2 red bell pepper
2 cups baby carrots
1 yellow bell pepper
candy eye balls
1 crown broccoli
2 cups baby carrots
2 cucumbers
1 cup snap peas
dip

Steps:

  • Make the face by cutting the bottom off of a red pepper. Make the beak by using a baby carrot, a piece of yellow pepper for the snoods and candy eye balls!
  • To make the body, gather and prep your veggies. We like to wash and cut to sizes that are easy for grabbing.
  • Layer the sliced cucumbers first in a half circle around the platter. Then layer the carrots, yellow and red peppers, and broccoli pieces in smaller half circles. End with the snap peas at the bottom.
  • Then add the bowl of your favorite dip. Place the turkey face made out of a pepper in the dip bowl.

2 tablespoons mayonnaise
4 slices sourdough bread
1/4 cup canned chopped green chiles
1/4 pound thinly sliced deli turkey
1/4 cup shredded Colby-Monterey Jack cheese
1 tablespoon butter, softened

Steps:

  • Spread mayonnaise over two slices of bread. Layer with green chiles, turkey and cheese. Top with remaining bread. Spread outsides of sandwiches with butter., In a large skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 1-2 minutes on each side.

1 pound white mushrooms, cleaned and sliced 1/4 inch lengthwise
Salt and freshly ground pepper
Olive oil, for drizzling
6 ripe plum tomatoes, sliced 1/4-inch lengthwise
2 Vidalia onions, 1 1/2 to 2 pounds, halved and sliced into 1/2-inch rings
2 red or yellow bell peppers, halved lengthwise, seeds removed
3 tablespoons fresh flat-leaf parsley leaves, cleaned and chopped
1 loaf of bread, about 12 by 5 inches, such as ciabatta or baguette
1/4 cup whole-grain mustard
1 pound roasted turkey and/or baked ham, thinly sliced
8 ounces good-quality Swiss cheese, sliced

Steps:

  • Heat broiler. Put mushrooms in a single layer on a baking pan, season with salt and pepper, and drizzle lightly with olive oil. Place pan under broiler until mushrooms brown around edges, 2 to 4 minutes. Transfer mushrooms to a large bowl; set aside. Using same pan, repeat process with tomatoes until they are soft, 3 to 4 minutes. Repeat with onions, until they are tender, 6 to 8 minutes. Repeat with peppers, until skins start to blister, 6 to 8 minutes. When peppers are cool enough to handle, remove skin and stems; cut into 1-by-2-inch pieces. Combine all vegetables in a bowl, and toss with parsley. Season with salt and pepper, and set aside.
  • Halve bread lengthwise. Spread mustard on both sides; layer with roasted vegetables. Arrange turkey and/or ham over vegetables; top with cheese. Place on baking pan; transfer to broiler until warmed through and cheese is melted, about 2 minutes. Serve.

2 medium celery stalks, sliced (1 cup)
1 medium onion, chopped (1/2 cup)
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh sage leaves or 1 teaspoon dried sage leaves
1 1/2 teaspoons chopped fresh marjoram leaves or 1/2 teaspoon dried marjoram leaves
3/4 teaspoon chopped fresh tarragon leaves or 1/4 teaspoon dried tarragon leaves
1/2 teaspoon salt
7 cups soft bread cubes
2 medium carrots, shredded (1 1/2 cups)
1 medium zucchini, shredded (1 cup)
1 cup chopped fresh mushroom (4 ounces)
1 whole turkey, 12 pounds, thawed if frozen

Steps:

  • Heat oven to 325°F. Melt butter in 10-inch nonstick skillet over medium heat. Cook celery and onion in butter, stirring frequently, until onion is tender. Stir in parsley, sage, marjoram, tarragon and salt. Mix bread cubes, carrots, zucchini and mushrooms in large bowl. Add celery mixture; toss.
  • Fill wishbone area of turkey with stuffing first. Fasten neck skin to back with skewer. Fold wings across back with tips touching. Fill body cavity lightly with stuffing. (Place any remaining stuffing in small ungreased baking dish; cover and refrigerate. Place in oven with turkey the last 30 minutes of roasting.) Tuck drumsticks under band of skin at tail, or tie together with heavy string, then tie to tail.
  • Place turkey, breast side up, on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • Roast uncovered 3 1/2 to 4 1/2 hours or until thermometer reads 165°F and drumsticks move easily when lifted or twisted. Thermometer inserted in center of stuffing should read 165°F.When two-thirds done, cut band of skin or string holding legs. Place a tent of aluminum foil loosely over turkey when it begins to turn golden brown. Let turkey stand 20 minutes before carving. Cover and refrigerate any remaining turkey and stuffing separately.

