An easy salad to make with a bag of salad greens, pineapple, bacon bits, nuts and toasted coconut. Use fresh pineapple, if you can, and substitute toasted almonds for the macadamia nuts, if desired.

6 slices bacon
¼ cup pineapple juice
3 tablespoons red wine vinegar
¼ cup olive oil
freshly ground black pepper to taste
salt to taste
1 (10 ounce) package chopped romaine lettuce
1 cup diced fresh pineapple
½ cup chopped and toasted macadamia nuts
3 green onions, chopped
¼ cup flaked coconut, toasted

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly browned, about 10 minutes. Drain, crumble, and set aside.
  • Combine pineapple juice, red wine vinegar, oil, pepper and salt in a lidded jar or cruet. Cover and shake well.
  • Toss lettuce, pineapple, macadamia nuts, green onions and bacon together in a large bowl. Pour dressing over salad and toss to coat. Garnish with toasted coconut.

7 cups torn romaine
1 cup chopped fresh pineapple
1/2 cup coarsely chopped macadamia nuts, toasted
3 green onions, chopped
6 bacon strips, cooked and crumbled
1/4 cup unsweetened pineapple juice
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a large salad bowl, toss the romaine, pineapple, macadamia nuts, green onions and bacon., In a small bowl, whisk the pineapple juice, oil, red wine vinegar, honey, salt and pepper. Pour over salad; toss to coat. Sprinkle with coconut.

6 slices bacon
1/4 cup pineapple juice
3 tablespoons red wine vinegar
1/4 cup olive oil
salt and black pepper
1 (10 ounce) package chopped romaine lettuce
1 cup pineapple chunk
3 green onions, chopped
1/2 cup sliced almonds
1/4 cup toasted flaked coconut

Steps:

  • Cook bacon until crisp over medium high heat.
  • Drain, crumble and set aside.
  • Combine pineapple juice, red wine vinegar and salt and pepper in a small bowl.
  • Whisk in olive oil slowly.
  • On a large platter, place Romaine lettuce, pinepple chunks and green onions.
  • Pour dressing over and toss.
  • Top with almonds, crumbled bacon and coconut and serve.

VINAIGRETTE:
5.6 oz can coconut milk
2 Tbl fresh lime juice
1/2 tsp dried crushed red peppers
1 Tbl fish sauce
4 tsp brown sugar
2 tsp freshly grated ginger
1 Tbl finely chopped cilantro
1 Tbl finely chopped mint
1/4 cup toasted unsweetened coconut
CHICKEN:
3 full chicken breasts
teriyaki sauce
SALAD:
8 cups mixed baby greens
2 cups chopped Romaine lettuce
1/2 red onion, finely sliced
1 carrot cut into 1 1/2" long, 1/4" wide pieces
peeled English cucumber cut into 3" long, 1/4" wide pieces
1/2 cup raw cashews
1/2 cup dried apricots cut into quarters
1 can Mandarin oranges, drained
1/2 sweet red pepper cut into long thin slices
1/2 cup canned or fresh pineapple chunks
1 mango cut into 1/2" chunks
1/2 cup 1/8th" x 1" long pieces of deep fried tortillas pieces (or coarsely crumbled tortilla chips or purchased deep fried chow mein noodles)

Steps:

  • COCONUT LIME VINAIGRETTE: Chill can of coconut milk overnight or until solid; pour off watery juice. Place remaining 1/2 cup solid coconut cream in a small food processor; add lime juice, crushed red peppers, fish sauce, brown sugar and ginger; process until peppers are well crushed (mixture may separate - that's OK) Stir in cilantro mint and coconut. Chill until using (overnight OK). CHICKEN: Cut chicken breasts in half; place in resealable bag and pour in enough teriyaki sauce to cover well. Chill for 4-24 hours. Preheat grill to medium high; just before serving grill chicken until just cooked. Allow to rest for 5 minutes then cut diagonally. SALAD: Place all vegetables, fruit and cashews in a large bowl; toss with enough dressing to just barely coat. Top with deep fried tortilla pieces (or deep fried chow mein noodles) and sliced chicken pieces.

