CONFETTI TUNA CASSAROLE

This recipe is best with fresh or leftover grilled tuna. If you have to use canned, I recommend using twice the seasoning. Can be prepared ahead of time and placed in the oven later.

1 box rotini pasta
6-8 oz fresh or leftover grilled tuna (2 large cans of tuna can be substituted)
3 can(s) cream of mushroom soup
1 pkg frozen mixed veggies
1/2 tsp lemon pepper
1/2 tsp paprika
1 c french fried onions

Steps:

  • 1. cook and drain pasta according to package directions
  • 2. return pasta to pan, add all remaining ingredients except onions
  • 3. preheat oven to 425F, spray cassarole pan with olive oil spray, add mixture, sprinkle with fried onions and bake for 30 min. You can place biscuits in the oven the last 10 min or so to serve with the cassarole.

I got this recipe from my mother in law and I am not sure where she got it.I wasn't too sure how it would turn out but being on a budget I tried it because it was inexpensive. Turned out it was so delicious. My family loved it, even my picky 4 year old son. Definitely a keeper!

Number Of Ingredients 10

16 oz egg noodles
1 c mayonnaise
2 can(s) cream of celery soup (10.5 ounce)
1 1/2 c evaporated milk
2 c grated cheddar ( divided)
1 c chopped celery
1 small onion finely chopped
8 oz fresh mushrooms
2 can(s) of tuna with the juice ( dont drain)
2 tsp black pepper

Steps:

  • 1. Cook egg noodles in a large pot of salted water until the noodles are firm but not soft. Drain well and set aside.
  • 2. Preheat oven to 325.
  • 3. In a large bowl mix all of the remaining ingredients, ( reserving 1/2 cup of the cheese )and add to the egg noodles in the pot. Mix well.
  • 4. Spread the mixture in a large casserole dish. Sprinkle remaining 1/2 cup of cheese on top.
  • 5. Bake for 30 minutes.

I'm the baby of 11 so when it came to making something that didn't take a lot of time and could feed a lot of people, plus taste good. Well this is a modified version of my mothers recipe. I really hope you enjoy it, if you have questions please ask me. I'm a newbie at posting these things and I learned at my mama's hip doing a dash of this and a pinch of that and child gone on ahead and throw that off in that pot! I sure do love my ma.

Number Of Ingredients 15

3/4 bag(s) egg noodles
1 package(s) onion soup mix
2 can(s) while albacore tuna
2 medium eggs
2/3 can(s) cream of mushroom soup
1 cup(s) sour cream
2 cup(s) cut carrots
1 lg stalk(s) broccoli small tops
3 can(s) milk
1/2 teaspoon(s) black pepper
1 teaspoon(s) lawerys season salt
1 teaspoon(s) glarlic powder
1/2 teaspoon(s) paprica
2 tablespoon(s) butter
2 can(s) water

Steps:

  • Put on a large pot of water to boil for your Egg Noodles and turn oven on to 350.
  • In a large sauce pot, add: Cream of Mushroom soup then fill the cans that you just emptied with milk add to soup then 2 cans of water ( yep same cans : )) pour these into the same pot, empty package of Onion Soup Mix. Keep it on low to med heat and continue to stir the mixture. Add pepper, Lawry's season salt, paprika, garlic powder
  • Place noodles in lg pot to cook, make sure to under cook them because they will go in the oven later. For wide egg noodles approx. 7 min
  • Drain noodles and rinse, place them in a 13x9 baking pan. Add Tuna, eggs, sour cream, mushroom sauce mix, carrots and broccoli and butter. With 2 large spoons gently mix all the ingredient together until its all blended add more pepper, season salt garlic powder if you'd like just to taste and only a pinch.
  • Tent your baking pan with aluminum foil and place on the middle rack in the oven for 40/45 min. Make sure the foil isn't touching the noodles.
