CREAMY TUNA PASTA BAKE

Creamy Tuna Pasta Bake - a classic meal that everyone loves - made with mostly store-cupboard ingredients!

400 g (14 oz) rigatoni pasta
3 tbsp butter
1 onion (peeled and chopped finely)
40 g (1/3 cup) plain/all purpose flour
600 ml (2.5 cups) milk
250 g (2.5 packed cups) strong cheddar, grated
1/4 tsp salt
1/4 tsp pepper
320 g (11 oz) canned tuna (albacore tuna if possible) (drained and flaked)
330 g (11.5 oz) canned sweetcorn (, drained)
150 g (1 cup) frozen petit pois
chopped parsley to serve

Steps:

  • Heat oven to 180C/350f.
  • Boil a large pan of water, add the pasta and cook for 10 minutes.
  • Whilst the pasta is cooking, melt the butter in a saucepan, add in the onion and cook on low for 6-8 minutes until the onions are very soft.
  • Turn up the heat to medium and stir in the flour. Cook for 1-2 minutes. Slowly add the milk, using a whisk to stir (just stir, don't whisk) it in.
  • Once all the milk is incorporated, continue to heat whilst stirring until the sauce thickens. Then stir in 2/3 of the cheese until melted. Season with the salt and pepper.
  • Drain the pasta and pour into a 20x30cm baking dish. Pour over the white sauce, then add the tuna, sweetcorn and petit pois.
  • Mix together, then sprinkle on the remaining cheese.
  • Bake in the oven for 15-20 mins until the cheese is golden brown. Top with a sprinkling of parsley before serving.

350g / 12oz penne pasta ((or other short pasta))
40g / 3 tbsp butter
3 garlic cloves (, finely minced)
4 tbsp (50g) flour (, plain/all purpose)
4 cups (1 litre) milk (, any fat %, dairy or non dairy (1 quart))
2 tsp Vegeta, or chicken or veg stock powder/granulated bouillon ((Note 1))
1/2 cup (50g) parmesan (, finely shredded)
1/2 tsp each mustard powder, onion and garlic powder ((Note 2))
425g / 15 oz canned tuna (, preferably in oil, drained (sub salmon))
400g / 14 oz canned corn (, drained (or other veg, Note 3))
25g / 1.5 tbsp butter (, melted)
1/2 cup (60g) panko breadcrumbs
1/4g (25g) parmesan (, finely grated)
1/4 tsp salt
Chives or parsley (, optional garnish)

Steps:

  • Preheat oven to 180°C/350°F.
  • Crunchy Topping - Mix together.
  • Cook pasta per packet directions MINUS 1 minute. Drain then allow to cool slightly, then return into pot.
  • White Sauce - Melt butter in a large pot over medium heat. Add garlic and cook for 30 seconds.
  • Add flour and stir into melted butter. While whisking, gradually pour in about 1/3 of the milk. Once the flour-butter mixture is incorporated into the milk, pour in remaining milk and whisk.
  • Add Vegeta, mustard, onion and garlic powder, whisk.
  • When the milk starts to heat up, whisk constantly to make sure the white sauce doesn't catch on the base.
  • After 4 - 5 minutes, the sauce should be thick enough that you can draw a path across the back of a spoon (see video). Remove from stove and stir in parmesan.
  • Assemble & Bake - Add tuna into pasta and flake into large chunks with fork (not too much, don't want it to turn to mush when stirred). Add corn, pour over sauce, then gently stir.
  • Scrape into baking dish, top with Crunchy Topping.
  • Bake 25 minutes until top is golden and edges are bubbling. Sprinkle with chives if desired then serve!

  • Gather the ingredients.