1/4 cup fresh lime juice
2 tablespoons fresh chives
1 shallot, minced
2 garlic cloves, crushed
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme, chopped
1 tablespoon capers
1/2 habanero pepper, seeded minced
1/2 teaspoon sea salt
1 tablespoon fresh lemon juice
3 tablespoons boiling water

Steps:

  • Add all ingredients into a blender, except boiling water. Blend until smooth.

I bought some dried mango from a food market today and wanted to see if I could do something different with it. My idea was to do something with a Caribbean theme to its flavors but it certainly isn't authentic. I used chicken from a store bought rotisserie chicken to make this extra easy. The recipe could easily be scaled up to feed more.

3 ounces couscous
1 ounce dried mango, chopped up
5 fluid ounces boiling water
4 ounces cooked boneless skinless chicken breasts, shredded
2 green onions, chopped up
2 teaspoons slivered almonds, toasted
1 1/2 tablespoons extra virgin olive oil
2 1/2 tablespoons pineapple juice
1 1/2 teaspoons dark rum
1 teaspoon lime juice
1/4 teaspoon dried chili pepper flakes
1/2 teaspoon brown sugar

Steps:

  • Put the dried couscous and dried mango into a large bowl and pour over the boiling water.
  • Cover bowl tightly with plastic wrap and let sit for 10 minutes.
  • Meanwhile, whisk together the rum vinaigrette.
  • After the couscous has finished cooking, take the plastic off and add chicken and green onions to the bowl and stir just to combine.
  • Pour over the vinaigrette toss the mixture to make sure it all gets a bit of the dressing.
  • Stir through the toasted almonds and season if you feel necessary.
  • Serve.

The Vinaigrette
•¼ cup Domaine de Canton
•2 tbsp lime juice
•2 tbsp lemon juice
•½ tbsp ginger, minced
•1 small shallot, minced
•1 lime, zested
•¾ cup canola oil
•fine sea salt and freshly ground pepper
The Salad
•1 mango, peeled and halved
•6 oz. heart of palm
•2 medium tomatoes, cored and halved
•2 avocados, halved with seeds removed
•½ cup mint leaves, torn
•fine sea salt and freshly ground pepper

Steps:

  • Slice the mango, heart of palm, tomatoes, and avocadoes 1/4 in. thick. In a medium-mixing bowl, combine lime juice, lemon juice, Domaine de Canton, ginger, shallot, and lime zest. Slowly whisk in the canola oil and season with salt and pepper. Reserve. To serve, fan the slices of mango, heart of palm, tomato, and avocado intermittently around each of the 6 plates. Season with salt and pepper, and drizzle with vinaigrette. Place baby field greens and mint in a mixing bowl. Season to taste, and dress with the vinaigrette. This light, playful salad can wear several pairs of shoes. While substantial enough to be a main course when you just don't feel like heating up the kitchen, it also makes a great mealtime bookend, equally pleasing as an inviting appetizer or as an exotic dessert.

Number Of Ingredients 14

1/4 cup toasted sesame oil
1/4 cup seasoned rice vinegar
1/2 cup honey
2 tablespoons Sriracha
2 tablespoons white sesame seeds
1/4 teaspoon low-sodium soy sauce
1 medium pineapple, peeled, cored, and cubed
2 mangoes, peeled, cored, and cubed
1 papaya, peeled and cubed
2 bananas, peeled and sliced
2 kiwis, peeled, halved lengthwise, and sliced
1 pint strawberries, hulled and quartered
1/2 cup sweetened flaked coconut, for garnish
Fresh mint, cut into thin ribbons, for garnish

Steps:

  • To make the dressing, in a medium bowl, whisk together the oil, vinegar, honey, Sriracha, sesame seeds, and soy sauce. Set aside.
  • To make the fruit salad, in a large mixing bowl, combine the pineapple, mangoes, papaya, bananas, kiwis, and strawberries. Add the dressing and toss gently. Serve immediately or store, refrigerated, in an airtight container for up to 3 days. Garnish with the coconut and mint chiffonade.
