A fun way to make canned tuna taste less like canned tuna. These thin tuna patties are tasty enough to be eaten plain or in a pita pocket with lettuce and tomato.

1 (5 ounce) can light tuna in water, drained
1 egg
⅔ cup quick-cooking oats
3 tablespoons barbeque sauce
3 tablespoons chopped green onion
½ teaspoon hot pepper sauce, or to taste
½ teaspoon dried savory
1 pinch salt
2 tablespoons vegetable oil

Steps:

  • In a medium bowl, stir together the tuna, egg and oats until blended. Mix in the barbeque sauce, green onion, hot pepper sauce, savory, and salt.
  • Heat the oil in a large skillet over medium heat. Spoon tablespoonfuls of the tuna mixture into the pan, and flatten slightly. Smaller patties hold together better. Cook until browned on each side, about 3 minutes per side.

My DH wanted these and I looked here and couldn't find one for tuna!! This came out perfect. I think you can add just about anything to make it a dinner or a little sugar and berries for a desert!!

1 cup flour
1 can tuna, drained and flaked
1 teaspoon baking powder
1/2 teaspoon salt
onion flakes, dried
2 eggs
oil (for frying)
1/4 cup milk

Steps:

  • Sift flour, baking powder and salt into a mixing bowl.
  • Beat the eggs well.
  • Beat in milk.
  • Combine liquid ingredients with dry ingredients.
  • Stir until all flour is moistened.
  • Stir in the tuna.
  • Drop by teaspoonfuls into hot oil, 375 degrees.
  • Fry until golden on all sides.
  • Drain on paper towels.

Ginger Tuna With a Wasabi Drizzle and Kumara Ginger Fritters image

This dish came together by accident and it was absolutely delicious, I have been experimenting again lately combining new ingredients and flavours. Tuna is always yummy and it is such a healthy meal. The Kumara (sweet potato) fritters were oh so yummy, the recipe below makes between 16 and 20 fritters depending on how big you dollop the mixture into the pan. It is the right amount if your making this for 6 but I was only making this for 4 so I had fritters left over, instead of throwing them out, I saved them and they were still great the next day. As they were already cooked I just heated a pan first, then added them and just cooked for a few minutes to re-warm it made for a great lunch.

4 tuna steaks
80 ml olive oil
3 teaspoons gingerroot, grated
2 red chilies, seeded, chopped finely
2 tablespoons lemongrass, chopped finely
1 cup dry white wine
3 tablespoons brown sugar
80 ml cider vinegar
1 tablespoon wasabi, I used powder (I say 1 as I did 11/2 and it was a bit too much for my hubby, I thought it was great so just adjust )
180 g sour cream
1 tablespoon olive oil
1 onion, chopped finely
1 medium zucchini, coarsely grated
2 teaspoons ginger, grated
2 teaspoons sweet chili sauce
2 medium sized kumara, coarsely grated (approx 400g)
1 tablespoon coriander, finely chopped
2 eggs, lightly beaten
3 tablespoons flour
2 tablespoons sesame seeds
oil (for deep frying)
180 g plain yogurt
1 1/2 tablespoons coriander, finely chopped
3 teaspoons sweet chili sauce

Steps:

  • In a large bowl combine oil, ginger, chilie and lemongrass, add tuna. Cover and refrigerate at least 30 Min's or until required.
  • Drain tuna over a small bowl, reserve marinade.
  • Either BBQ tuna or as it is winter where I am, I placed tuna on a wire rack in an oven proof dish and cooked under the grill about 4 inches from the heat, for about 3-4 minutes a side.
  • Wasabi Drizzle.
  • Combine wine, sugar and vinegar in a pan, heat until liquid just comes to the boil, turn down and simmer, uncovered, until reduced by half, cool slightly, stir in wasabi and sour cream.
  • Kumara Ginger Fritters.
  • Heat oil in a pan, add onion, zucchini and ginger, cook until onion softens, stir in chili sauce.
  • Combine onion mixture, kumara, coriander, egg, flour and seeds in a large bowl.
  • Heat oil for frying, add mixture in 1 tablespoon lots to oil, cook until browned on both sides and cooked through, drain on absorbent paper.
  • Chili Coriander Yogurt.
  • Combine all the ingredients in a bowl, mix well.
  • To Serve: Place tuna on a plate and drizzle with wasabi sauce, arrange some salad greens on the plate top with fritters and dollop yogurt on the top of each fritter. I served 3 fritters per person but serve as many as you like.

2 cans light low-sodium tuna in water, flaked and drained
2 tablespoons light mayonnaise
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 cup carrot, shredded
1 cup sweet potato, shredded
1/2 cup shredded zucchini, shredded and chopped
1/2 cup green onion, shredded and chopped
1/2 cup frozen corn kernels, thawed
1/2 cup all-purpose flour
1/2 cup pasteurized liquid egg-whites, well-shaken
2 tablespoons canola oil

Steps:

  • Combine tuna with mayonnaise, garlic, salt and pepper. Add carrot, sweet potato, zucchini, green onion, corn and flour; stir to combine. In a separate bowl, whip egg whites until stiff; gently fold into the tuna mixture.
  • Heat half the oil in a large, non-stick skillet set over MEDIUM HEAT. In batches, drop 1/3 cup portions of the batter into the skillet; flatten slightly with the spatula. Cook for 4-5 minutes per side or until golden and set. Repeat with remaining batter, adding more oil as needed. Hold batches in a warm oven until all the fritters are cooked.

125 g creamed corn (2-3 tablespoons fresh corn can be substituted)
1/2 small onion, finely diced
1 tablespoon flour
1 egg
1 tablespoon grated cheese
1 tablespoon chopped fresh parsley (optional)

Steps:

  • Mix all the ingredients together in a bowl.
  • Heat up a frying pan.
  • When the pan is hot, spoon the mixture in heaped spoonfuls into the pan.

1 sliced spring onion
cracked black pepper

Steps:

  • Combine two grated zucchini with 100g drained tuna in springwater, one whole egg and two egg whites, one sliced spring onion and some black cracked pepper.
