Steps:

  • Put everything except the fresh fruit in a food processor and blend. Scoop straight into bowls, or tip into a container and freeze if you want to serve it later. Serve with the fresh tropical fruit and spoon over the passion fruit seeds.

1 (8 ounce) container vanilla yogurt
1 (3 ounce) package reduced-fat cream cheese (softened)
1 tablespoon honey
1/4 teaspoon cinnamon
2 tablespoons fresh lemon juice
1/2 teaspoon grated fresh lemon rind

Steps:

  • Arrange fruit on a serving platter and refrigerate while making dip.
  • Dip: In a blender or a food processor combine ingredients for dip: yogurt, cream cheese, honey cinnamon, lemon juice, and lemon rind.

1/4 cup sweetened condensed milk
1 vanilla bean, halved and seeds scraped

1/2 cup diced dried mango
1/2 cup diced dried papaya
1/2 cup diced banana

Steps:

  • For the baked yogurt: Preheat the oven to 275 degrees F.
  • Whisk the sour cream, creme fraiche, condensed milk and vanilla seeds in a medium bowl. Divide the honey among six 4-ounce ovensafe glass ramekins or jelly jars. Divide the sour cream mixture evenly among the ramekins and bake until just set, about 20 minutes. Refrigerate until chilled, at least 30 minutes.
  • For the tropical fruit compote: Combine the pineapple, mango puree, dried mango, dried papaya, bananas, brown sugar, granulated sugar and vanilla seeds in a medium saucepan. Bring to a boil, lower to a simmer and cook until the juices are thick and the fruit is translucent, about 30 minutes. Cool until warm, 20 to 30 minutes.
  • To serve: Top each baked yogurt with a heaping spoon of the tropical fruit compote and an edible flower and serve.

Steps:

  • Grease and flour the cake pan. Preheat oven to 350 degrees F.
  • Cream the butter with 1/2 cup of the sugar until light and fluffy. Add another 1/2 cup of sugar and beat until incorporated. Gradually add in the buttermilk, scrape down the sides of the bowl. Add the egg whites in 1 at a time, beating well after each addition.
  • In a separate bowl stir together the flour and baking powder. Add the flour mix into the batter with the vanilla and mix together until well incorporated.
  • Pour the batter into the prepared pan and arrange the mango, pineapple, and banana decoratively on the top. Sprinkle with the remaining 2 tablespoons sugar and bake for 45 minutes or until golden brown.
  • Let the torte cool slightly and slice. Serve each slice warm with a small scoop of vanilla frozen yogurt, 2 caramelized banana slices and 2 tablespoons of raspberry sauce.
  • Slice the bananas on the diagonal into 24 slices and place on a baking sheet. Sprinkle with the sugar and caramelize under a broiler for 1 to 2 minutes.

2 cans (8 oz each) crushed pineapple in syrup, drained, 1/4 cup syrup reserved

Steps:

  • Heat oven to 400°F. In large bowl, beat crust ingredients with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed about 2 minutes or until creamy. 1 large mango, peeled
1/4 cup plain yogurt
1 jalapeno pepper, seeded and coarsely chopped
1 lime, juice of
1 green onion, coarsely chopped
salt, to taste
1/2 fresh ripe pineapple, peeled and cut into chunks. (Tinned will work too)
3 boneless skinless chicken breasts, cut into cubes
2 small green bell peppers, cut into chunks (or 1 red and 1 green)
1 small red onion, cut into chunks
1/2 teaspoon salt
fresh coarse ground black pepper, to taste
nonstick cooking spray (if needed)
6 bamboo skewers, soaked in cold water for at least 30 minutes

Steps:

  • To prepare dipping sauce place mango in a food processor or blender, add yogurt, jalapeno, lime juice, green onion and salt.
  • Pulse until smooth and refrigerate until needed.
  • Thread cubed chicken, pineapple, green peppers and red onion onto the soaked bamboo skewers sprinkling with salt and pepper.
  • Heat BBQ or charcoal grill to medium heat and spray with cooking oil if needed.
  • Place skewers on grill and cook 5 to 7 minutes per side turning as needed until the chicken is thoroughly cooked.

1 avocado, chopped
1 grapefruit, halved
2 tablespoons sugar
1 1/2 teaspoons cornstarch

1/4 cup coconut, flaked
1/4 cup almonds, sliced

  • Gently remove the halved grapefruit pieces from the skin and place in a medium bowl. Combine with avocado.
  • Prepare pomegranate syrup: Combine sugar and corn starch in a small saucepan, and mix well. Add pomegranate juice. Bring to a boil and simmer gently until reduced and thickened, about 5 minutes. Allow to cool.

2 cups fat free Greek yogurt
1/2 cup sugar
2 teaspoons vanilla
1 banana
1 (8 ounce) can crushed pineapple in juice
1 tablespoon brown sugar
3 tablespoons spiced rum

Steps:

  • Toast coconut. Mix yogurt, sugar and vanilla. Refrigerate for at least 1 hour. Mash banana, stir in pineapple with juice, brown sugar and rum. Refrigerate for at least 1 hour. 480g frozen tropical fruit mix
170g Greek yogurt
2 tbsp maple syrup or honey
200g diced tropical fruit and passion fruit seeds, to serve

Steps:

  • Put everything except the fresh fruit in a food processor and blend. Scoop straight into bowls, or tip into a container and freeze if you want to serve it later. Serve with the fresh tropical fruit and spoon over the passion fruit seeds.

1 (1/4 ounce) envelope unflavored gelatin
1/4 cup cold water
1 cup fat-free cottage cheese
1 cup nonfat yogurt (artificially sweetened)
2 (1 g) packets artificial sweetener (or 2 tablespoons sugar or Splenda Granular, to taste)
1/2 teaspoon coconut flavoring
1 dash ground allspice
1/2 cup sliced mango
1/2 cup sliced banana

Steps:

  • In a small bowl, sprinkle gelatin over cold water and let stand for 1 minute to soften. Then heat in microwave for high for 30 seconds. Stir until gelatin is dissolved. Cool completely.
  • Place cottage cheese and yogurt in blender; process until smooth. Add Splenda and coconut flavoring.
  • With blender on low, gradually add cooled gelatin, blending well.
  • Place fruit in 4 small serving dishes or containers; pour gelatin mixture over the fruit. Sprinkle with allspice.
  • Cover and chill until set.
