Turkey Bacon and Broccoli Quiche image

A turkey bacon lattice topper adds an impressive element to this classic quiche combination. Using a prepared crust makes it super easy to pull together.

1 refrigerated rolled pie crust (from one 14.1-ounce box)
11 strips turkey bacon
1 cup shredded Cheddar (about 4 ounces)
2/3 cup milk
10 large eggs
5 ounces frozen broccoli florets
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Unroll the pie crust and fit it into a 9-inch deep-dish pie plate.
  • Arrange 6 strips of the bacon one above the other in a square on a baking sheet; the edges should touch but not overlap. Working with one of the remaining strips at a time, weave them over and under to form a lattice.
  • Whisk the Cheddar, milk, eggs, broccoli, 1 teaspoon salt and a few grinds of pepper in a medium bowl until well combined. Pour into the pie crust. Bake the bacon lattice and quiche on separate baking sheets until the bacon is just starting to crisp up and the quiche is slightly set but still jiggly in the center, about 15 minutes.
  • Use 2 spatulas to transfer the bacon lattice to the top of the quiche. Continue baking until the bacon is golden brown and crisp and the quiche is set, 15 to 20 minutes more. Let stand for 10 minutes before serving.

One 9-inch frozen pie shell
1 cup crumbled leftover stuffing
1 cup chopped leftover turkey
1 cup shredded sharp Cheddar
1/4 cup parsley leaves, roughly chopped
Kosher salt and freshly ground black pepper
1 1/4 cups half-and-half
3 large eggs
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground black pepper

Steps:

  • Par-bake the crust according to package directions. Let cool slightly before adding the filling.
  • Sprinkle the stuffing and turkey in the par-baked shell. Top with the Cheddar and parsley. Season with a little salt and pepper.
  • Whisk together the half and half, eggs, nutmeg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl.
  • Pour the custard over the filling. Adjust the oven temperature to 350 degrees F and bake until set, 35 to 45 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

1 cup all-purpose baking mix
¼ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup milk
3 slices bacon, chopped
1 small onion, chopped
2 cups shredded Cheddar cheese
4 eggs
1 teaspoon salt
¼ teaspoon hot pepper sauce
1 (12 fluid ounce) can evaporated milk, heated

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch pie pan.
  • In a medium bowl, mix together the baking mix, 1/4 teaspoon salt, and pepper. Gradually mix in the milk until moistened. Knead a few times on a floured board. Roll dough out to a 12 inch circle, and press into the greased pie pan. Fold edges, and flute.
  • Place bacon and onion in a large, deep skillet over medium-high heat, and cook until bacon is evenly brown. Drain, and crumble bacon. Sprinkle bacon, onion, and Cheddar cheese into the pie pan.
  • In a medium bowl, beat eggs with 1 teaspoon salt and hot pepper sauce, then slowly stir in hot evaporated milk. Pour into the pie shell.
  • Bake 5 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C). Continue baking 25 minutes, or until center is almost set. Do not over bake - the quiche will set as it cools.

2 tablespoons finely chopped onion
1 tablespoon unsalted butter
3/4 cup chopped cooked turkey
1/2 cup shredded Gruyere or Swiss cheese

1 1/4 cups half-and-half, or whole milk
1 teaspoon curry powder
1/2 teaspoon kosher salt

Steps:

  • Gather the ingredients.
  • Preheat oven to 425 F. Line unbaked crust with parchment paper or foil and fill with dried beans or pie weights.
  • Bake lined crust for about 15 minutes, or until edges are browned. Remove crust to a cooling rack and carefully remove pie weights and paper or foil. Reduce oven temperature to 375 F.
