1 cup cooked white rice
1 cup cooked wild rice
2 cups cooked turkey breast
2 cups shredded lowfat mozzarella cheese
1 (12 ounce) can fat-free evaporated milk
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
2 eggs, slightly beaten
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped

Steps:

  • Heat oven to 350 degrees.
  • Spray 11X7 inch baking dish with cooking spray.
  • In baking dish, mix white and wild rice; spread evenly over bottom.
  • In a large bowl, mix turkey, cheese, milk, eggs, bell peppers and black pepper.
  • Spoon over rice.
  • Bake 45 to 55 minutes or until knife inserted in center comes out clean and top is lightly browned.
  • Sprnkle with parsley.

4 slices bacon, cut into 1/2-inch pieces
1 lb turkey breast tenderloins, cut into 1/2- to 1-inch pieces
2 medium carrots, coarsely chopped (1 cup)
1 medium onion, coarsely chopped (1/2 cup)
1 medium stalk celery, sliced (1/2 cup)
1 cup uncooked wild rice
1 can (10 3/4 oz) condensed cream of chicken soup
2 1/2 cups water
2 tablespoons reduced-sodium soy sauce
1/4 to 1/2 teaspoon dried marjoram leaves
1/8 teaspoon pepper

Steps:

  • In 12-inch skillet, cook bacon over medium heat, stirring occasionally, until almost crisp. Stir in turkey, carrots, onion and celery. Cook about 2 minutes, stirring frequently, until turkey is brown.
  • Spoon turkey mixture into 3- to 4-quart slow cooker. Stir in remaining ingredients.
  • Cover; cook on Low heat setting 5 to 6 hours.

2 1/4 cups boiling water
1/3 cup milk
1 small onion, chopped (1/4 cup)

1 package (6 ounces) seasoned long grain and wild rice

Steps:

  • Heat oven to 350°F. Mix all ingredients, including seasoning packet from rice mix, in ungreased 2-quart casserole.
  • Cover and bake 45 to 50 minutes or until rice is tender. Uncover and bake 10 to 15 minutes longer or until liquid is absorbed.

1 3/4 cups Progresso™ chicken broth (from 32-ounce carton)
1/8 teaspoon dried marjoram leaves
1/8 teaspoon pepper
1/2 cup uncooked wild rice, rinsed and drained
1/2 cup sour cream

Steps:

  • In 8-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Stir in turkey. Cook 3 to 5 minutes, stirring occasionally, until turkey is brown. Stir in celery, carrot and onion. Cook 2 minutes, stirring occasionally; drain.
  • In 2 1/2- to 3 1/2-quart slow cooker, mix turkey mixture and remaining ingredients except sour cream.
  • Cover and cook on high heat setting 30 minutes.

Add fresh dill to this shredded-turkey quiche with a homemade crust.

1 3/4 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
1/2 teaspoon fine salt
12 tablespoons (1 1/2 sticks) chilled unsalted butter, diced and kept very cold
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more if needed
1/2 cup chopped scallions
1/2 cup shredded roasted turkey
1 cup shredded Cheddar
1 1/4 cups heavy cream
3 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh dill

Steps:

  • Pulse together the flour, sugar and salt in a food processor fitted with a metal blade. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers, it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly and take care not to overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
  • Lightly flour a work surface, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • Sprinkle the scallions evenly into the crust. Combine the turkey with the Cheddar and sprinkle it in an even layer over the scallions.
  • Whisk together the heavy cream, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Stir in the dill.
  • Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

3/4 cup uncooked wild rice
1 container (10 oz) refrigerated reduced-fat Alfredo pasta sauce
1 cup fat-free sour cream
1/2 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1/4 cup grated Parmesan cheese
1/4 teaspoon dried thyme leaves or poultry seasoning
1/4 teaspoon pepper
4 cups cut-up cooked turkey
2 2/3 cups frozen mixed vegetables, thawed
1/2 cup Progresso™ plain bread crumbs
2 teaspoons olive oil

Steps:

  • In 3-quart saucepan, heat water, brown rice and wild rice to boiling . Reduce heat; cover and simmer 40 to 50 minutes or until rices are tender. If necessary, drain.
  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In very large bowl, mix pasta sauce, sour cream, broth, Parmesan cheese, thyme and pepper until well mixed. Stir in rice mixture, turkey and vegetables. Spoon into baking dish.

Wild rice is very abundant in our state, so that's why I think this dish is appropriate for a regional recipe contest. This is an excellent brunch item that I usually serve with fresh muffins and fruit. When you add a steaming cup of Norwegian egg coffee, you have a super Minnesota meal.

1 unbaked pastry shell (9 inches)
1/3 cup chopped Canadian bacon or fully cooked ham
1 small onion, finely chopped
1 tablespoon butter
1 cup shredded Monterey Jack cheese
1 cup cooked wild rice
3 large eggs
1-1/2 cups half-and-half cream
1/2 teaspoon salt
Snipped parsley, optional

Steps:

  • Bake crust at 425° for 5 minutes. Remove from the oven and set aside. Reduce heat to 325°. , In a skillet, saute Canadian bacon or ham and onion in butter until onion is tender. Spoon into the crust. Sprinkle with cheese and wild rice. , In a small bowl, beat eggs, cream and salt. Pour over all. 2 celery ribs, finely chopped

2 cups cooked wild rice
2 cups cubed cooked turkey
2 cups half-and-half cream
1 teaspoon dried parsley flakes
1/2 teaspoon salt

Steps:

  • In a Dutch oven, heat butter over medium-high heat. Add carrots, celery and onion; cook and stir until tender., Stir in flour until blended; cook until bubbly. Gradually stir in broth. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened., Stir in remaining ingredients; return to a boil. With lots of left-over turkey and wild rice on hand, I looked for a recipe that would use both. This was adapted from several recipes but lightened up a bit.

1 pkg pie crust shell, prepared as directed
1½ cups co c cooked wild rice
1 c chopped turkey
1/2 c onion, chopped
1 Tbsp butter
1/4 c fresh parsley (or 2 tb dried)
4 c fresh spinach or ½ package frozen chopped spinach, thawed and squeezed dry
1/2 tsp salt - or to taste
1/4 tsp ground pepper
1/2 c shredded cheese of your choice
4 eggs, lightly beaten
1 c evaporated milk (i use 2%)

Steps:

  • 1. Preheat the oven to 425 degrees.
  • 2. If using fresh spinach, quickly saute in hot pan until wilted.
  • 3. Sauté onion in butter. Combine with wild rice, turkey, parsley, spinach, salt, pepper and cheese. Add eggs and evaporated milk. Mix well.
  • 4. Pour the filling into the prepared pie crust. Bake for 10 minutes.
  • 5. Reduce heat to 325 degrees and continue baking for 30 minutes, until knife inserted near the center comes out clean. Cover with foil if it's browning too much on top. Let stand 15 minutes before slicing. Serve with a dollop of sour cream, if desired.
