Easy Pasta with Tuna and Tomato Sauce image

This is my version of a tuna pasta dish with capers, anchovies, and tomatoes. I make it at least once a week as it is my husband's favorite and he proclaims it's restaurant quality. You can easy double the recipe if you're cooking for more people.

½ (16 ounce) box penne
1 (5 ounce) can tuna, packed in olive oil, drained
¼ cup olive oil, divided
¼ cup finely chopped fresh basil
½ large organic lemon, juiced and zested
salt and ground black pepper to taste
1 ounce canned anchovy fillets, drained
2 teaspoons capers
1 clove garlic, thinly sliced
1 (14.5 ounce) can diced tomatoes
½ bunch fresh parsley, finely chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Empty tuna into a bowl and mash with a fork while pasta is cooking. Mix with 2 tablespoons olive oil, basil, lemon juice, lemon zest, salt, and pepper.
  • Heat the remaining 2 tablespoons olive oil in a large skillet and fry the anchovies for 3 minutes. Add capers and garlic; cook, stirring constantly, for an additional 3 minutes. Add tuna mixture and tomatoes; simmer sauce for about 5 minutes.
  • Drain pasta and add to the sauce. Mix well. Stir in parsley before serving.

2 tbsp olive oil
1 onion, chopped
2 garlic cloves, finely chopped
400g can chopped tomatoes with herbs
½ tsp chilli powder
1 tsp sugar
500g pkt pasta bows
100g can tuna, drained
handful of basil leaves, optional

Steps:

  • Heat the oil in a pan, throw in the onion and cook for a couple of minutes. Stir in the garlic, tomatoes, chilli and sugar. Season with salt and pepper and bring to the boil. Give it a good stir, then reduce the heat and simmer for 5 minutes.
  • Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions. Flake the tuna into the sauce and heat through. Drain the pasta, return to the pan and stir in the sauce and basil leaves if you have any. Serve with a generous grinding of pepper.

2 tbsp olive oil
1 red onion , finely chopped
500g cherry tomatoes , halved
400g dried pasta (we used rigatoni)
1l hot vegetable stock
2 x 110g cans tuna in olive oil, drained
3 tbsp mascarpone
30g parmesan , grated
2 heaped tbsp capers
½ lemon , zested
small bunch parsley , finely chopped

Steps:

  • Heat the oil in a saucepan over a medium-low heat. Add the onion and a pinch of salt and fry gently for 7 mins or until softened and turning translucent. Add 350g of the tomatoes, the pasta and veg stock to the pan and bring to the boil, then reduce to a simmer and cook for 15 mins, uncovered, stirring occasionally. The tomatoes should have broken down and the pasta will be just cooked.
  • Add the remaining tomatoes and bubble uncovered on a medium-high heat for 5 mins or until the liquid has reduced. Gently fold through large flakes of tuna, the mascarpone, parmesan, capers, lemon zest and parsley as well as salt and a generous grind of black pepper. Place a lid on the pan and leave to sit for 5 mins before serving in deep bowls.

  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for about 30 seconds, until fragrant.

  • Add the tuna, salt, and pepper, and mix until thoroughly combined.

2 -3 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, chopped
1 cup canned tomato with juice
1/4 teaspoon dried oregano
salt & freshly ground black pepper
1 (6 1/2 ounce) can tuna, drained, flaked
2 tablespoons sliced green olives, with some juice
1 tablespoon capers, with some juice
8 ounces spaghetti or 8 ounces other pastas
grated parmesan cheese

Steps:

  • Heat oil in a medium heavy saucepan and cook onion and garlic just until tender.
  • Add tomatoes, oregano, salt and pepper to taste and simmer over low hear for about ten minutes, or until blended and hot.
  • Add the tuna, olives and capers, if desired, simmer a little longer to thicken sauce.
  • Meanwhile, cook spaghetti in a large pot of boiling, salted water until al dente or just until tender.
  • Drain and combine with hot tuna-tomato sauce and serve with sprinkled cheese.

1 tablespoon extra-virgin olive oil, plus more for drizzling
1 small onion, finely chopped
2 garlic cloves, minced
Pinch of crushed red pepper flakes, plus more for garnish
3 cans tuna, well drained
2 cans crushed tomatoes, with juice
Coarse salt and freshly ground black pepper
1 tablespoon chopped fresh oregano, thyme, or rosemary
1 pound penne or fusilli pasta

Steps:

  • Bring a large pot of water to a boil over high heat.
  • Heat a medium saucepan and add the olive oil, swirling to coat the pan. Saute the onion and garlic until the onion is translucent, about 5 minutes. Stir in the red pepper flakes. Add the tuna and stir, being careful not to break up the chunks too much.
  • Stir in the tomatoes, season with salt and black pepper, bring to a boil, and reduce the heat to a simmer. Cook for 20 to 30 minutes. Add the chopped herbs a few minutes before serving.
  • While the sauce is simmering, cook the pasta, drain, and toss with the sauce. Top with a drizzle of olive oil and an extra sprinkle of red pepper flakes.

