir, add some juices from turkey and cook uncovered until golden brown.

CHERRY-GLAZED TURKEY WITH DRIED CHERRY-APPLE STUFFING

2 tablespoons chopped fresh sage leaves
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup butter or margarine
1 large onion, finely chopped (1 cup)
1 package (16 oz) herb-seasoned stuffing mix
2 medium red apples, chopped (2 cups)
1 1/2 cups dried cherries
1 cup chopped pecans
2 1/2 cups Progresso™ chicken broth (from 32-oz container)
1/2 cup cherry preserves or jam
1/4 cup ruby port or chicken broth

Steps:

  • Heat oven to 325°F. Grease 13x9-inch (3-quart) glass baking dish with shortening or cooking spray; set aside. Remove and discard neck and giblets from turkey. Rinse turkey inside and out with cold water; pat dry with paper towels. In small bowl, mix sage, salt and pepper; rub into turkey skin.
  • In 8-inch skillet, melt butter over medium heat. Add onion; cook 4 to 6 minutes, stirring occasionally, until tender. In large bowl, thoroughly mix cooked onion and remaining stuffing ingredients.
  • Turn turkey breast side down. Fill neck cavity lightly with 1 cup of the stuffing (do not pack stuffing because it will expand during roasting). Fasten neck skin of turkey to back with skewer.
  • Turn turkey breast side up. Fold wings across back of turkey so tips are touching. Fill body cavity lightly with 3 cups of the stuffing (do not pack stuffing because it will expand during roasting). Place remaining stuffing in baking dish. Cover with foil; refrigerate until ready to bake. Tuck legs under band of skin at tail (if present), or tie together with heavy string.
  • On rack in shallow roasting pan, place turkey, breast side up. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • Cover turkey loosely with foil or roaster cover; roast 3 hours. Meanwhile, in small bowl, mix glaze ingredients; set aside.
  • Uncover turkey and place foil-covered baking dish with stuffing in oven. Roast 45 minutes to 1 hour 30 minutes longer, brushing turkey with glaze frequently, until thermometer reads 165°F and drumsticks move easily when lifted or twisted. 6 c. stale bread cubes
1/3 c. chopped onion
3/4 tsp. poultry seasoning
3/4 c. Ocean Spray Fresh or frozen cranberries, chopped
3/4 c. raisins
1/2 c. chopped walnuts
1 c. peeled apples, coarsely chopped
1/3 c. chopped celery
1 1/2 tsp. salt
1/2 tsp. pepper
1/2 c. butter, melted
3/4 c. apple cider**
** can substitue cider for water
In large bowl combine all of the above ingredients, mix well. Use to stuff turkey.

Steps:

  • I mixed the bread and spices and the liquid and then added celery, onion, raisins, apple and cranberries. I also used water instead of cider. It made enough to feed 11, but didn't leave leftovers. Next time I would make two helpings, one for the oven and one for in the turkey.

Giblet stock
3 cups canned low salt chicken broth
6 Tbl flour
Chopped turkey neck meat, hearts and gizzard reserved from giblet stock
1 tbl minced fresh thyme

Steps:

  • FOR TURKEY: Preheat oven to 375. Rinse turkey inside out and pat dry with paper towels. Stuff main cavity and neck cavity loosely with stuffing, close cavities with skewers. Place turkey on rack in large roasting pan. Tie legs together to hold shape. Mix butter and herbs in bowl. Rub all over turkey. Sprinkle with salt and pepper. Pour 2 cups broth into roasting pan. Roast turkey 1 1/2 hours, basting occasionally with pan juices. Reduce heat to 350. Add 2 cups broth to pan. Tent turkey with foil. Continue roasting until thermometer inserted into innermost part of thigh registers 180, basting turkey with pan juices every 30 minutes, about 3 1/2 hours. Transfer turkey to platter. Tent with foil while preparing gravy. FOR GRAVY: Using wooden spoon, scrape any browned bits in roasting pan to loosen. Pour pan juices with bits into large mesuring cup. Spoon off fat from pan juices, reserving 6 tablespoons fat. Mix giblet stock into pan juices; add enough chicken broth to measure 6 cups. Heat reserved 6 tablespoons fat i heavy large saucepan over medium heat. Add flour; stir 2 minutes. Gradually whisk in pan juice mixture. Bring to a boil. Mix in chopped neck meat, heart, gizzard and thyme. Boil until slightly thickened, about 8 minutes. Season with salt and pepper. Transfer to sauceboat. Serve with turkey with gravy.