  • Heat broiler. Cook vegetables as directed on box; pour into medium bowl. Stir in mustard.

3 tablespoons vegetable oil
1 large onion, thinly sliced
1/2 teaspoon kosher salt
Freshly ground black pepper
4 (4-ounce) turkey patties
8 slices multi-grain bread
8 slices Monterey Jack or American cheese
2 to 3 tablespoons unsalted butter, softened
Serving suggestion: Cranberry Sauce

Steps:

  • Heat 1 tablespoon of the oil in a large cast iron skillet over medium heat. Add the onion, season with some salt and pepper, and cook until golden, about 7 minutes. Put in a bowl and set aside. Wipe out the skillet and add another tablespoon of oil. Season the turkey patties with salt and pepper, and cook in the remaining oil until well browned, about 3 minutes per side. Remove from the skillet. Wipe out the pan.
  • Divide the onions among 4 bread slices, and top with a slice of cheese, a patty, another slice of cheese, and a slice of bread. Spread the top and bottom of the sandwiches with some butter. Heat the cast iron skillet over medium heat. Cook the sandwiches, in batches if needed, turning once, until lightly browned and the cheese melts, about 2 minutes per side. Halve the sandwiches and serve with cranberry sauce, if desired.

2 burrito-size flour tortillas
4 thin turkey slices
1/2-1 cup shredded cheddar cheese
1 green pepper, sliced
1 small onion, diced
1 garlic clove, minced
1 tablespoon olive oil
1 small tomatoes, diced
black pepper, fresh-grated
1 tablespoon melted butter

Steps:

  • Preheat oven to 400.
  • Saute green pepper, onion and garlic in Tbsp of olive oil in small skillet until the vegetables are tender.
  • Spray a sheet pan with nonstick cooking spray.
  • Lay two tortillas flat on sheet pan.
  • Close to an edge, layer two slices of turkey, half of the shredded cheddar, green pepper/onion/garlic and diced tomato.
  • Grind some fresh black pepper over ingredients.
  • Roll up tortilla towards center, bring in sides and continue to fold in a envelope-like fashion. Make sure seem-side is down.
  • Using knife, cut two slits in tops for steam to escape.
  • Brush with melted butter.
  • Bake for 15-20 min or until the outside is golden in color.
  • Let rest for 5 min before cutting.
  • I like to serve mine with a little cup of ranch dressing (or your choice), for dunking.

2 tablespoons vegetable oil
1 1/2 lbs ground turkey
1/4 cup sour cream
4 scallions, chopped (both white and green parts)
salt & fresh ground pepper
2 tablespoons butter
8 slices muenster cheese
8 slices pumpernickel bread

Steps:

  • Place a large skillet over medium-high heat with 2 turns of the pan of vegetable oil, about 2 tablespoons.
  • In a large mixing bowl, combine the ground turkey with the sour cream, scallions, salt and ground black pepper.
  • Using your hand, score the meat into four, then form four thin patties about half an inch thick out of each portion, adding them to the hot pan as you shape them. Cook until golden brown and cooked through, about 6 minutes per side. When finished cooking, remove the patties from the pan and wipe the pan clean with a paper towel.
  • While the patties are cooking up, place 4 slices of bread on a clean work surface and butter one side of each piece. Return the pan that the patties were cooked in over medium heat and add in the remaining butter. Once melted, place the remaining unbuttered slices of bread in the pan, place one piece of cheese on each slice, a turkey patty, one more slice of cheese and cap each off with the four slices of buttered bread, butter side up.
  • Cook sandwiches in the pan until toasted and the cheese has melted, about 2 minutes per side.
