4 (3/4 inch) thick Fresh albacore tuna steaks (about 10 to 12 ounces)
1 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons sweet relish
1 sweet onion, finely diced
2 celery ribs, finely diced
Bunch dill, snipped
Bunch chives, chopped
Salt and pepper
Potato bread hamburger rolls
Bottled sweet pickles
Potato chips

Steps:

  • Poach tuna in salted water for 3 to 4 minutes until cooked through. Flake and pull apart. Combine with mayonnaise, mustard, relish, onion and celery, herbs, salt and pepper. Spoon on rolls. Top with some sliced sweet pickles and potato chips.

2 tablespoons freshly chopped basil leaves
1 tablespoon freshly squeezed lemon juice

  • In a medium bowl, combine tuna, celery, apple, mayonnaise, basil, and lemon juice; mix well. Season with salt and pepper.

This was one of Julia Child's favorite dishes for a working lunch. For decades, Julia was on the road more than she was home and, when she returned to her beloved kitchen, she craved simple foods. For Julia, the important ingredients for this sandwich were the tuna (it had to be packed in oil) and the mayo (she preferred Hellmann's). Her longtime assistant, Stephanie Hersh, said, "The rest was up for grabs." Make it with capers, cornichons and chopped onion, a squirt of lemon juice and some herbs, serve it open-face on an English muffin or between slices of white bread, and you'll have Julia's midday signature.

3 to 4 tablespoons mayonnaise, preferably Hellmann's, plus more for spreading

2 to 3 tablespoons finely chopped onion, preferably Vidalia
3 to 4 cornichons, finely chopped
1 tablespoon capers, rinsed, patted dry and chopped if large, or 5 olives, pitted and chopped
Fresh lemon juice
Salt
Freshly ground pepper, preferably white
1 to 2 tablespoons minced fresh chives or parsley (optional)
2 toasted English muffins (preferably Bays) or 4 untoasted white bread slices
4 soft lettuce leaves, such as Boston
4 tomato slices
4 thin slices onion (optional)

Steps:

  • Prepare the tuna salad: Using a fork, mash the tuna with 3 tablespoons mayonnaise. Add the celery, as much onion and chopped cornichons as you'd like, and the capers or olives, and toss to combine. Add a squirt of lemon juice, some salt (go easy at first) and pepper. Taste and see if you'd like more mayo, onion or cornichons. Add more lemon juice, salt and pepper to taste. Stir in the chives or parsley, if you're using either. (Makes 1 1/2 cups.) The tuna salad is good to go as soon as it's made, but it's even better after a couple of hours in the fridge.
  • When you're ready to serve, spread the muffins or bread with a little mayonnaise. If you're using English muffins, do what Julia did: Make open-face sandwiches. Put a leaf of lettuce on each muffin half, top with tuna salad and finish with tomato and onion. If you're using sliced bread, prepare traditional sandwiches: Top each of 2 slices of bread with 1 piece lettuce, tomato and onion, then spread over the tuna and finish with remaining onion, tomato, lettuce and bread.

1 celery stick diced
1/4 onion diced
3 Tbsp sweet pickled relish
2 Tbsp fat free mayo
CHIPOTLE MAYO
1 c fat free mayo
1 lime juiced
2 chipotle peppers in a can
1/4 tsp salt
2 Tbsp olive oil
TOPPINGS
1 pineapple peeled and sliced
lettuce any kind you like or can find.

Steps:

  • 1. Drain your tuna pretty well. Add mayo and mix. Add chopped onions, relish and celery. Peel your pineapple (it has to be fresh. You can use can but it just wont taste the same). Cut the pineapple into rings and take the core out.
  • 2. In a blender add mayo, lemon juice, chipotle peppers, salt and olive oil blend until well combined. Start toasting your bread (you can use any bread you like).
  • 3. To assemble sandwiches all you do is slather bread with the spicy mayo onto both pieces. Add as much tuna as you like. I like to make mine fat. Add a ring of pineapple on top with some lettuce and top with the other piece of bread. Cut the sandwich in half or quarters what ever you like. These are great party foods or finger foods.

This dish can be served as a sandwich filling or as a stand-alone salad accompanied by favorite lettuces and veggies. We use canned tuna packed in spring water because it's lighter than tuna packed in oil, and we make sure the apple is tart and crisp. Granny Smith apples are fine, but also Mutsu, Honeycrisp, or any good local crispy, tart apple will do. Add half the dressing at first and see if you need more-it's up to you how well coated you want the tuna and apples to be.

1/4 cup chopped walnuts
3/4 cup mayonnaise, homemade (page 284) or store-bought
2 teaspoons sugar
1 teaspoon cider vinegar
Kosher salt and freshly ground black pepper to taste
2 crisp, tart apples, such as Granny Smith, Mutsu or Honeycrisp, peeled, cored, and cut into 1/8-inch cubes
3 small cans (about 18 ounces total) canned tuna in spring water, drained and separated into chunks
6 tablespoons finely diced red onion
1/4 cup chopped fresh parsley
8 slices multi-grain bread

Steps:

  • Toast the walnuts in a small nonstick skillet over medium heat for 2 minutes, or until golden brown, stirring occasionally. Alternatively, roast the walnuts in a preheated 300°F oven for 10 minutes, or until they smell toasted. Remove the walnuts to a plate and set aside to cool.
  • Whisk together the mayonnaise, sugar, and cider vinegar in a small bowl. Add salt and pepper to taste. Adjust the seasonings as needed.
  • Combine the walnuts, apples, tuna, red onion, and parsley in a bowl. Toss with half the dressing. Add more dressing, if desired.
