2 1/4 cups Bisquick Heart Smart® mix
3/4 cup fat-free (skim) milk
1 can (18.5 oz) Progresso™ Rich & Hearty New England clam chowder soup
1 cup frozen mixed vegetables
1 package (5 oz) frozen cooked salad shrimp, rinsed, thawed
1 tablespoon Bisquick Heart Smart® mix
1 teaspoon dried dill weed
1/8 teaspoon pepper

Steps:

  • Heat oven to 450°F. In medium bowl, stir 2 1/4 cups Bisquick mix and the milk until soft dough forms. Drop by 6 spoonfuls onto ungreased cookie sheet. Bake 10 minutes or until golden brown.
  • Meanwhile, in 2-quart saucepan, mix remaining ingredients. Heat to boiling over medium heat, stirring occasionally.
  • To serve, split biscuits in half; place on 6 individual plates. Spoon generous 1/4 cup hot chowder mixture over bottom of each biscuit. Top with remaining biscuit halves. Spoon 1/4 cup chowder mixture over top of each biscuit.

I am submitting this because the kids raved over it, and my daughter had 3 helpings. Go figure. It's pretty easy, too. From Betty Crocker's New Cookbook. Also can be served over toasted bread.

1/2 cup butter
1 small green bell pepper, chopped (1/2 c.)
1 cup sliced mushrooms (3 oz.)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups skim milk
1 1/4 cups chicken broth
2 (7 ounce) cans tuna, drained
1 (2 ounce) jar diced pimentos, drained
3 cups hot cooked brown rice

Steps:

  • Melt butter in a large skillet over medium-high heat.
  • Cook green pepper and mushrooms in butter, stirring occasionally, until pepper is crisp-tender.
  • Stir in flour, salt and pepper.
  • Cook over medium heat, stirring constantly, until bubbly; remove from heat.
  • Stir in milk and broth.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Stir in tuna and pimientos; cook until hot.
  • Serve over rice.

1 (10 1/2 ounce) can condensed cream of mushroom soup, undiluted
1 (6 1/2 ounce) can tuna, drained
1 (4 ounce) can mushroom pieces, drained
1 cup frozen peas
1 tablespoon chopped pimiento
1/4 teaspoon paprika
1 cup sour cream

Steps:

  • In a 2 quart (2 litre) saucepan, combine all ingredients except sour cream.
  • Simmer 5 min, mixing well.
  • Add sour cream to mixture and heat through.
  • You can serve this over toast, plain waffles, noodles, rice, whatever you like.
