- Put 2 tablespoons of yogurt in the bottom of each of four juice glasses. Top with 4 orange slices. Sprinkle the oranges with a 1 1/2 tablespoons of cereal, followed by 2 more tablespoons of yogurt. Top with diced pineapple then with another 1 1/2 tablespoons cereal.
TROPICAL QUINOA BREAKFAST BOWL
Steps:
- In a large saucepan, bring pineapple juice, coconut milk, cinnamon and ginger to a boil. Add quinoa. Reduce heat; simmer, covered, 15-20 minutes or until liquid is absorbed. Remove from heat., Stir in pineapple and brown sugar. Top with mango and macadamia nuts. If desired, serve with coconut.

- Put the guava juice and apricots in a small bowl, and cover. Microwave until the apricots are tender and the juice reduces to a lighter syrup, 1 to 2 minutes. Let cool to room temperature, stirring occasionally to help cool faster.
- Put the yogurt in a cereal bowl. Spoon the apricot-guava compote into the center. Arrange the grapefruit, mandarin oranges, cereal and pistachios in neat piles or rows around the compote. Then take a photo!

- Heat the oven to 180C/160C fan/gas 4. Lightly oil and line a 20cm deep square tin with baking parchment.
- Mash the bananas in a bowl until smooth, then stir through the oil, egg and sugar. Fold through the muesli, most of the tropical mix and a pinch of salt. Spoon the mixture into the tin and sprinkle with the remaining tropical mix. Bake for 35-40 mins, leave to cool in the tin, then turn out on to a board and slice into 10 bars. Will keep in an airtight container for four days.

- Bring water with rice to a boil in medium sized sauce or soup pan on high heat.
- Once it comes to a boil, turn heat to medium low and simmer uncovered.
- stirring frequently for creaminess.
- While rice is cooking prepare rest of ingredients.
- As water is absorbed in rice add pineapple juice from can and keep cooking.
- When that is absorbed add the can of coconut milk.
- As that gets absorbed, but while still creamy, add rest of ingredients.
- Heat for another 2-3 minutes and serve when rice is tender.
- This should be still juicy and creamy without being runny.
- This is good served warm or cold.

- Heat oven to 350°F. Lightly spray 8x8-inch square pan with cooking spray.
- Drain pineapple, reserving 1 cup liquid. Set pineapple aside.
- In small bowl, stir together quinoa and coconut. Pour into pan, shaking pan to make even layer. In same bowl, beat eggs with whisk. Beat in pineapple liquid, milk and honey until well combined.
- Scatter pineapple chunks, raspberries and almonds evenly over quinoa mixture. Pour egg mixture evenly over top. Using back of spoon, lightly press down fruit to submerge everything into the liquid. Sprinkle additional coconut over top.
- Bake 1 hour.

This is what I threw together for breakfast this morning and it was really good. It is also very healthy so that is a winning combo for me. I use Greek yogurt but I know not everybody has access to that so I added the alternative low fat yogurt to the ingredients list.
