4 large Anjou pears, cored, peeled and chopped
1 cup chopped celery
2 scallions, chopped (white and green)
1 1/3 cups chopped walnuts
1 1/2 tablespoons lemon juice
1/2 teaspoon sugar
18 ounces solid white tuna packed in water, drained and flaked
1/4-1/3 cup light mayonnaise
4 cups mixed baby greens or 4 cups other mixed greens

Steps:

  • Combine first 5 ingredients in a bowl. Stir in tuna and mayonnaise and toss to mix.
  • Serve on a bed of greens.

Broiled tuna steak topped with fruit salsa. You couldn't do better at a five-star restaurant!

1 large unpeeled pear, chopped (1 1/2 cups)
1 medium hot or mild yellow chile, chopped (2 tablespoons)
2 medium green onions, chopped (2 tablespoons)
2 tablespoons chopped fresh cilantro
2 teaspoons grated lemon peel
2 tablespoons lemon juice
1/2 teaspoon salt
6 small yellowfin tuna, swordfish or halibut fillets (1 1/2 lb)

Steps:

  • In small glass or plastic bowl, mix all salsa ingredients. Cover; refrigerate at least 1 hour to blend flavors but no longer than 24 hours.
  • Set oven control to broil. Spray broiler pan rack with cooking spray. Place fish on rack in broiler pan. Broil with tops about 4 inches from heat about 5 minutes or until fish flakes easily with fork. Serve tuna topped with salsa.

1 tablespoon Dijon mustard
2 tablespoons maple syrup (see Tip)
Juice of 1 lime
1/4 cup olive oil
Four 6-ounce tuna fillets
Salt and freshly ground black pepper
4 cilantro sprigs
Pear-Potato Salad
Avoid imitation maple-flavored syrups, which are typically made without any real maple syrup.

Steps:

  • 1. Whisk together the mustard, maple syrup, lime juice, and 1 tablespoon of the olive oil. Set aside.
  • 2. Season the tuna on both sides with salt and pepper. Heat the remaining 3 tablespoons olive oil in a large cast-iron skillet over high heat. Add the tuna and cook for 30 seconds on each side.
  • 3. Remove from the pan and brush both sides of the tuna with the maple-mustard glaze. Transfer to a serving platter and garnish with the cilantro. Serve with the pear-potato salad.

3 tablespoons plus 1/2 cup olive oil, divided
3 tablespoons chopped shallots, divided
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 pound tuna steaks (1 inch thick)
1/4 cup cider vinegar
1 tablespoon Dijon mustard
1-1/2 teaspoons sugar
1 package (5 ounces) spring mix salad greens
1 cup cut fresh thin asparagus (1-inch pieces)
1 cup grape tomatoes, halved
2 tablespoons minced chives

Steps:

  • In a large resealable plastic bag, combine 3 tablespoons oil, 1 tablespoon shallots, 1/4 teaspoon salt and 1/8 teaspoon pepper. Add tuna steaks. Seal and turn to coat; marinate for 10 minutes. , Meanwhile, for dressing, combine the vinegar, mustard, sugar, and remaining shallots, salt and pepper in a small bowl; slowly whisk in remaining oil. Set aside. , Drain and discard marinade. In a large nonstick skillet, cook tuna over medium heat for 3-5 minutes on each side for medium-rare or until slightly pink in the center. , On individual salad plates, arrange the greens, asparagus and tomatoes. 1/2 barlett pear peeled cored and diced
1/3 cup(s) olive oil
3 tablespoon(s) pear nectar
1 tablespoon(s) apple cider vinegar
1 teaspoon(s) lemon juice
1 teaspoon(s) whole grain mustard
salt and pepper
FOR THE SALAD
2 large tuna steaks
2 tablespoon(s) olive oil
salt and pepper
1 head butter lettuce chopped
1/2 barlette pear peeled cored and sliced
1/4 cup(s) cooked shelled edamame
1 cup(s) bok choy chopped
2 hard boiled eggs sliced
1 avocado peeled and pitted and diced
2 ounce(s) goat cheese crumbled
1/4 cup(s) pitashio nuts shelled

Steps:

  • For the dressing Place all ingredients in food processor and process until smooth
  • For the salad On 2 plates place the lettuce, pear, edamame, bok choy, eggs, avocado, pitashios and crumbled goat cheese.
  • Add olive oil to skillet. Season the Tuna steaks with salt and pepper. When the oil starts smoking sear the tuna on all side. Remove to a cutting board and cut into strips.
  • Place the tuna on top of the salad and pour dressing over.