Steps:

  • Melt 1 tablespoon butter with 1 tablespoon oil in heavy large skillet over medium-high heat. Add both bell peppers, jalapeño and minced garlic; sauté until peppers are almost tender, about 5 minutes. Add tomatoes, clam juice, 1/3 cup cilantro, wine, water, lemon juice and dried red pepper. Bring to boil. Reduce heat; simmer until flavors blend, about 5 minutes. Season with salt and pepper.
  • Mix flour and garlic powder in shallow bowl. Season tuna with salt and pepper. Coat with flour mixture, shaking off excess. Melt remaining 1 tablespoon butter with 1 tablespoon oil in another heavy large skillet over high heat. Add tuna to skillet and sauté until just opaque on the outside, about 2 minutes per side. Bring sauce to simmer over medium heat. Add tuna; cook until opaque in center, about 2 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta. Divide among 4 plates. Place tuna atop pasta. Spoon sauce over. Sprinkle with Parmesan and cilantro and serve.

2 cups tomato sauce
¾ cup grated Parmesan cheese, divided

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil over high heat. Stir in the pasta and boil until cooked through, but still firm to the bite, about 12 minutes. Drain well.
  • Heat the olive oil in a large skillet. Toast bread crumbs in oil, about 2 minutes. Season with salt and pepper; stir in lemon zest. Remove seasoned bread crumbs from skillet and drain on paper towels.
  • Place the skillet back over medium heat. Add the beans, and mash. Stir in the tuna, tomato sauce, and 1/4 cup of the Parmesan cheese. Reduce heat to a simmer and cook for 10 to 15 minutes.

500g dried rigatoni (or any other short pasta)
2 x 400g cans chopped tomatoes
4 thyme sprigs, leaves only
300ml double cream
280g jar sundried tomatoes, drained and quartered
198g can no-added-salt sweetcorn, drained
3 x 120g cans tuna in spring water, drained
100g cheddar, grated
50g parmesan, grated

Steps:

  • Heat the grill to its highest setting and put a large saucepan of salted water on to boil. Tip in the pasta and cook for 1 min less than the pack suggests.
  • Meanwhile, make the sauce by simmering the tomatoes in a pan with a little seasoning and the thyme for about 5 mins. Pour in the cream, stir and simmer for another 4-5 mins.
  • Drain the pasta, reserving a little of the cooking water, and tip back into the saucepan. Pour over the creamy tomato sauce, the sundried tomatoes, sweetcorn and tuna. Layer into a baking dish (ours was 22 x 29cm), scattering over the grated cheddar between layers. Sprinkle the Parmesan on top and put under the grill for 5 mins until bubbling and golden.

I actually found this at the foot of the page, under the Cooking Channel site. The recipe is courtesy of chef David Rocco. The cream in the sauce seems to mellow the tuna and tomatoes -- it's my favorite pasta sauce with tuna. Really delicious and pretty with butterfly pasta.

1 garlic clove
8 sun-dried tomatoes, large chopped (I used bottled, drained)
12 black olives, pitted (about 1/4 cup)
7 ounces canned tuna, drained
2 cups marinara sauce
1/2 cup cream
2 tablespoons flat leaf parsley, chopped fine
12 ounces pasta, such as penne or 12 ounces farfalle pasta, cooked al dente

Steps:

  • Note: I make my marinara with a bit of olive oil, garlic, canned tomato puree, a bit of Tobasco, basil, salt and pepper. It went great with this recipe.
  • Heat the oil in a frying pan. Add the garlic, sun-dried tomatoes and black olives. Cook a bit. Pour in the marinara sauce and cook for a few minutes. Add the tuna to the sauce. Cook for another minute. Add the cream and cook on high heat until the sauce is hot but not boiling. Add the pasta and finish cooking directly in the sauce. Sprinkle the dish with the parsley. Serve immediately. Buon appetito!

6 ⅔ ounces tuna packed in olive oil
3 cloves garlic, crushed
1 teaspoon anchovy paste
1 pinch dried oregano
1 pinch red pepper flakes, or more as needed
3 cups cream of tomato soup, not from concentrate
½ cup water
14 ½ ounces dry penne pasta
⅔ cup finely grated Parmigiano-Reggiano cheese
1 tablespoon minced fresh tarragon
salt and freshly ground black pepper to taste
1 pinch red pepper flakes, for garnish
¼ cup finely grated Parmigiano-Reggiano cheese

Steps:

  • Combine tuna and olive oil, garlic, anchovy paste, oregano, and red pepper flakes in a large saucepan over medium-low heat. Stir and cook for 1 minute once oil begins to sizzle.
  • Stir in cream of tomato soup and water. Increase heat to medium and simmer for about 10 minutes.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in penne, and return to a boil. Cook pasta uncovered, stirring occasionally, until just slightly undercooked, about 11 minutes; drain.
  • Stir cooked pasta into soup mixture; stir in 2/3 cup Parmigiano-Reggiano cheese, and tarragon. Cover and cook for 2 minutes.
  • Season with salt and black pepper to taste. Cover and cook for an additional minute.
  • Garnish with additional Parmigiano-Reggiano cheese and red pepper flakes.

