- In a heavy saucepan over low heat, melt marshmallows and milk. Remove from the heat. Cool, stirring occasionally. Stir in extract. Fold in pineapple and whipped cream. , In a bowl, combine cracker crumbs and butter. Press 1-1/2 cups into a greased 13-in. x 9-in. dish. Spread with pineapple mixture. Sprinkle with the remaining crumb mixture. Refrigerate for 2-3 hours before serving.

Steps:
- Combine crumbs, sugar and melted butter and press into a 9 inch pie plate or a 9x9 pa. Bake at 350 for 8 minutes.
- Melt the marshmallows with the ½ cup of pineapple juice over low heat until melted. Refrigerate until slightly thick for about 45 minutes this will separate.
- Mix well then fold in pineapple and Dream whip. Pour into prepared crust and chill for 4 hours.

- Lightly grease or butter a 13x9x2 inch pan.
- In a heavy, large saucepan over low heat melt the marshmallows and milk, stirring often.
- Remove from heat.
- Allow to cool a bit stirring occasionally.
- Stir in extract.
- Fold in pineapple, coconut and whipped cream.
- In a medium bowl combine cracker crumbs and butter.
- Press 1& 1/2 cups of the graham cracker mixture into the greased pan.
- Spread the pineapple coconut mixture on top of this.
- Sprinkle with the remaining crumb mixture.
- Refrigerate for 3 hours or better yet, overnight before serving.
