CARIBBEAN CUCUMBER SALAD
I like this salad in the summer with our BBQ evenings. It is tart and a little hot. If you don't do hot so well, use one pepper.

Steps:
- Slice the cucumbers lengthwise and remove seeds with a spoon or melon baller.
- Slice each half into 1/2 inch slices.
- Place in a bowl and sprinkle with the salt.
- Toss gently and let sit for 30 minutes.
- Drain well.
- Place the cucumbers in a serving bowl and add the chilies, lime juice, and garlic.
- Toss well.
- Cover and let sit at room temperature for 1 hour before serving.

TROPICAL CUCUMBER SALAD
My friend Buffy gave me this recipe. I really didn't think that it would be that great, but it really is! This salad is very light and refreshing and would be the perfect side dish to a light summer meal. I think that it would pair perfectly with grilled salmon or seared tuna. Best if made within an hour or two of serving. Does not keep well overnight.

- For the dressing, wisk together first eight ingredients. Add cucumber, avacado, mango, cilantro and red onion if using. Toss gently then chill.
- Serve within a few hours.
