3 ounces dried multi-grain high-protein penne pasta
1 tablespoon olive oil
¾ cup thinly sliced leeks (white parts only)
2 cloves garlic, minced
4 cups fresh baby spinach
1 2.6-ounce pouch albacore tuna in water, broken into large chunks
3 tablespoons reduced-calorie Italian salad dressing
2 tablespoons dried tomatoes (not oil-packed), snipped
Cracked black pepper

Steps:

  • In a large saucepan cook pasta according to package directions; drain. Return to saucepan.
  • Meanwhile, in a 10-inch skillet heat oil over medium-low. Add leeks and garlic; cook 5 to 7 minutes or until tender, stirring occasionally. Turn off heat. Add spinach; stir until slightly wilted.
  • Stir spinach mixture into pasta. Stir in tuna, Italian dressing and dried tomatoes. If desired, sprinkle with cracked black pepper.

8 ounces spaghetti (or other pasta)
2 tablespoons olive oil
3 garlic cloves minced
2 pouches 2.6 ounces tuna in olive oil
1 tablespoon lemon juice (plus zest)
Salt & pepper to taste
2 tablespoons capers
2 tablespoons fresh parsley chopped (divided)
Grated parmesan (for serving)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta cooking water, then drain the pasta. Return to the pot to keep warm.
  • In the wide pan, heat the olive oil at medium heat. Then add the garlic and cook until fragrant, about 30 seconds. Stir in the tuna, lemon juice and zest, salt and pepper, and heat through for 1 minute.
  • Add the pasta, capers and 1 tablespoon chopped parsley, and continue to stir until the spaghetti is well coated. Add as much of the reserved pasta water as needed to thin out the sauce.
  • Garnish with remaining parsley and serve warm.

350g penne
1 tbsp olive oil
5 tbsp caper , drained, rinsed and patted dry with kitchen paper
185g jar pitted black olives , drained and roughly chopped
zest and juice 1 lime
2 x 200g tins tuna in spring water, drained
4 tbsp grated parmesan
½ small pack basil , leaves picked

Steps:

  • Bring a large pan of salted water to the boil and cook the penne for 1 min less than pack instructions. Drain, reserving a cup of the cooking water, and leave the pasta in the colander.
  • Heat the oil in the same pan you cooked the pasta in over a medium-high heat. When hot, add the capers and stir to coat in the oil. When the capers start to pop, reduce the heat and add the olives, lime zest and juice and tuna. Stir together, then return the pasta to the pan with the reserved cooking water. Stir through the Parmesan and basil and season with black pepper.

An easy and delicious penne pasta dish with tomato tuna sauce. It's made with canned tuna and kalamata olives for a quick fuss free dinner anytime of the week.

2 tablespoon extra virgin olive oil
2 cloves of garlic (minced)
1 small onion (chopped)
1/4 teaspoon crushed chilli pepper
660 ml jar Passata (Italian strained tomatoes I used San Marzano)
1 teaspoon dried basil
salt and pepper to taste
2 x 85 grams canned oil packed tuna (drained or 190 gram jar of tuna filets.)
1/4 cup Kalamata olives (pitted and slivered)
2 sprigs of basil
450 grams Penne Rigate (or other pasta of your choice)
salt (for cooking water)

Steps:

  • Heat the oil in a medium sized sauce pot over medium low heat.
  • Sauté the garlic, chopped onions and the crushed chilli pepper just until the onions are soft, while stirring often for about 5 minutes.
  • Add in the passata (Italian strained tomatoes), dried basil, salt and pepper and stir well.
  • Fill the bottle of passata three quarters full with water. Give it a good swirl and add this to the sauce. Stir well.
  • Bring the sauce to a boil then lower the heat, cover and simmer for about 45 minutes or until the sauce thickens and the sweet concentrated flavors of the tomatoes come through.
  • While the sauce is slowly simmering, bring a large pot of water to boil.
  • Salt the water and cook the pasta according to package directions.
  • While the pasta cooks, add the drained tuna, slivered kalamata olives and fresh basil to the tomato sauce. Allow to simmer till the pasta is al dente.
  • When ready, drain the pasta and toss with some of the tomato sauce.
  • Plate the pasta and top with more sauce and a sprinkle of basil.
  • Serve while still warm.

3 tablespoons olive oil
2 teaspoons finely chopped (3 medium cloves) garlic
2 medium red onions, (1 pound), peeled and cut into 1/4-inch-thick slices lengthwise
1 pound farfalle (bowtie) pasta
10 canned whole plum tomatoes, seeded, sliced 1/4 inch thick lengthwise, plus 1 cup juice
3 tablespoons nonpareil capers
1 tablespoon finely chopped rosemary
1/2 cup Kalamata olives, (3 ounces), pitted and cut into quarters
Salt and freshly ground black pepper
2 oil-packed Italian-style light tuna, drained
2 tablespoons roughly chopped fresh flat-leaf parsley

Steps:

  • Bring saucepan of salted water to boil. Pour oil in large skillet; place over medium heat. Add garlic and onions; saute until onions are translucent, about 8 minutes.
  • Meanwhile, cook pasta until al dente, about 11 minutes. Add tomatoes, juice, capers, rosemary, and olives to onions; add salt and pepper to taste. Raise the heat to medium high, and cook until tomatoes are heated through, 3 to 4 minutes. Drain pasta; transfer to large serving bowl. Add sauce, tuna, and parsley; toss gently to combine.

1 15 ounce can crushed tomatoes
1 8 ounce can Del Monte tomato sauce
2 5 ounce cans water or oil packed tuna (albacore or light)
3-4 cloves of garlic sliced
2 tablespoons of capers with juice
12 chopped olives (green, kalamata)
1 teaspoon Better Than Bullion Chicken Base
1/4 cup dry white wine
1 teaspoon dried oregano
1/4 cup chopped Italian parsley
3-4 fresh Basil leaves chiffonade
Salt/fresh ground pepper to taste
Red pepper flakes to taste
1/4 cup Olive Oil
1 lb penne or rigatoni

Steps:

  • This is a one pot recipe. In shallow sauce pan heat olive oil and saute sliced garlic until softened. Drain canned tuna (if water packed) and add to pan and saute with garlic Add 1 tsp Better Than Bullion chicken base and stir. Deglaze pan with 1/4 cup white wine Add crushed tomatoes and tomato sauce Add capers, olives, oregano, parsley, basil and black and red pepper. Taste before adding salt. Let simmer about 30 minutes. While sauce is simmering cook pasta according to directions for al dente Drain pasta and return to pot and add some sauce and saute sauce and pasta together Portion out pasta and top with extra sauce and fresh basil
