TROPICAL HONEY SNACK MIX
Offer them a snack mix they can't refuse-this tropical goodie, part sweet, part salty. It's ready in mere minutes, but keeps for up to two weeks.

Steps:
- Heat oven to 350°F. Line 15x10x1-inch pan with foil. In 12-inch skillet, melt butter over medium heat. Stir in brown sugar, honey, ginger and salt. Cook about 2 minutes, stirring constantly, until bubbly.
- Add remaining ingredients. Cook about 1 minute, stirring constantly, until all ingredients are coated. Spread mixture in thin layer in foil-lined pan.
- Bake 10 to 12 minutes, stirring occasionally, until bubbly and lightly browned. On unlined cookie sheet, spread mixture in thin layer. Cool completely, about 30 minutes. Store in airtight container up to 2 weeks.

- Combine cashews, pineapple, mango, pretzels, macadamia nuts, coconut flakes, and cranberries in a large bowl; stir to combine.
- Add honey and butter to a small saucepan over medium heat. Cook and stir until butter is melted, about 1 minute. You also could do this in the microwave.
- Drizzle honey-butter over snack mix and sprinkle salt over the top. Stir well to make sure everything is well coated.

- Preheat the oven to 300 degrees.
- First pop the 1/2 cup unpopped corn kernels, then set aside.
- In a heavy saucepan, put the butter, corn syrup, cream of coconut, and brown sugar. Boil over moderate heat for 2 minutes, stirring constantly.
- Combine the popcorn, coconut, dates, dried pineapples and dried banana chips in a large plastic bowl sprayed with non-stick spray. (That works best-the plastic bowl, as the syrup will not stick to the sides if you spray it first, making it easier to combine the ingredients.).
- Stir to mix and pour onto a cookie sheet lined with parchment paper and bake for 30 minutes.
