12 ounces egg noodles, preferably whole-wheat
2 (11 ounce) cans condensed cream of mushroom soup
3 (5 ounce) cans water-packed chunk light tuna, drained and flaked
1 medium onion, finely chopped
1 cup frozen green peas, rinsed under cold running water
1 cup plain dry breadcrumbs, preferably whole-wheat
1 cup shredded Cheddar cheese

Steps:

  • Preheat over to 375°F. Coat a 9-by-13-inch baking dish with cooking spray. Bring a large pot of water to a boil.
  • Cook noodles in the pot of boiling water according to package instructions. Drain and rinse under cold running water. Transfer to a large bowl.
  • Add mushroom soup, tuna, onion and peas to the noodles; stir until combined. Scrape the mixture into the prepared baking dish. Combine breadcrumbs and cheese in a medium bowl; sprinkle over the casserole.
  • Bake until bubbly and lightly browned, 20 to 25 minutes.

4 cups dry whole wheat fusilli (can use penne pasta or similar)
1 small onion, finely chopped
2 (6 ounce) cans solid white tuna, water packed, well drained (can use 3 cans)
2 (10 ounce) cans fat free cream of celery soup or 2 (10 ounce) cans cream of mushroom soup, undiluted
1/2 cup low-fat mayonnaise
1 cup skim milk or 1 cup 1% low-fat milk
1 (10 ounce) can sliced mushrooms, well drained
1 tablespoon Mrs. Dash seasoning mix
1/2 teaspoon garlic powder
1/2 teaspoon coarse black pepper (or to taste)
1 cup grated reduced-fat cheddar cheese (or to taste)

Steps:

  • Set oven to 350 degrees F.
  • Grease an 11 x 7 or 13 x 9-inch baking dish with cooking spray (or use a casserole dish large enough to hold the mixture).
  • Boil the pasta in a large pot of boiling water until al dente; drain then transfer to a large bowl.
  • Add in onion and tuna; toss to combine.
  • In a saucepan heat soup with milk until smooth.
  • Stir in mushrooms mayonnaise, Mrs Dash seasoning, garlic powder and black pepper until combined; pour into the bowl and toss to combine.
  • Transfer mixture to prepared baking dish.
  • Bake for about 30 minutes.
  • Remove from oven then sprinkle with cheddar cheese, return to oven for 2-4 minutes to melt the cheese.

1 medium onion, chopped
1 can(s) (14 ounces) peas, drained

1/2 c shredded low-fat cheddar cheese

1 cup reduced-fat sour cream
1/2 cup fat-free mayonnaise
2 to 3 teaspoons lemon juice

1/3 cup plus 2 tablespoons shredded Parmesan cheese, divided
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

2 cans (6 ounces each) light water-packed tuna, drained and flaked

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a small bowl, combine sour cream, mayonnaise and lemon juice; set aside., In a large saucepan, melt butter. Steps:

  • Preheat oven to 375° F. Grease a 1 1/2-quart baking dish; set aside. Cook pasta according to package directions; drain.
  • In a medium saucepan, cook celery, onion, and garlic in hot oil until tender. Stir in flour, mustard, dill, lemon peel, and pepper. Add broth all at once. Cook and stir until thickened and bubbly, whisking to remove any lumps. Stir in tuna and pasta. Transfer to prepared baking dish.
  • In a small bowl, stir together croutons and melted butter. Sprinkle on tuna mixture. Bake, covered, for 15 minutes. Uncover and top with lemon slices.