4 garlic cloves
2 zucchini, cut into 1/2-inch cubes (2 1/4 cups)
2 1/2 cups whipping cream
1/2 cup parmesan cheese, grated
1 teaspoon anchovy paste
2 tablespoons basil, minced (or 1 tsp dried)
1 teaspoon salt
1/2 teaspoon pepper
2 (6 ounce) cans albacore tuna, solid white -drained
8 ounces penne
1/2 cup panko breadcrumbs
2 tablespoons butter, melted

Steps:

  • .Heat oven to 450. Bring large pot of salted water to simmer. Add garlic; cook 5 minute Remove from water and chop.
  • Place zucchini in fine-mesh sieve; place in simmering water and cook 2 minutes; remove. Place under cold running water to stop cooking; drain. Bring water in pot to a boil.
  • In large bowl, stir together cream, cheese, anchovy paste, basil, salt and pepper. Add tuna, breaking into flaked pieces; stir in garlic and zuchinni.
  • Partially cook penne in boiling water 5 minutes; drain. Add to bowl and mix well.
  • Pour into 11/8 baking dish. Sprinkle with panko and drizzle with butter.
  • Bake uncovered, 15 to 25 minutes or until sauce is bubbling and top is golden brown. Remove from oven.

1 teaspoon canola or corn oil
1/4 cup chopped onion
1 tablespoon cornstarch

1 tablespoon finely snipped fresh parsley or 1 teaspoon dried, crumbled
1 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon onion powder

1 cup canned no-salt-added French-style green beans, drained
3/4 cup drained no-salt-added canned diced tomatoes
1 5-ounce can very low sodium albacore tuna, packed in water, drained and flaked
Topping (optional)
1/4 cup plus 2 tablespoons panko (Japanese bread crumbs)
1 tablespoon light tub margarine, melted

Steps:

  • Prepare the pasta using the package directions, omitting the salt. Drain well in a colander. Set aside.
  • Meanwhile, lightly spray a large broilerproof skillet with cooking spray. Add the oil, swirling to coat the bottom. Cook the onion over medium-high heat for 3 minutes, or until soft, stirring frequently. Set aside.
  • Preheat the broiler if using the topping.
  • Put the cornstarch in a cup. Add the water, whisking to dissolve. Set aside.
  • Whisk the milk, parsley, curry powder, salt, onion powder, and pepper into the onion. Cook, still over medium-high heat, for 5 minutes, or until the milk mixture is hot.
  • Gently whisk in the cornstarch mixture. Continue to gently whisk for 3 to 5 minutes, or until slightly thickened. Remove from the heat.
  • Stir in the beans, tomatoes, tuna, and pasta.
  • In a small bowl, stir together the panko and margarine. Sprinkle over the casserole.
  • Broil about 4 inches from the heat for 30 seconds to 1 minute, or until the topping is browned.

  • Cornstarch needs gentle treatment. Too much heat or stirring will cause a cornstarch-thickened sauce to become thin.

2 1/2 cups uncooked dry penne pasta
1 cup frozen peas
1 (10 3/4 ounce) can Campbell's condensed cream of celery soup, low fat
2/3 cup milk, 1/
2 (170 g) cans tuna, drained and flaked
2 tablespoons whole grain Dijon mustard
1 tablespoon lemon juice
1/2 cup cheddar cheese, sharp, shredded
1 cup mixture of coarsely chopped onion, and mushrooms
cracked black pepper (to garnish)

Steps:

  • Prepare pasta according to package directions, omitting salt and adding peas for last 5 minutes of cooking time. Drain and set aside.
  • Combine, in 2 quart baking dish, soup, milk, tuna, mustard, lemon juice and half of the cheese. Gently stir in pasta, peas and onion-mushroom mixture. Top with remaining cheese. Sprinkle with pepper.

Whip up this cheap treat using storecupboard ingredients, tinned tuna and sweetcorn

600g rigatoni
50g butter
50g plain flour
600ml milk
250g strong cheddar, grated
2 x 160g cans tuna steak in spring water, drained
330g can sweetcorn, drained
large handful chopped parsley

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Boil 600g rigatoni for 2 mins less time than stated on the pack.
  • To make the sauce, melt 50g butter in a saucepan and stir in 50g plain flour.
  • Cook for 1 min, then gradually stir in 600ml milk to make a thick white sauce.
  • Remove from the heat and stir in all but a handful of the 250g grated cheddar.
  • Drain the pasta, mix with the white sauce, two 160g drained cans tuna, one 330g drained can sweetcorn and a large handful of chopped parsley, then season.
  • Transfer to a baking dish and top with the rest of the grated cheddar.
  • Bake for 15-20 mins until the cheese on top is golden and starting to brown.
