TUNA SALAD OR SANDWICH SPREAD
The pecans give this tuna salad a wonderful flavor. It can be served in lettuce cups for a luncheon. I like to make sandwiches from this mixture for picnics or backyard parties.

From my grandma's recipes. Tuna in oil contains vitamin E, unlike tuna in water, so that's what I always choose.

DRUNKEN TUNA DIP OR SANDWICH SPREAD
I adopted this from the Recipezaar account and updated the ingredients/instructions after making it. Updated again to add capers to ingredients. Serve as a spread for sandwiches or with crackers, veggies, bread cubes, and/or cheese sticks as a dip.

Steps:
- Beat (with a mixer or by hand) the cream cheese, brandy, lemon juice, hot sauce and salt to a smooth and creamy consistency.
- Blend in the sour cream and mayonnaise.
- Mix in the tuna, green onion, and capers and blend until almost smooth.
- May be served at room temperature or chilled.
TUNA EGG SANDWICH SPREAD
Ladies group loves this open faced, hot sandwich. Anything with cream cheese is a winner in my book.

Steps:
- 1. Drain and squeeze tuna fish until looks dry. Set aside.
- 2. Remove shells from eggs, cut into chunk, set aside.
- 3. Mix together, mix well, cheez whiz, mayonnaise, cream cheese, onion powder, red pepper,worchestershire sauce. Next add tuna fish and mix again.
- 4. Add chunked egg pieces, and cubed cheddar cheese pieces to the tuna mixture, stir together. Refrigerate for 1 hour or you can use it right away. I think the refrigerating helps blend the flavors.
- 5. Put tuna/egg spread on toasted bread or toasted buns. Broil on low, watch carefully so doesn't burn. (I use Udi's sandwich bread because I must have a gluten free diet.)
PARMESAN TUNA SANDWICH SPREAD
This tuna sandwich spread is full of fresh flavor. Use some freshly grated Parmesan cheese for the best flavor in this tuna salad sandwich.

- Combine tuna, red pepper, and green onions in a medium bowl.
- In a small bowl, combine cheese, eggs, mayonnaise, lemon juice, basil leaves, and red pepper (to taste) and blend well.
- Add to tuna mixture and blend. Cover tightly and refrigerate up to 2 days.
