HOW TO MAKE A TUNA MELT
This is dedicated to all those chefs who tell you to never, ever mix fish and cheese together; and yet there they are, at the diner at 2:00 in the morning. And you know what they eat? Tuna melts. And the reason they do is because it is delicious.

Steps:
- Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
- Heat oven's broiler. Line a baking sheet with aluminum foil.
- Spread butter generously on both sides of French bread slices.
- Broil buttered bread until golden brown on top, 2 to 3 minutes. Flip bread slices and broil other side until toasted, 2 to 3 more minutes. Remove from oven and turn bread slices over on the baking sheet so the darkest sides are on the bottom.
- Gently spread tuna salad onto bread slices using 2 forks. Press the salad onto the bread and spread tuna all the way to the edges of the bread. Spread shredded sharp Cheddar over each sandwich. Dust tops with cayenne pepper.
- Place sandwiches under broiler and cook until cheese is melted and bubbling, 5 to 6 minutes.

- Butter each slice of bread. Putting the butter side down add the cheese on the unbuttered side. Add the tuna mixture on top. Top with tomato and additional cheese.

TUNA MELT (OR SALAD) SUPREME
Most requested quick fix lunch for the working stiffs in our home. Searched and searched for something similar (#109698 came close). Try this! Splendidly simple and surprisingly delicious. Although I always "eyeball" measurments - I think this is pretty close.

Steps:
- Drain tuna well.
- Set almost empty cans on floor and allow pets to clean.
- Chop drained peppers and olives.
- Mix tuna, peppers and olives with mayo.
- Toast muffin halves/bread of choice.
- Preheat broiler (or use your toaster oven).
- Pile salad onto toasted bread, and top with Pepper Jack cheese.
- Place open faced sandwiches on cookie sheet.
- Broil until cheese is melted and bubbling.
- (If using toaster oven, place on baking insert and use the"toaster" setting-once or twice depending on how hot your toaster/oven gets).
- Also great without the bread- use as a dip with crackers and/or vegies (hot or cold).

TUNA MELT
Steps:
- Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
- Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.

- Prepare the base salad. Prepare a bed of lettuce in large, flat, salad bowls. Mix the mayonnaise, sour cream, anchovy, and seasoning. Add the chunked tuna. Mound in the center of each salad bed. Scatter the tomatoes, shredded carrot, banana peppers, crumbled bacon evenly split into the four bowls. Crumble the granola over the mounded tuna. Top with the shredded cheese. - In a bowl, mix the tuna, mayonnaise, celery, onion, parsley, and vinegar. Season with salt and pepper.
- Place the rye bread slices on a baking sheet, and broil 1 minute in the preheated oven, until lightly toasted. Remove from heat, and spread with the tuna salad. Place 1 cheese slice over the tuna salad on each piece of bread, layer with a tomato slice, and top with remaining cheese slices.

- 1. Place all of the tuna salad ingredients in a medium bowl.
- 2. Mix and set aside. (Can be made up ahead for flavors to blend.)
- 3. Slice round loaf of King's Hawaiian Bread to desired thickness. (Enough filling to make 2 large sandwiches or 4 small.)
- 4. Assemble the sandwich. Layer as follows: Take one piece of bread and place a slice of cheese on top.
- 5. Next, the sliced tomato.
- 6. Then the tuna salad.
- 7. Top the tuna with another slice of cheese.
- 8. Then top with the second slice of bread. Butter both sides of bread generously.
- 9. Place in a skillet on medium heat.
- 10. Grill (fry) until golden brown.
- 11. Serve with sweet potato fries or chips and pickle slices.
- 12. (Use any leftover sliced, round sweet Hawaiian bread to make the best french toast you've ever had the next morning!)
