AVOCADO TUNA SANDWICH

2 ripe avocados, peeled, pitted and coarsely mashed
2 Tablespoons fresh squeezed lime juice or lemon juice
1/4 cup roasted red pepper strips, fresh or jarred
2 Tablespoons chopped fresh parsley
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1 (5-oz.) drained can tuna
8 slices hearty multi-grain bread
8 slices tomato slices
8 slices red onions

Steps:

  • In medium bowl, combine avocado, lime juice, red pepper strips, parsley, garlic salt and pepper. Gently flake and fold in tuna. Fill each sandwich with 2 slices tomato, 1/4 avocado filling and 2 slices red onion. Serve immediately.;

2 pouches (5 ounces each) albacore white tuna in water
1/3 cup mayonnaise
3 tablespoons minced fresh cilantro
2 tablespoons lime juice
2 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon pepper
8 slices whole wheat bread, toasted if desired
4 slices Muenster or provolone cheese
1 medium ripe avocado, peeled and sliced

Steps:

  • In a small bowl, mix the first 7 ingredients. Spread tuna mixture over 4 slices of bread; top with cheese, avocado and remaining bread. Serve immediately.
