1 (15-1/4-ounce) can whole kernel corn, drained
1 (14-3/4-ounce) can cream-style corn
1 (8-ounce) package Jiffy corn muffin mix
1 cup sour cream
4 tablespoon butter, melted
1 to 1 ½ cups shredded Mozzarella
Salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x9-inch baking pan or a 2-quart casserole dish.
  • Mix together the corn, Jiffy, sour cream and butter in a large bowl. Then, stir in the cheese and pour into the prepared pan.
  • Bake for 55 minutes, or until golden brown and set. Let stand 5 minutes before serving.

1 15 ounce can whole corn (drained)
1 cup soda (or saltine) crackers (crushed)
1/2 cup milk
1/2 cup sugar
3 eggs
3 tablespoons flour
3 tablespoons butter (melted (or bacon grease, see notes above))

Steps:

  • Preheat oven to 350-degrees.
  • Combine all ingredients in a large bowl, mix well.
  • Pour mixture into a greased 9x13 glass baking dish.
  • Bake for 1 - 1 1/2 hours or until cooked through and golden brown on top.
  • Tip: If you like it more bready, bake longer. It will become more like a cornbread. If you like it more like a corn pudding, bake for less time.

1 (14 3/4 ounce) can whole corn (drained)
1/2 cup onion, chopped fine
1 (2 ounce) jar chopped pimento pepper, drained
1 (4 ounce) can diced green chilies, drained
1 cup milk
2 eggs, slightly beaten
1 cup yellow cornbread mix
1 cup cheddar cheese, shredded
1/4 cup canola oil
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F; grease a large casserole dish.
  • Mix all ingredients and stir until well blended.
  • Pour into prepared casserole dish and bake uncovered approximately 45 minutes to 1 hour (depending on your oven). You can cover with foil the last 15 minutes.

2 cans white or whole kernel corn
8 slices bacon
1 cup diced onions
1 cup sour cream
Salt and pepper to taste

Steps:

  • Drain corn. Cook bacon, drain and save grease and cool and crumble. Saute onions in bacon drippings. Combine all ingredients, but only half bacon.
  • Pour into sprayed casserole dish, or 9 in. deep dish pie crust. Top with rest of bacon.
  • Bake at 350°F for 35 to 40 min until bubbly and slightly brown.

Great family recipe I am asked to make at every family function. The twist is I use Mexican cornbread mix instead of regular cornbread mix.

3 eggs, beaten
1/2 cup butter, melted
8 ounces sour cream
1 (7 ounce) package Mexican cornbread mix (I use Martha White)
1 (14 3/4 ounce) can creamed corn
1 (15 1/4 ounce) can whole corn, drained
1 (16 ounce) bag colby-monterey jack cheese, shredded

Steps:

  • Preheat the oven to 375 degrees. Also spray a 9 x 11 cooking dish with cooking spray.
  • In a large bowl, beat 3 eggs. Add 1 stick melted butter and sour cream. Blend well. Add mexican cornbread mix and blend well. Next add cream corn and whole corn and blend well. Finally add bag of shredded cheese and mix well.
  • Once all is blended in, pour mixture into cooking dish and place in the oven for 30 minutes. Can check with a toothpick to make sure the center is cooked.
  • Enjoy!
