BEER-BATTER FRIED PICKLE CHIPS

I had heard all about these at fairs and as appetizers in restaurants, so I thought I would look up how to make them. I mixed a few recipes together, and this is what I got. We had never had them before, and we really liked them, so we hope you do too! Really easy, and you don't need any special fryer to do it! For a variation, 1 teaspoon Cajun seasoning can be substituted for the salt and pepper in the flour mixture. NOTE: If you use whole pickles, you'll need a 32 oz. jar. If the pickles are pre-sliced, you'll only need a 24 oz. jar (the ingredient listing didn't want to cooperate with me on that one).

1 (32 ounce) jar dill pickles, whole or 1 (24 ounce) jar dill pickles, sliced
canola oil (for frying)
2 cups all-purpose flour, divided
1 cup beer (I usually use Shiner Bock)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • If not pre-cut, cut pickles in 1/2-1/4 inch slices. Blot pickles with paper towels to remove excess moisture (I cut mine and immediately place them on folded-up paper towels, and then I blot them also).
  • Whisk 3/4 cup flour with the beer. Place remaining flour, salt, and pepper in a gallon-size Ziploc bag; shake to combine.
  • Pour canola oil in a deep skillet or Dutch oven, and set it over medium heat; the oil should be approximately 3/4 inch deep.
  • When your oil is hot (test it by sprinkling a little water in the oil, when it pops, you know it's ready), start preparing the pickle chips.
  • Put all the pickle slices in the Ziploc bag with the flour to completely coat the pickles with flour. Take them out, and dip them in beer batter.
  • Immediately place batter-covered pickles in the oil (about 10-15 at a time, making sure not to crowd them), careful that it may pop back, for about 2 minutes on each side or until brown.
  • When they're golden, remove and place on a plate lined with paper towels to drain.
  • Eat plain, serve with Ranch dressing, or serve with any dipping sauce of your choice.

AIRFRYER PARMESAN DILL FRIED PICKLE CHIPS RECIPE

32 oz. jar whole large dill pickles
2 eggs
2/3 c. panko bread crumbs
1/3 c. grated Parmesan
1/4 tsp. dried dill weed

Steps:

  • Slice the large pickles diagonally into 1/4" thick slices. Place between layers of paper towels and pat dry. In a shallow bowl, beat the eggs until smooth. In a resealable bag, add the Panko bread crumbs, Parmesan and dill weed and shake until well combined. In batches of 4-5 pieces, dip the pickle slices into the egg mixture, being sure to remove any excess egg and then toss in the Panko mixture. Add half of the coated pickle chips into the Airfryer and bake for 8-10 minutes on the highest temperature. Remove from the Airfryer and add the remaining pickle chips and bake for 8-10 minutes. Serve immediately with zesty ranch for dipping. NOTE: If you own a larger XL Airfryer, you can cook all the chips in one batch.

However many pickle slices the batter will cover
3/4 to 1 cup of beer
2 eggs
1 -2 cups of flour
Cholesterol free oil

Steps:

  • Pour oil in a large skillet until the oil is about 1-2 inches up the side of the pan. Heat oil to 350 degrees. Strain pickles in a small colander. In a mixing bowl, whisk the yolks and 3/4 cup of the beer. Season the mixture with salt and pepper. Whisk in enough flour to form a batter. If the batter is too thick add the remaining beer to thin the batter. Dip pickles one at a time using tongs into the batter and then place in the heated oil Fry pickles for about 2 minutes flipping the pickle after about 1 minute Place pickles on a plate lined with paper towel and then season with salt. Serve with Ranch Dressing.

2 eggs
1/4 cup flour
1-1/4 cups panko bread crumbs
1 jar (24 oz.) CLAUSSEN Hot & Spicy Pickle Chips, drained, patted dry
1/4 cup KRAFT Blue Cheese Dressing

Steps:

  • Heat air fryer to 400°F.
  • Whisk eggs in small bowl until blended. Place flour, then bread crumbs in two separate bowls.
  • Dip pickle chips, one at a time, in flour, then eggs, then bread crumbs, turning to evenly coat both sides of each pickle chip with each ingredient.
  • Place pickles, in batches, in single layer on greased tray in air-fryer basket; cook 11 to 13 min. or until crisp and golden brown on both sides, turning after 7 min.
  • Serve with dressing.

1/4 cup flour
22 round buttery crackers, finely crushed (about 1 cup)
1 jar (16 oz.) HEINZ Sweet and Spicy Pickle Chips, drained, patted dry
1/4 cup KRAFT Classic Ranch Dressing

Steps:

  • Heat oven to 425ºF.
  • Whisk egg in small bowl until blended. Place flour, then cracker crumbs in 2 separate bowls.
  • Cover rimmed baking sheet with foil. Dip pickle chips, 1 at a time, in flour, then egg, then cracker crumbs, turning to evenly coat both sides of each pickle chip with each ingredient. Place in single layer on prepared baking sheet.

There used to be a restaurant in Willis Michigan called The Pickle Barrel that used to serve fried pickle chips just like this. They closed but luckily I can still enjoy these! They are absolutely delicious!

1 jar(s) whole claussen brand, dill pickles
batter recipe or mix of your choice (i like drakes brand for this)
salt to taste
vegetable or canola oil for frying
ranch dressing to dip

  • 1. Slice Claussen pickles very, very thin.
  • 2. Mix batter according to package directions
  • 3. Heat oil to 365 degrees. Deep fry until golden brown. Drain on paper towels. Salt to taste. Serve with Ranch dressing to dip.

There was a drive-in where we used to hang out that served these and we had to go there every day to eat these. When I found the recipe years later I had to try it. Of course they're not as good as when we were carefree kids but...

2 1/2 c all-purpose flour
1 c corn meal
3/4 tsp salt
3/4 tsp black pepper
1/2 tsp tony chachere's creole seasoning
1 c buttermilk
1 qt hamburger dill chips, drained
canola oil for frying

Steps:

  • 1. Drain the dill chips and pat dry with paper towels. Set aside in a bowl lined with paper towels.
  • 2. Pour the buttermilk into a small mixing bowl.
  • 3. Combine dry ingredients into a separate medium bowl and stir to combine.
  • 4. Dip each pickle chip in the buttermilk and then dredge in the flour mixture.
  • 5. Deep fry a few coated pickles at a time in hot oil (350 F) until they are light golden brown. They should float to the surface when done. This won't take long at all.
  • 6. Remove from oil with a slotted spoon and drain on paper towels or place in a bowl lined with paper towels. Even more fun if served in a paper-lined basket like the drive-ins used to use.
  • 7. Serve immediately with your favorite dipping sauce. I prefer Ranch dip.
