12 ounces of whole-wheat pasta shells (or the pasta of your choice but try to get whole-wheat)
3 (7 ounce) cans albacore tuna, packed in water
1 1/4 cups fresh peas (frozen are also okay but fresh peas are much better)
8 ounces fresh sliced cremini mushrooms (also called Baby Bellas)
1 1/2 cups sharp cheddar cheese
2 (10 3/4 ounce) cans condensed mushroom soup
1 cup milk
1/2 cup olive oil mayonnaise (It's usually called Olive Oil Mayo)
1 medium red onion, chopped
1 cup roasted red pepper, chopped
1 tablespoon salt
3 tablespoons dried herbes de provence
3 tablespoons minced garlic (garlic powder will also suffice if that's all you have)
1 tablespoon mccormick crushed chipotle pepper
1/2 cup grated parmesan cheese
1/2 cup Italian seasoned breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • Cook the pasta in boiling water for 8 minutes. Drain and set aside.
  • In a small bowl, combine the parmesan cheese and Italian bread crumbs and set aside.
  • In a large bowl, combine all of the other ingredients and then stir in the pasta.
  • Pour the mixture into a lightly oiled baking dish (9 x 12 inches) and then spread it evenly.
  • Sprinkle the parmesan and breadcrumb mixture over the casserole.
  • Bake for 45-50 minutes.

2 cups whole-grain bow-tie pasta
1 teaspoon olive oil
2 cups sliced cremini mushrooms
½ cup chopped onion
⅓ cup chopped celery
⅓ cup chopped red bell pepper
⅓ cup chopped carrot
1 ½ cups light Alfredo sauce (such as Classico® Light Creamy Alfredo)
½ cup light sour cream
¼ cup grated Parmesan cheese
2 teaspoons snipped fresh dill
¼ teaspoon ground black pepper
1 (5 ounce) can solid white tuna (water pack), drained and broken into chunks
⅓ cup whole wheat panko bread crumbs
4 wedges lemon wedges

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a 2-quart baking dish with nonstick spray.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Meanwhile, heat oil in a large skillet over medium heat. Add mushrooms, onion, celery, bell pepper, and carrot; cook until vegetables are tender, about 8 minutes.
  • Whisk together Alfredo sauce, sour cream, 2 tablespoons Parmesan, dill, and black pepper in a large bowl. Stir in cooked pasta, vegetables, and tuna until combined. Transfer to the prepared dish. In a small bowl, stir together panko and remaining 2 tablespoons Parmesan; sprinkle over casserole. Lightly coat with nonstick spray.

1 tablespoon olive oil
6 ounces mushrooms
1/2 red bell pepper
3 stalks celery
1 medium onion
6 scallions
16 ounces tuna in water, don't drain
1 tablespoon flour
1/4 cup milk
1/2 cup chicken broth
salt and pepper, to taste
dill weed, to taste

Steps:

  • cook pasta separately.
  • saute veggies and add tuna when they're soft.
  • add drained pasta.
  • stir flour into milk and add to pan. If it thickens too much, add some chicken broth.
  • Add red pepper flakes to taste for a little spicier dish.

9 jarred peperoncini, drained and coarsely chopped (for less heat, use fewer)
3 cups baby arugula
2 jars (6.7 ounces each) water-packed tuna fillets, drained and broken into chunks
1/2 cup coarsely chopped fresh flat-leaf parsley
1/4 cup extra-virgin olive oil
Freshly ground pepper

Steps:

  • Bring a large pot of water to a boil. Cook pasta according to package instructions until al dente. Drain.

4 cups whole wheat penne
2 tablespoons olive oil
1 medium onion, chopped
1 -2 garlic clove, minced
1 (8 ounce) can tuna in water
1 medium carrot, grated
1 cup milk
1 cup tomato sauce
10 ounces frozen spinach
1/2 cup cheese, grated (cheddar, mozzarela or parmesan)
salt and pepper

Steps:

  • Prepare pasta al dente. In a large sausepan fry onions until soft. Add garlic and tuna (dicscard water). Stir for 2-3 min and add carrots. Stir for another 3-4 mintues and add milk. Bring to boil and reduce the heat. Continue until milk evaporates and add pasta, tomato sause and spinach. Cook for 7-8 minute Add cheese, salt and pepper. Turn of the heat and cover with lid for 5 min before you serve. Enjoy!