500g pasta
120g can tuna in olive oil
1 large onion , chopped
500ml milk
4 tbsp flour
150g extra mature cheddar , grated
½ tsp mustard powder
325g can sweetcorn , drained
2 tomatoes , halved and sliced

Steps:

  • Put the pasta in a large pan of boiling water and cook following pack instructions. Meanwhile, put the oil from the can of tuna in a saucepan with the onion and fry for 5 mins. Pour the milk on top of the onions and whisk in the flour. Keep cooking, whisking all the time, until the sauce thickens. Off the heat, stir in the tuna, 100g of the cheese and the mustard powder.
  • When the pasta is cooked, drain it and tip into the sauce along with the sweetcorn. Season, then pile into a large ovenproof dish.
  • Heat the grill to high. Tuck the tomato slices in and around the pasta so they stick out, then scatter the remaining cheese over the top. Grill for 5-10 mins until golden, crispy and bubbling.

4 tablespoons extra virgin olive oil
2 -3 large garlic cloves, minced
1 pinch hot red chili pepper flakes
3 tablespoons finely minced fresh flat-leaf parsley
2 cups canned tomatoes with juice, very finely chopped
1 teaspoon fennel seed (crushed in a mortar or spice grinder)
1 (6 -7 ounce) can imported tuna in olive oil, well drained and very finely minced
1/3 cup pitted and quartered green olives (not with pimentos)
salt
3/4 lb spaghetti or 3/4 lb perciatelli

Steps:

  • Bring a large pot of salted water to a boil over high heat. Heat 3 Tbs. of the olive oil in a 12-inch skillet over moderate heat. Add the garlic, chile flakes, and 2 Tbs. of the parsley and sauté briefly to release the fragrance of the seasonings. Add the tomatoes and fennel seed. Bring to a simmer, adjust the heat to maintain the simmer, and cook, stirring occasionally, until the sauce is thick and well blended, about 10 minute.
  • Stir in the minced tuna and then the olives. Season with salt and remove from the heat while you cook the pasta.
  • Cook the pasta in rapidly boiling water. When the pasta is a few minutes away from being finished, return the tomato sauce to moderate heat and add enough of the hot pasta water -- about 2/3 cup -- to thin the sauce to a nice consistency. Keep the sauce warm over low heat.
  • When the pasta is about 1 minute shy of al dente, scoop out and set aside 1/2 cup of the pasta cooking water and then drain the pasta. Return the pasta to the hot pot and stir in the sauce. Cook together over moderately low heat for about 1 min., stirring and adding some of the reserved pasta water if needed to thin the sauce. Take the skillet off the heat and stir in the remaining 1 Tbs. olive oil. Serve the pasta immediately in warm bowls, garnishing each portion with a little of the remaining parsley.

  • Heat oil and gently fry the onion and garlic until softened. Add the tomotoes, salt and pepper and cook over medium-high heat for 15 minutes, stirring occasionally. Puree with a blender and return to the sauce pan. Add the drained and flaked tuna and capers and simmer for 10 minutes. Serve over pasta with parsley.

1 lb red ripe tomato, cut into a small dice
salt
12 ounces bite sized pasta such as penne
2 (5 ounce) cans tuna packed in oil, not drained
3 garlic cloves, minced
1 teaspoon dried oregano
1/2 cup capers, drained
4 ounces about 1 cup feta, plus extra for passing
1/4 cup chopped fresh parsley

Steps:

  • Place tomatoes in a medium bowl and sprinkle lightly with salt.
  • Bring 2 quarts of water with a generous sprinkling of salt to a boil in a large soup kettle. Use back of the box instructions for cooking, drain and return to pot.
  • Add tuna, garlic, oregano, capers, feta and parsley, to the tomatoes and toss to coat.
  • Add tomato mixture to pasta and toss to coat.
  • Serve with additional feta cheese.

This is a pasta salad I created as I have an intolerance to preservatives and cannot use jars of pasta sauce etc. My family enjoys it - hope you do too!

250 g penne pasta, cooked via packet directions (I use San Remo Wholewheat)
1 diced onion
2 large crushed garlic cloves
1 small zucchini, peeled & grated
1 stalk chopped celery
250 g diced bacon, fat removed
1 cup stock (I use veggie)
1 (400 g) can diced tomatoes
1 tablespoon tomato paste
1 (425 g) can tuna in brine, drained
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh thyme

Steps:

  • Cook pasta to packet directions.
  • Sauté onion, garlic, celery, and zucchini.
  • Grill bacon and dice.
  • Add to onion mixture.
  • Add tin of tomatoes and tomato paste.
  • Add tuna.
  • Add enough stock to make consistency to your liking.
  • Add herbs (and another clove of fresh garlic if you like it like that!).
  • Mix in pasta or pour over prepared pasta.
  • Serve with fresh breadstick and or nice side salad!
