6 tablespoons pesto sauce (I used store-bought)
1/4 cup light mayonnaise
2 (6 ounce) cans albacore tuna in water, drained
2 medium tomatoes, diced
shredded lettuce (optional)
4 slices monterey jack cheese
4 hard rolls

Steps:

  • Combine the pesto, mayo, tuna, and tomatoes. Salt and pepper to taste.
  • Spread the tuna mixture on the bottom half of the rolls and top with a slice of cheese (I used hoagie rolls; this is enough filling for four large sandwiches).
  • Broil until the cheese is slightly browned.
  • Top with optional lettuce and the other half of the bun.
  • Serve!

I had tuna, but none of the usual ingredients I mix in. I found pesto in the back of the fridge. It's unusual I know, but we really liked the flavour combination, even my husband who hates trying new things :-) Note: the cook time is for refrigeration.

1 (6 ounce) can tuna in water, drained
2 tablespoons genovese pesto sauce, to taste
black pepper, to taste
1 tablespoon mayonnaise, optional
1 lemon, juice of, optional

Steps:

  • Make sure the tuna is as well drained as possible, I squeeze mine in a sieve.
  • Mix with pesto and pepper to taste.
  • If you want a more"spreadable" consistency, mix in the mayonnaise.
  • A little lemon juice adds some zing if you like a more tangy flavour.
  • Refrigerate for at least 20minutes to allow flavours to meld.
  • Serve either as a sandwich or on crackers.

2 tablespoons red onions, minced
3 tablespoons celery, minced

2 (2-inch thick) tuna steaks (about 1 pound each)
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 garlic clove, peeled
2 cups fresh basil leaves
1/4 cup toasted pine nuts
Salt and freshly ground black pepper
1/2 cup - 3/4 cup extra-virgin olive oil
1/2 cup grated Parmesan
2 tablespoons lemon juice

Steps:

  • Preheat grill to 400 degrees F.
  • Wash and pat dry the tuna steaks. Season with salt and pepper and brush both sides with olive oil. Place tuna on hot grill and sear each side for 2 minutes for rare. If you prefer well done, cook the tuna an additional 2 to 3 minutes per side. Remove from skillet and let it rest.
  • Into the bowl of a food processor, add the garlic, basil leaves, pine nuts, salt, and pepper. Pulse until finely chopped. With the blender still running, slowly pour 1/2 cup of olive oil. Check for a thick, yet smooth consistency, adding more oil if necessary. Transfer to a bowl and stir in 1/2 cup Parmesan.
  • Slice the tuna across the grain and on a bias into 1/2-inch thick slices. Place the slices on a serving plate and drizzle with lemon juice. Sauce tuna with pesto.

PESTO TUNAFISH MELT SANDWICH

I wanted to make something different then your plain old tuna fish sandwich. I love pesto and thought this would be a good combination. It was! I also just loved Friendly's tuna melts and this was very similar. You can use any bread you want. Even my other half loved it and he doesn't really care for tunafish.

1 can(s) ( 50z ) tuna fish in water
3 Tbsp mayo
salt and pepper to taste
1/4 c jarred pesto
fresh thinly sliced tomatoes
2 slice of american cheese
1 Tbsp minced onion
1 tsp dijon mustard
2-3 pickle slices diced into small pieces

Steps:

  • 1. Mix all the ingredients together in a bowl. Except for the cheese.
  • 2. Assemble your sandwich with your choice of bread putting the cheese on the bread then the tuna mixture then another slice of cheese and top it off with another piece of bread.
  • 3. Lightly spread margarine on the outside of your sandwich and cook in a pan until toasty and the cheese has melted.
