50g rolled porridge oats
20g coconut yogurt
2 sliced kiwis
1 passion fruit
½ tsp toasted mixed seeds

Steps:

  • Soak the oats in 150ml water with a pinch of salt, then cover and chill in the fridge overnight.
  • The next day spoon half the oats into a bowl. Layer with the coconut yogurt, sliced kiwis, the pulp of the passion fruit and the rest of the oats, then top with the toasted mixed seeds.

1/3 cup coconut milk
1/2 very ripe banana, mashed
1/3 cup rolled oats
1/4 cup fresh pineapple, diced
1/4 cup fresh mango, diced
3 tablespoons toasted coconut flakes

Steps:

  • Whisk together the yogurt, coconut milk and banana to a pint jar with a screw top lid until well combined.
  • Stir in the oats, cover and refrigerate overnight.
  • Top with mango, pineapple and toasted coconut before serving.
