CHEF JOHN'S TURKEY NOODLE CASSEROLE

This delicious casserole is for leftover leftovers. I don't know about you, but after a few days of eating Thanksgiving leftovers, no matter how tasty they originally were, I want something that makes me forget there's even turkey in it. Since ingredients like garam masala, spicy cheese, and peppers aren't typically used in the meal, they work wonderfully here to disguise the last of a holiday bird.

12 ounces egg noodles
3 tablespoons butter
3 tablespoons flour
3 ½ cups cold milk
1 (10 ounce) can condensed cream of mushroom soup
½ cup diced red bell pepper
½ cup diced green bell pepper
¼ cup chopped green onions
1 teaspoon garam masala
1 teaspoon dried tarragon
1 cup shredded pepperjack cheese
1 teaspoon salt, or to taste
3 cups cubed skinless cooked turkey
5 ounces crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in boiling water, stirring occasionally until almost cooked through and still firm to the bite, about 4 minutes. Drain.
  • Melt butter in a large saucepan over medium heat. Whisk in flour; cook, stirring, until mixture is light golden, about 3 minutes.
  • Pour milk into butter and flour mixture, whisking constantly. Stir in cream of mushroom soup, red bell pepper, green bell pepper, green onions, garam masala, and dried tarragon. Bring mixture to a simmer, cook for 2 minutes. Remove from heat.
  • Stir in pepperjack cheese until cheese is melted and incorporated.
  • Stir pepperjack cheese mixture, turkey meat, and noodles in a large bowl until evenly incorporated. Pour mixture into a large casserole dish. Sprinkle chips on top, pressing down slightly with the tines of a fork. Bake in the preheated oven until casserole top is golden brown and sauce is bubbling, about 30 minutes.

1 (12 ounce) package egg noodles
1 (10 ounce) package frozen peas, thawed
2 cups diced cooked turkey
2 tablespoons salted butter
1 (8 ounce) package sliced mushrooms
½ medium onion, chopped
2 cloves garlic, chopped
1 (10.5 ounce) can condensed cream of mushroom soup
1 ¼ cups leftover turkey gravy
½ cup milk
½ teaspoon curry powder
½ teaspoon poultry seasoning
salt to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 2 1/2-quart baking dish.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • At the same time, melt butter in a saucepan over medium heat. Add mushrooms, onion, and garlic; saute until tender, 5 to 7 minutes. Add condensed soup, leftover gravy, milk, curry powder, poultry seasoning, and salt; cook and stir until well blended and hot, about 5 minutes.
  • Combine cooked egg noodles, turkey, and peas in the prepared baking dish. Pour hot soup mixture over top and sprinkle with Cheddar cheese.
  • Bake in the preheated oven until hot and bubbly, 25 to 30 minutes.

Number Of Ingredients 14

6 ounces fine egg noodles
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons flour
2 cups fresh turkey broth or canned chicken broth
1/2 cup heavy cream
1/4 teaspoon red hot pepper flakes
1/2 teaspoon freshly grated nutmeg
Salt and freshly ground white pepper to taste
3 tablespoons finely chopped shallots
1 cup crushed canned tomatoes
3 cups cooked, skinless, boneless turkey cut into bite-size cubes
1 egg, lightly beaten
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Cook the noodles according to package instructions. Do not overcook. Drain and return to the pot. Add 1 tablespoon olive oil and toss well.
  • Meanwhile, melt the butter in a saucepan and add the flour, stirring with a wire whisk. Blend well. Add the broth, stirring rapidly with the whisk. When the sauce is thickened and smooth, simmer for 5 minutes. Add the cream, pepper flakes, nutmeg, salt and pepper. Blend well with the whisk and simmer briefly. Set aside.
  • Heat the remaining 1 tablespoon olive oil in a saucepan. Add the shallots and cook briefly, stirring. Add the tomatoes, stir and simmer for 5 minutes. Add the turkey meat and 1 cup of the cream sauce. Stir and blend gently. Taste and adjust the seasonings. Set aside.
  • To the remaining cream sauce add the beaten egg. Bring to a boil, stirring rapidly with the whisk for 30 seconds. Do not overcook. Remove from the heat.
  • Add the noodles to a baking pan measuring 11 by 8 by 2 inches. Smooth them over and spoon the turkey mixture over the noodles. Cover with the cream and egg mixture. Smooth over and sprinkle with the cheese.
  • Preheat the broiler to high and place the dish under the broiler and cook until nicely browned and bubbling on top. Serve immediately.