Kosher salt
2 sticks unsalted butter, softened
2 tablespoons finely chopped sage
1 small shallot, minced

3 celery ribs, sliced 1/4 inch thick
2 medium carrots, sliced 1/4 inch thick
1 small onion, thinly sliced
2 cups turkey or chicken stock or low-sodium broth, for roasting
STUFFING
1 pound country bread, crusts removed, bread cut into 1-inch cubes (12 cups)
2 tablespoons extra-virgin olive oil
3 celery ribs, finely chopped
1 medium onion, finely chopped
3 Fuji apples-peeled, cored, quartered and thinly sliced crosswise
Reserved turkey giblets, finely chopped
1/4 cup finely chopped parsley
2 tablespoons finely chopped sage
1 tablespoon chopped thyme
2 teaspoons finely chopped rosemary
2 cups peeled roasted chestnuts, crumbled (14 ounces)

  • Rinse the turkey inside and out under cold water and pat it thoroughly dry with paper towels. Season the cavity with 1 tablespoon of kosher salt and season the outside with 3 tablespoons of kosher salt. Cover and refrigerate the turkey overnight. Remove the turkey from the refrigerator and pat dry with paper towels. In a bowl, blend the butter, sage and shallot and season with salt and pepper. Starting at the cavity end of the bird, slip your hand between the skin and meat, loosening the skin over the breast and around the legs. Spread the shallot-sage butter under the skin, covering as much of the breasts and legs as possible. Scatter the celery, carrots, onion and turkey neck in a large roasting pan and set the turkey on top; let stand at room temperature for 1 hour. MEANWHILE, MAKE THE STUFFING Preheat the oven to 375°. 2 links apple maple chicken sausage, casings removed
1 small onion, diced
2 cloves garlic, minced

  • Heat 1 tablespoon olive oil in a nonstick skillet over medium-high heat. Cook and stir sausage in hot oil, breaking it up with a wooden spoon, until browned and crumbly, 5 to 10 minutes. Transfer cooked sausage to a large bowl and return skillet to heat.

2 teaspoons chili powder

4 cups herb-seasoned stuffing mix (from 14- to 16-oz package)

Steps:

  • Heat oven to 325°F. Starting at back opening of turkey, gently separate skin from turkey breast, using fingers. In small bowl, stir together honey, 2 tablespoons melted butter, the chili powder, allspice and cumin; brush half of mixture over turkey breast under skin (reserve remaining honey mixture).
  • In 4-quart Dutch oven, melt 1/4 cup butter over medium-high heat. Cook pecans in butter 1 to 2 minutes, stirring occasionally, until lightly toasted. Lightly stir in apple, stuffing mix and apple juice until moistened.
  • Stuff turkey just before baking. Fill wishbone area with stuffing first. Fasten neck skin to back with skewer. Fold wings across back with tips touching. Fill body cavity lightly with remaining stuffing. (Do not pack--stuffing will expand while cooking.) Tuck drumsticks under band of skin at tail, or tie together with heavy string, then tie to tail. Place turkey, breast side up, on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of inside thigh muscle and does not touch bone. Do not add water.
  • Cover with foil and bake 3 to 4 hours, uncovering and brushing with remaining honey mixture for last 30 minutes of baking, until thermometer reads 180°F and juice is no longer pink when center of thigh is cut. Drumsticks should move easily when lifted or twisted.

