Do you like tuna but need a new way to serve it? Foll Pat Kordas' lead. "I created this light salad as a way to use tuna in dishes other than sandwiches," the Nutley, New Jersey cook explains. "Mustard and dill enhance the flavor."

Number Of Ingredients 10

1 package (7 ounces) small pasta shells
1 can (6 ounces) light water-packed tuna, drained and flaked
1/4 cup finely chopped onion
1 large carrot, shredded
3/4 cup reduced-fat mayonnaise
1/4 cup fat-free milk
1 tablespoon lemon juice
2 teaspoons prepared mustard
1 teaspoon dill weed
1/8 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. In a salad bowl, combine the pasta, tuna, onion and carrot. In a small bowl, combine the remaining ingredients. Pour over salad and toss to coat. Cover and chill until serving.

Wonderfully delicious! Excellent lunch or "lite" dinner. Serve with toasted pita. My husbad adores this dish.

12 jumbo pasta shells, fresh cooked
2 cans tuna in water, drained
1 avocado, diced
3 tablespoons canola oil
3 tablespoons lemon juice
2 tablespoons chives, chopped fine
1 tablespoon Dijon mustard
1/2 cantaloupe, cut into 4 wedges
1 cup baby greens
bottled balsamic vinaigrette

Steps:

  • In medium bowl, combine avocado, tuna, oil, lemon juice, chives and mustard.
  • Mix well.
  • Spoon mixture into shells.
  • Place 1/4 c of baby greens on 4 plates.
  • Top with cantaloupe wedge.
  • Arrange 3 stuffed shells per plate, around cantaloupe wedge.
  • Drizzle with balsamic vinaigrette.

11/2 c uncooked, shell macaroni - prepared according to pkg directions - drain
1/3 c each - red onion, diced - sweet relish
1 Tbsp minced, radish - optional
1/2 c chopped, celery
1 c mayonnaise
1 Tbsp mustard
1/2 tsp salt
1/4 tsp pepper and dill weed
1 small can, albacore tuna, drained
1 hard boiled egg, diced - optional

Steps:

  • 1. Prepare pasta, drain and mix with all remaining ingredients in a medium sized bowl.
  • 2. Refrigerate to chill and serve on lettuce or alone.
  • 3. Delish!