1 medium onion, quartered
1 large celery rib, cut into thirds
3/4 cup dry white wine
6 cups canned low-sodium chicken broth or water
2 canned plum tomatoes, halved and seeded
3 parsley sprigs
2 thyme sprigs
1 bay leaf
1/4 cup plus
1/3 cup all-purpose flour
2 tablespoons port or Madeira (optional)
Sausage Apple Stuffing (recipe follows)
4 1/2 tablespoons unsalted butter
6 celery ribs, finely chopped
3 medium onions, finely chopped
1 1/2 pounds sweet Italian sausage, removed from the casings and crumbled
6 cups cubed (1 inch) day-old Italian bread (about 1 large loaf)
36 pitted prunes, coarsely chopped (about 10 ounces)
3 medium Golden Delicious or Granny Smith apples--peeled, cored and coarsely chopped
1/3 cup finely chopped flat-leaf parsley
1/4 cup finely chopped sage
11/2 teaspoons salt
3/4 teaspoon freshly ground pepper
3/4 teaspoon freshly grated nutmeg
4 large eggs, lightly beaten
1 1/2 cups reserved turkey stock

  • Make sure the turkey is at room temperature when it goes into the oven; otherwise it will take longer to roast Preheat the oven to 475 degrees. Rinse the turkey inside and out and pat dry. Season the cavity with salt and pepper and set the bird on a rack in a roasting pan large enough to let air circulate all around. Rub the softened butter over the breast and legs and season with salt and pepper. Roast the turkey in the top third of the oven for about 30 minutes, or until beginning to brown. Reduce the oven temperature to 375 degrees, cover the turkey loosely with foil and continue roasting, basting often, for about 1 1/2 hours, or until an instant-read thermometer inserted into the thickest part of the thigh registers 175 degrees. Transfer the turkey to a serving platter, cover again with foil, and let stand for at least 20 minutes before carving.
  • Meanwhile, cut the turkey neck and gizzard in half. Heat the vegetable oil in a medium saucepan and add the neck, gizzard, heart and wing tips. Cook over moderately high heat, stirring occasionally, until browned and crisp, about 7 minutes. Stir in the onion and celery and cook until golden. Add the wine and boil until reduced by half, about 7 minutes. Add the chicken broth and bring to a boil. Stir in the tomatoes, parsley, thyme and bay leaf and cook over very low heat until reduced to 3 1/2 cups, about 1 hour. Strain the turkey stock into a bowl; reserve 1 1/2 cups for the stuffing.
  • 3. In a small bowl, mix the water with the flour until smooth. Remove the rack from the roasting pan and spoon off the fat. Set the pan over 2 burners on high heat. Add the remaining 2 cups of turkey stock and bring to a boil, scraping up any browned bits from the bottom of the roasting pan. Whisk in the flour paste and cook until the gravy thickens, then add the port. Strain the gravy into a sauceboat. Carve the turkey and serve with the gravy and Sausage Apple Stuffing.
  • Preheat the oven to 425 degrees and generously butter 2 medium baking dishes that are at least 2 inches deep. Melt the butter in a large skillet. Add the celery and onions and cook over moderate heat until softened, about 5 minutes. Add the sausage and cook, stirring, just until it loses its pink color, about 7 minutes.
  • In a large bowl, toss the bread cubes with the prunes, apples, parsley and sage. Add the sausage mixture and season with the salt, pepper and nutmeg. Add the eggs and reserved turkey stock and mix well. Divide the stuffing between the prepared baking dishes. Cover with foil and bake for 20 minutes. Remove the foil and bake for about 10 minutes longer, or until heated through and browned on top. Let cool slightly before serving.

  • Rinse the turkey inside and out and pat dry with paper towels. Season all over with salt and pepper. Place the turkey, breast-side up, on a rack in a large roasting pan. Refrigerate. 1 mcintosh apple, peeled and chopped
1/4 cup dried breadcrumbs
